An interesting variation on baked or roasted apples. I have not made this yet but I am posting it for safekeeping, and to make when the weather is cooler. I found this in a July 2002 issue of the Australian 'Family Circle'. The cooking time below does not include the 10 minutes standing time recommended in step 6.

60 g dessert dried figs, finely chopped
1 tablespoon hazelnuts, chopped
1 teaspoon orange zest
1/4 teaspoon allspice
4 granny smith apples
1/3 cup brown sugar
20 g butter, melted
2 tablespoons fresh orange juice

Steps:

  • Preheat the oven to 180°C.
  • Combine the chopped figs, hazelnuts, orange zest and allspice.
  • Using an apple corer, remove the apple cores.
  • Place the apples in a baking dish and loosely press the fig mixture into the centre of the apples.
  • Combine the sugar, butter and orange juice and drizzle it over the apples.
  • Bake the apples for 25 minutes or until tender, then set aside for 10 minutes for the sauce to thicken slightly.
  • Serve with the sauce spooned over the apples with cream or icecream.

3 tablespoons unsalted butter, at room temperature, plus more for the dish
3 large firm apples (such as Honeycrisp, Pink Lady or Gala)
1/4 cup packed light brown sugar
2 tablespoons all-purpose flour
1/4 teaspoon finely grated lemon zest
Pinch of salt
4 fresh figs, stemmed and thinly sliced lengthwise
1/4 cup honey
1/2 vanilla bean, split lengthwise
1 cinnamon stick
2 tablespoons pomegranate seeds
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 400 degrees F. Butter a 2- to 3-quart baking dish. Halve the apples; cut out the core and place flat-side down. Using a sharp knife, make slits in each apple half about 1/4 inch apart; do not cut through to the bottom. Place the apples flat-side down in the prepared baking dish.
  • Combine 2 tablespoons each butter and brown sugar in a bowl and mash together with a fork; spread the mixture over the tops of the apples. Cover with foil and bake until just tender, 20 to 25 minutes. Meanwhile, combine the remaining 2 tablespoons brown sugar with the flour, lemon zest, salt and the remaining 1 tablespoon butter in a bowl until clumpy.
  • Uncover the apples and carefully insert the fig slices into the slits in the apples; sprinkle with the flour mixture. Bake, uncovered, until the topping is golden brown and the apples are tender, 20 to 25 more minutes.
  • Combine the honey with the vanilla bean, cinnamon stick and 2 tablespoons water in a small skillet over medium-low heat. Bring to a simmer, stirring occasionally, and cook until the honey is infused, about 5 minutes. Remove from the heat; discard the cinnamon stick and vanilla bean and stir in the pomegranate seeds. Transfer the apples to plates and serve with ice cream and the pomegranate syrup.

4 McIntosh apples
1/2 lemon
4 tablespoons butter, softened
3/4 cup whole-grain cereal with dried fruit (recommended: Mueslix)
2 tablespoons dark brown sugar

1 pint vanilla ice cream

Steps:

  • Heat the oven to 425 degrees F.
  • Trim the tops and scoop out the center and the seeds of each apple and rub the edges of the trimmed fruit with the lemon. In a medium bowl, combine the butter, cereal, sugar, and walnuts. Fill the apples with the cereal mixture. Set the apples upright in muffin tins and bake until tender and bubbly, about 20 minutes. Transfer to serving dishes, top with ice cream and serve hot.

  • Take cores out of apples.

1/4 cup chopped walnuts
4 good-quality red apples, such as Fuji, Braeburn, McIntosh, Rome Beauty
1/4 cup firmly packed brown sugar
2 tablespoons unsalted butter, at room temperature
1/2 teaspoon ground cinnamon
1/4 cup honey
1/2 cup apple juice

Steps:

  • Preheat an oven to 350ºF.
  • Spread the walnuts on a baking sheet and toast in the oven until lightly browned and fragrant, about 7 minutes. Remove from the oven and let cool.
  • Working from the stem end, use a melon baller to remove the core from each apple, scooping out the stem and seeds and making a deep hole for the filling; work to within about 1/2 inch of the bottom of the apple. Peel the skin from the top half of each apple.
  • In a small bowl, blend together the brown sugar, butter and cinnamon. Mix in the walnuts. Spoon equal amounts of the filling into the centers of the apples. Set the filled apples in an 8-inch square baking pan or other baking pan just large enough to hold them snugly.
  • In a small saucepan over medium heat, warm the honey with the apple juice, stirring until the honey dissolves. Pour around the apples. Spoon some of the liquid over the sides of the apples to moisten them, but do not spoon over the tops.
  • Bake, basting the sides once or twice with the pan juices, until the apples are tender when pierced, about 40 minutes. Remove from the oven, let cool and serve in bowls with the pan juices spooned over the tops.

1 tablespoon butter
1 cup cranberries (fresh or frozen and thawed)
2 tablespoons honey
1/4 teaspoon ground cardamom
6 dates, pitted and chopped
1 orange, juice and zest of
2 tablespoons roasted almonds, roughly chopped

Steps:

  • Preheat oven to 400 degrees F.
  • Cut 1/2 inch off the top of the apples and reserve tops. Use a paring knife or spoon to hollow out the apples, leaving about a 1/2-inch thick wall and base. Set aside.
  • Melt butter in a large skillet over medium heat.
  • Add cranberries, honey, cardamom, dates and orange juice and zest and cook until the cranberries begin to collapse and liquid thickens, 3 to 4 minutes. Stir in almonds.
  • Spoon cranberry mixture into apples then replace the apple tops. Put into a small baking dish filled with 1/4 inch water, cover with foil and bake until tender, 15 to 30 minutes (depending on apples).
  • Uncover, and carefully pour off the water and continue baking until very tender and golden, 10 to 15 minutes more.

1 pinch ground nutmeg

A healthier take on a traditional roast dinner, complete with fruity stuffing and a quince sauce

2 tbsp olive oil
600g pork tenderloin fillet, trimmed of any fat and sinew
2 onions , finely chopped
2 dessert apples , cut into cubes
3 figs , finely chopped
85g fresh white breadcrumb
85g fresh wholemeal breadcrumb
a few sage leaves, finely chopped
1 egg
pinch of lemon zest
500g pot chicken stock
1 tbsp balsamic vinegar
1 tbsp quince paste
350g steamed green bean , to serve
350g steamed carrot , to serve

Steps:

  • Heat oven to 190C/170C fan/gas 5. In a non-stick frying pan, heat 2 tsp of the oil and brown the pork fillet for 4-5 mins, turning once to cook evenly. Rub with another 1 tsp of oil and season. Transfer to a roasting tin and bake for 40 mins or until the juices run clear when you skewer the thickest part of the loin. (Timings will vary depending on thickness of the meat.)
  • Using the same frying pan, heat 1 tbsp oil, add the onions and cook for about 10 mins until soft. Add the apples and figs and cook for another 5 mins. Tip into a bowl and add the breadcrumbs, sage, egg, lemon zest and 2 tbsp of the chicken stock. Add seasoning, then roll into 12 balls. Put the stuffing balls on a baking tray lined with baking parchment, then bake for 20-25 mins.
  • When the pork is cooked, remove from the roasting tin and allow to rest for 10 mins. Deglaze the roasting tin with the remaining chicken stock, scraping any of the brown bits off the bottom, then add the vinegar, quince paste and resting juices. If your roasting tin isn't flameproof, transfer to a saucepan and bubble down until the sauce has thickened to the consistency of double cream. Season, slice the pork and serve with stuffing, sauce and vegetables.

1/2 cup cut up dried calimyrna figs or 1/2 cup black mission fig
1/2 cup coarsely chopped walnuts

1 cup chilled heavy cream (optional)

Steps:

  • Preheat oven to 350°; lightly butter a 13x9 inch baking dish.
  • Core apples; using a vegetable peeler, remove a 1-inch wide strip around the top of each apple; place the apples in the prepared baking dish.
  • Lightly brush a food processor bowl and blade with the vegetable oil and finely chop the figs and walnuts.
  • Add in the butter, brown sugar, and cinnamon; process until blended; transfer the mixture to a small bowl.
  • Stuff the cored apples tightly with the fig mixture, mounding any extra on top of the apples.
  • Bake the apples, basting them occasionally, with any juices that form, until tender when pierced with a metal or wooden skewer, 45 minutes to 1 hour.
