This recipe for pure maple syrup bread makes a tasty, quick bread for breakfast, brunch or an afternoon snack.

1 cup milk
1/4 cup butter
1 cup maple syrup
2 1/2 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
2 eggs
3/4 cup nuts (raw, chopped, and lightly toasted)

Steps:

  • Gather the ingredients.
  • Grease and flour a loaf baking pan.
  • Over medium-low heat, heat milk and butter in a small saucepan but do not let it boil. Once the butter is completely melted, stir in the pure maple syrup.
  • Take the hot mixture off of the heat.
  • Preheat oven to 325 F.
  • In a medium bowl, combine flour, baking powder, and salt with a wire whisk. Thoroughly mix dry ingredients well.
  • In a large bowl, pour in some milk. Quickly stir in the eggs. Add the remaining milk mixture and stir it until it is completely combined.
  • Add the flour mixture into the wet ingredients, then mix until well combined. Stir nuts into that mixture.
  • Place the batter into prepared pan and bake it for one hour.
  • Let the bread cool in the pan for 15 minutes, then transfer it to a wire rack. Serve bread alone or with butter.
  • Enjoy.

Okay..HERE IT IS..I have been into the bread making mode as of late..I stumbled across this recipe in one if my many cookbooks, ( had forgotten all about this book) the idea of it being sweetened with only maple syrup intrigued me..so I decided to give it a go..I don't really think that this is for the novice baker..as I had a...

2 pkg dry yeast ( i use the fast acting instant dry yeast) which is 2 1/4 tsp.per packet)
1/2 c. water(lukewarm)
1 1/2 c. milk, scalded
1/2 c. butter
1/2 c. real maple syrup( vermont
2 eggs,beaten
10-12 c. flour,sifted( i couldn't work 10 cups in)
2 tsp. salt

Steps:

  • 1. Okay.. I'm gonna write this out as is written..that said... Step1.Sprinkle yeast in the half cup of water, stir to dissolve and set aside.In a small saucepan scald the milk.Stir in the butter and let cool five (5) minutes.
  • 2. Pour contents of pan into a large mixing bowl.Stir in the maple syrup and beaten eggs.When mixture has cooled to room temperature( my note: if your maple syrup is cold from the fridge you will find that it is already room temperature..), stir in the dissolved yeast.
  • 3. Gradually stir in enough of the flour , (mixed with salt), to make a stiff dough.
  • 4. MY NOTE: start with about 5 cups of flour, mixed with the salt..I had a little trouble with this..as I put in too much flour, so ended up adding a 1/2 cup more of the maple syrup..I honestly think you won't need much more then that..Also I used the dough hooks on my stand mixer( not a heavy duty mixer either.. It was a workout for my poor mixer..lol) to mix in the flour..
  • 5. Next: place dough ball in a greased bowl, cover and set in a warm place to rise to double in bulk. Punch down and let rise again til double.Punch down, place on floured hard surface and knead 5-8 minutes.
  • 6. Divide into 2loaves, place in greased 9x5 inch bread pans and bake in preheated 375°F. Oven 20 minutes..
  • 7. MY NOTE: On AFTER I PLACED IN LOAF PANS, I let them rise again til about double..also I rolled the dough out into a rectangle, tolled dough up, pinched seem, and flattened ends and slightly tucked under..then placed into loaf pans..
  • 8. Also it says 20 min.mine was done in 15 min. When they came out of the oven I brushed butter over 1 loaf..
  • 9. ON ADDING THE FLOUR: start with about 5 cups and gradually add a little at a time to make sure you don't get too much flour..

Number Of Ingredients 11

1 cup old-fashioned oats
1 cup boiling water
1 package (1/4 ounce) active dry yeast
1/3 cup warm water (110° to 115°)
1/2 cup maple syrup
2 teaspoons canola oil
1-1/2 teaspoons salt
3-1/2 to 4 cups all-purpose flour
TOPPING:
1 egg white, lightly beaten
2 tablespoons old-fashioned oats

Steps:

  • Place oats in a blender or food processor, cover and process oats for 6-7 seconds or until coarsely chopped. Transfer to a small bowl; add boiling water. Let stand until mixture cools to 110°-115°. In a large bowl, dissolve yeast in 1/3 cup warm water; add syrup, oil, salt, oat mixture and 2 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour., Punch dough down. Turn onto a lightly floured surface. Shape into a flattened 9-in. round loaf. Place in a greased 9-in. round baking dish. Cover and let rise until doubled, about 45 minutes. , Brush with egg white; sprinkle with oats. Bake at 350° for 30-35 minutes or until golden brown. Remove from pan to a wire rack to cool.

This old-fashioned bread pudding,with the essence of maple, is the perfect end to a simple supper. Just about any kind of bread will do, but brioche, panettone, croissants or good white bread, along with anything nutty and/or grainy, is especially good.

4 -4 1/2 cups bread, cubed
4 large eggs
1 1/4 cups milk
1 cup heavy cream
1/2 cup maple syrup (grade B preferred)
1/4 cup brown sugar
1 teaspoon maple extract (or vanilla extract)
1/2 teaspoon nutmeg
1/4 teaspoon salt
2 tablespoons decorator sugar (optional)
1/4 cup diced pecans (optional) or 1/4 cup walnuts (optional)

Steps:

  • Preheat your oven to 350°F and grease a 1 1/2-quart casserole or baking dish.
  • Place the bread cubes into the prepared pan. Whisk the eggs, milk, cream, syrup, sugar, flavoring, nutmeg, and salt together. Pour over the bread cubes and let sit for 15 minutes to absorb the liquid. Press the cubes down into the liquid if the edges are dry.
  • Bake the pudding for 35 minutes. Remove from the oven and sprinkle with the nuts and sugar. Return to the oven and bake for an additional 15 to 20 minutes, until the pudding has puffed up and is light brown around the edges. Remove from the oven and let stand for a few minutes-the pudding will sink as it sits; that's OK. Serve immediately, or reheat before serving.

1 cup walnuts, toasted, chopped
8 large eggs
1 quart whipping cream
1 cup sugar
1 cup maple syrup, plus more for drizzling
1 tablespoon vanilla extract
1 lb loaf brioche bread or 1 lb egg bread, torn into bite-size pieces
vanilla ice cream

Steps:

  • For praline: Spray rimmed baking sheet with nonstick spray. Stir sugar and 1/4 cup water in heavy small saucepan over medium heat until sugar dissolves. Increase heat to high and boil without stirring until mixture turns deep amber color, occasionally swirling pan and brushing down sides with wet pastry brush, about 7 minutes. Stir in nuts. Quickly spread nuts on prepared sheet. Cool. Chop praline into small pieces. (Can be made 1 day ahead. Store in airtight container at room temperature.).
  • For bread pudding: Whisk eggs, cream, sugar, 1 cup maple syrup, and vanilla in large bowl to blend. Add brioche; stir to coat. Let stand at room temperature 1 hour, stirring occasionally.
  • Preheat oven to 375°F Butter 13x9x2-inch baking dish. Transfer bread mixture to prepared dish. Bake until puffed and golden and toothpick inserted into center comes out clean, about 40 minutes. Cool slightly. Cut into 6 to 8 pieces. Place 1 piece pudding on each plate. Place scoop of ice cream atop pudding, drizzle with maple syrup, sprinkle with praline, and serve.

3/4 teaspoon sugar
1/4 teaspoon salt
6 tablespoons vegetable shortening
2 tablespoons cold water
1 large egg yolk
3/4 teaspoon apple cider vinegar
3 large eggs, lightly beaten
1 cup vermont maple syrup
2 tablespoons butter, melted and cooled
1/4 cup firmly packed dark brown sugar
1/4 cup vermont maple sugar
2 tablespoons fresh lemon juice
2 tablespoons all-purpose flour
1 teaspoon pure vanilla extract
1 teaspoon finely grated lemon, zest of
1 pinch salt
ice cream or whipped cream (optional)

Steps:

  • To make crust: In a large mixing bowl, blend together flour, sugar and salt with a fork.
  • Cut in shortening with a pastry cutter.
  • In a small bowl, beat together water, egg yolk and vinegar.
  • Pour liquid over flour mixture and mix quickly with a fork (texture will be sticky).
  • Using your hands, shape dough into a disc and refrigerate at least 1 hour.
  • Remove from refrigerator; roll dough on a floured surface into a 12-inch circle, about 1/8 inch thick.
  • Place in a 9-inch pie dish and trim to 1 inch over the edge of the pan.
  • Fold under and crimp edge with fingers to make a high fluted border.
  • Chill at least 30 minutes.
  • To make filling: In a large bowl, whisk together all filling ingredients until smooth.
  • Pour into chilled piecrust and bake about 35 minutes, or until edges are set but center jiggles slightly.
  • Cool to room temperature on a wire rack.
  • Serve with ice cream or whipped cream.

2 teaspoons baking powder
1 teaspoon salt

1/3 cup canola oil

Steps:

  • Heat the oven (350F).
  • Mix all dry ingredients.
  • In another bowl, mix all moist ingredients.
  • Blend the two mix until you don't see any more dry ingredients (don't overblend it or the bread will come hard!).
  • Put into a greased bread pan, and then into the oven for 50-60 minutes.
  • Let cool 15 minutes before removing the bread from its mold. Enjoy!
