HEALTHY PEACH BETTY
The combination of walnut-raisin bread, butter and maple syrup in this dessert is delightful over roasted peaches. Make sure your peaches are ripe -- it makes a huge difference in your finished dish! You can use nectarines as well in this recipe.

Steps:
- Preheat the oven to 350 degrees F.
- Put the peaches, 2 tablespoons of the butter, 2 tablespoons of the maple syrup and the vanilla in a 2-quart oval baking dish. Toss with a spatula to combine, then arrange the peaches cut side up.
- Put the bread and salt in the bowl of a food processor. Pulse until you have small crumbs (take care not to over-process or the crumbs can get gummy). Transfer to a medium bowl and mix with the remaining 2 tablespoons butter and 2 tablespoons maple syrup. Sprinkle the bread mixture evenly over the peaches.
- Bake until the peaches are very tender and the bread crumbs are golden-brown, 30 to 35 minutes.
THE BEST PEACH COBBLER
In our classic southern-style peach cobbler, we layer the fruit on top of the batter before baking. In the oven, the sweet batter rises through the peaches, creating a light and airy cake-like topping. We left the peaches unpeeled, which adds a nice color and makes the recipe even easier. Serve it with vanilla ice cream for the perfect summer dessert.

Steps:
- For the filling: Put the peaches, sugar, cinnamon, salt and lemon juice in a medium saucepan. Place over medium heat and cook, stirring occasionally, until the sugar is dissolved and the peach juices begin to boil. Lower to a simmer and continue to cook for 5 minutes. Remove from the heat.
- For the batter: Put the butter in a 2-quart baking dish and place it in the oven while it preheats. Preheat the oven to 350 degrees F.
- Whisk together the flour, sugar, baking powder and salt in a medium bowl. Stir the vanilla into the milk in a liquid measuring cup. Slowly pour the wet ingredients into the dry ingredients while whisking until well combined.
- Remove the baking dish from the oven and pour the batter in an even layer over the melted butter. Spoon the peaches along with their juices evenly over the top of the batter. Bake until the cobbler is golden brown on top and the peach juices are bubbling, 35 to 45 minutes.
- Let cool to room temperature before serving.

- Preheat the oven to 400 degrees and make sure an oven rack is in the middle position. In a food processor, pulse the bread and butter until it is coarsely ground. Set aside. Combine the sugar and cinnamon together in a small bowl.
- In a large nonstick ovensafe skillet over medium heat, melt the butter and add the peaches, cooking them until they begin to caramelize, 8 to 12 minutes. I didn’t see massive signs of caramelizing but cooked them for about 11-ish minutes until they were starting to soften up and become juicy and tender. Take the skillet off the heat and stir in 1 cup of the bread/butter crumb mixture, the sugars, lemon juice, vanilla and salt.
- Top the peach mixture with the remaining bread crumbs and sprinkle with the cinnamon and sugar mixture. Bake in the preheated oven until the topping is golden brown and the juices are bubbling, about 20 minutes. Cool for 10 minutes. Serve warm with vanilla ice cream.
