Fresh peaches and strawberries are sweetened with orange juice and brown sugar to make a refreshing summertime treat. This simple sorbet recipe requires an ice cream maker.

Transfer sorbet to a freezer container; cover and freeze for 4 hours or until firm.

- Bring water to a boil in a small saucepan; remove from heat and add sugar. Stir until completely dissolved. Pour syrup mixture into a heat-proof container, cover halfway with plastic wrap, and place in the refrigerator until completely chilled, 45 to 60 minutes.
- Put blackberries, strawberries, and peach slices into a blender and blend until pureed. Add the fruit puree to the chilled sugar syrup and strain the mixture to remove the seeds. Stir in lemon juice. Cover and refrigerate until the mixture is chilled, about 1 hour.
- Pour mixture into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

PEACH SORBET
Steps:
- Score bottom of peaches with an X and boil for about 10 seconds in boiling water and peel off skin. Remove peach pits. Puree peaches in a food processor or blender. Pour puree into a bowl and stir in simple syrup and lemon juice. Taste and adjust syrup or lemon juice to taste. Freeze in an ice cream maker using manufacturers instructions.
- Stir water and sugar into a saucepan. Place pan over high heat and bring to a full boil. Let syrup cool before using. Store leftover syrup in a glass jar.
SWEET PEACH SORBET WITH CRUNCHY WAFER COOKIES
Steps:
- Make peach syrup by heating peach juice with a little sugar in a small saucepan over medium-high heat until thickened. Add more sugar, to taste, if desired. Remove from heat and let cool to room temperature.
- Place 2 to 3 scoops sorbet in a parfait glass. Drizzle peach syrup over sorbet and place wafer cookies around scoops. Garnish with fresh mint.

- In a small saucepan, combine the sugar, water, and corn syrup.
- Place pan over medium heat and stir until the sugar dissolves.
- Boil without stirring for 1 minute.
- Remove form heat and cool to room temperature.
- Place the peaches in a blender or food processor with the lemon juices, salt, and cool sugar syrup.
- Process until the mixture is smooth.
- If the puree is too thick to blend properly, add water, 1 tablespoon at a time until mixture blends easily.
- Freeze immediately in an ice cream maker according to the manufacturer's directions.
- When finished, the sorbet will be soft but ready to serve.
- For firmer sorbet, transfer to a freezer safe container and freeze several hours.

- Allow strawberries to macerate with the sugar in a bowl in the fridge for an hour, stirring occasionally.

- Sweeten with additional honey if needed/desired. You may also strain the mixture in a mesh strainer at this point if you don't want seeds in your sorbet.
