This amazing layered coffee cake has two coffee cake layers, two streusel layers, two peach layers, then it's layered with pecans and drizzled with powdered sugar icing. It's terrific for company or holiday dinners or for breakfast!

4 cups bisquick
1 1/3 cups milk or cream
1/2 cup sugar
2 large eggs
1/2 cup chopped pecans or walnuts
4 cups peaches (peeled and finely diced )
1 1/3 cups bisquick
1 1/3 cups brown sugar (packed)
2 tsp. cinnamon
1 tsp. nutmeg
1 stick unsalted butter (chilled (1/2 cup))
1 cup powdered sugar
2-3 tbsp. milk (or cream)

Steps:

  • Preheat oven to 350°.
  • Grease a 9x13" deep dish glass baking dish.
  • Mix baking mix, milk or cream, sugar and eggs.
  • Beat vigorously with a wooden spoon about 45 seconds until mixture is smooth.
  • Spread half of the batter into the prepared baking dish.
  • Top with half the peaches and half the Streusel Topping.
  • Repeat layers.
  • Sprinkle pecans or walnuts over top.
  • Bake at 350° for about an hour or until toothpick inserted in center comes out clean.
  • Cool completely.
  • Drizzle glaze over top.
  • Combine Bisquick, brown sugar, cinnamon and nutmeg.
  • Cut butter into ingredients with a pastry blender until well mixed.
  • Mix together until desired consistency is achieved.
  • Add more milk or cream if necessary.
  • Drizzle over cooled cake.

For the Cake:
3 large peaches
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
8 tablespoons/4 ounces butter (softened)
1/2 cup granulated sugar
1/4 cup light brown sugar (packed)
2 large eggs
1/2 cup sour cream
1 teaspoon vanilla extract
1/4 teaspoon almond extract
For the Topping:
1/2 cup light brown sugar (packed)
3/4 cup flour
1/2 teaspoon ground cinnamon
Pinch ground nutmeg
5 tablespoons melted butter

Steps:

  • Gather the ingredients.
  • Peel and thinly slice the peaches and put them on paper towels to remove excess moisture. Set aside.
  • Grease a 9-inch springform pan. Heat oven to 350 F.
  • Combine the 1 1/2 cups flour, baking powder, soda, and salt; set aside.
  • In a mixing bowl with an electric mixer, cream the 4 ounces of softened butter with the granulated sugar and 1/4 cup of brown sugar. Beat for about 3 to 4 minutes.
  • Beat in the eggs until smooth.
  • Beat in sour cream and vanilla and almond extracts.
  • With a mixer, on low speed, beat in the flour mixture just until blended.
  • Spread the batter in the prepared baking pan. Arrange the thinly sliced peaches evenly over the batter, overlapping where needed.
  • In another bowl combine the brown sugar, 3/4 cup flour, cinnamon, and nutmeg, stirring with a fork until smooth.
  • Add the 5 tablespoons of melted butter and blend well with the fork.
  • Sprinkle the crumb mixture evenly over the peach slices.
  • Bake for 40 to 45 minutes, until the cake is firm and top is browned.
  • Let cool for about 10 minutes on a rack; remove the side of the pan and cool completely before slicing.

  • In a large bowl, cream together 1 cup sugar and 1/2 cup butter. Beat in sour cream, vanilla, and eggs. Mix in flour, baking powder, baking soda, and salt. Spread 1/2 the batter into the baking pan. Layer with peaches, and top with remaining batter.
  • In a small bowl, mix 1/4 cup flour, 1/4 cup sugar, pecans, and cinnamon. Cut in cold butter until the mixture resembles coarse crumbs. Sprinkle evenly over the batter.
  • Bake 45 minutes in the preheated oven, or until a knife inserted in the center comes out clean.

1 (29 ounce) can sliced peaches, drained and chopped
¼ cup brown sugar
½ tablespoon cornstarch
3 tablespoons vegetable oil
1 ½ cups all-purpose flour
1 cup white sugar
1 tablespoon baking powder
2 lemons, zested
2 eggs, lightly beaten
1 teaspoon vanilla extract
½ cup vegetable oil
½ cup orange juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch baking pan.
  • In a saucepan over low heat, mix the peaches, brown sugar, cornstarch, and 3 tablespoons vegetable oil. Cook and stir until sugar is melted and mixture is slightly thickened.
  • In a large bowl, mix the flour, sugar, baking powder, and lemon zest. Stir in eggs, vanilla, 1/2 cup oil, and orange juice. Mix until smooth. Pour 1/2 the batter into the prepared pan. Layer with 1/2 the peach mixture, then with remaining batter. Top with remaining peach mixture.

1 cup brown sugar
3/4 cup pecans
1/4 cup firm butter
3 eggs
1 1/2 cups sour cream
1 (29 ounce) can peaches, drained

Steps:

  • Grease & flour 9x13 pan.
  • Mix 2/3 cup cake mix with sugar, nuts and butter until crumbly.
  • Beat eggs and blend in sour cream and remaining cake mix, batter will be slightly lumpy.
  • Spread 1/2 batter in pan, sprinkle top with 1/2 sugar mixture. Spoon on peaches, spoon on rest of batter and top with rest of sugar mixture.
  • Bake 350 for 30 to 40 minutes.

Yield 2 coffee cakes.

Number Of Ingredients 18

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup warm whole milk (110° to 115°)
1/2 cup butter, softened
1/2 cup sugar
2 teaspoons salt
3 large eggs
5 to 5-1/2 cups all-purpose flour
FILLING:
1/4 cup butter, melted
1-1/2 cups peach preserves
1 cup chopped pecans
2/3 cup sugar
2 teaspoons ground cinnamon
GLAZE:
1-1/2 cups confectioners' sugar
1-1/2 teaspoons vanilla extract
2 to 3 tablespoons whole milk

Steps:

  • In a large bowl, dissolve yeast in water. Add the milk, butter, sugar, salt, eggs and 2 cups flour; beat on low speed for 3 minutes. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down, Turn onto a lightly floured surface; divide in half. Roll each portion into a 20x10-in. rectangle. Spread with butter; top with preserves and pecans. Combine sugar and cinnamon; sprinkle over the top. , Roll up jelly-roll style, starting at a long end. Pinch seams to seal and tuck ends under. Place seam side down on a greased baking sheet, curving ends to make a "U" shape. With scissors, make cuts every 1-1/2 in., Cover and let rise in a warm place for 45 minutes. Bake at 350° for 25-30 minutes or until golden brown. Remove from pans to wire racks. Combine the glaze ingredients; drizzle over warm coffee cakes. Cool.

I have served this wonderful buttery peach coffeecake on so many different occasions, and always get so many compliments. It's not your average everyday coffeecake...it's filled with a heavenly-tasting cream cheese-peach filling, topped off with a brown sugar/cinnamon topping...to die for!

2 1/3 cups flour
1 1/3 cups sugar
3/4 teaspoon salt
3/4 cup Crisco shortening
2 teaspoons baking powder
2 eggs
2 teaspoons vanilla (or use 1 teaspoon almond extract)
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1/3 cup lemon juice
1/2 teaspoon cinnamon (can use 1 teaspoon)
2 3/4 cups peaches (sliced-fresh OR canned)
3/4 cup chopped nuts
1/3 cup lightly-packed brown sugar
1 teaspoon cinnamon

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-inch pan.
  • In a bowl, combine flour, sugar and salt.
  • Cut in the Crisco shortening with a pastry knife until crumbly; reserve 1 cup of the mixture for the topping.
  • Add in baking powder, eggs and vanilla to the remaining crumb mixture.
  • Beat on medium speed of an electric mixer for 2 minutes, or until smooth.
  • Spread evenly into prepared pan.
  • Bake for 20-25 minutes.
  • For the filling and topping: beat the cream cheese on medium speed until smooth and creamy.
  • Gradually add in the sweetened condensed milk, lemon juice and cinnamon; beat until smooth.
  • Fold in peaches; spread evenly over cake.
  • To the reserved crumb mixture, add in nuts, brown sugar and cinnamon; mix well, and sprinkle over filling.
  • Bake for 30-35 minutes longer, or until set.
  • Serve warm.
  • Delicious!
