SPIKED PEACH TEA

4 cups sweet tea (store-bought or homemade)
2 cups Peach Nectar, recipe follows
1 cup bourbon
4 lemon slices, for garnish
4 mint sprigs, for garnish
3 cups frozen peaches, thawed
2 teaspoons lemon juice
1 to 2 tablespoons granulated sugar, optional

Steps:

  • Stir together the tea, Peach Nectar and bourbon in a pitcher filled with ice. Pour into iced tea glasses filled with ice and garnish with a lemon slice and mint sprig.
  • Combine the peaches, 2 cups water, lemon juice and sugar (if using) in a blender and blend until smooth. Strain the peach nectar through a fine-mesh strainer. Store in an airtight container in the refrigerator for up to 2 days.

8 cups water
1 (16-ounce) bag sliced frozen peaches, thawed, divided
1 (12-ounce) can peach nectar, chilled
1/4 cup peach liquor
Fresh Mint, for garnish

Steps:

  • Bring the water to a boil in a large pot. Turn off heat. Add tea bags and steep for 5 to 10 minutes. Allow to cool.
  • Add 12-ounces of the peaches to a blender and puree until it reaches a smooth consistency.
  • Combine the cool tea, peach puree, peach nectar, peach liquor and remaining slices of peaches to a glass pitcher. Serve over tall glasses of ice with a sprig of mint to garnish.

Your favorite whiskey (recommended: Jack Daniels)
Fresh peach slices, for garnish

  • Bring water to a boil in a small saucepan; remove from the heat, add tea bags, and let steep 5 minutes. Remove tea bags and stir in sugar until dissolved. Transfer to a pitcher, add peach nectar, and stir to combine. Chill in the refrigerator for at least 1 hour.

Number Of Ingredients 9

3 orange pekoe tea bags
1 cup loosely packed fresh basil leaves
4 cups water
five 5 1/2-ounce cans peach nectar (about 3 1/3 cups), chilled
1/4 cup chilled simple syrup or to taste
For simple syrup:
1 1/3 cups sugar
1 1/4 cups water
Garnish: peach slices and basil sprigs

Steps:

  • Put tea bags and basil in a quart-size glass measure or heatproof bowl.
  • In a saucepan bring water just to a boil and pour over tea bags. Steep tea 5 minutes and strain through a sieve into a heatproof pitcher. Cool tea and chill, covered, until cold, about 1 hour.
  • Stir in nectar and syrup. Serve tea over ice in tall glasses and garnish with peach slices and basil sprigs.
  • To make simple syrup:
  • In a saucepan bring sugar and water to a boil, stirring, and boil until sugar is completely dissolved. Let syrup cool and chill, covered. Syrup may be made 2 weeks ahead and chilled, covered. Makes about 2 cups.

4 tablespoons granulated sugar

  • Crush mint leaves with sugar and lemon juice; pour boiling water over mint leaves and tea bags.
  • Let steep to desired taste; drain tea bags.

1 (15 ounce) can water
1/4 cup sugar (optional)

Steps:

  • Make the tea in a 3 or 4 quart pitcher (or iced tea pot). Set aside.
  • Pour peaches and water into a blender.
  • Blend on high speed until well blended.
  • Add sugar and blend for a few more seconds.
  • Add more water until there is 1 quart.
  • Blend for a few seconds-- pulse.
  • Pour this mixture into the pitcher of tea and stir until well mixed.
  • Chill before serving.
