JOHNNY GRIDDLE CAKES

1 cup all-purpose flour
1/2 cup plus 1 tablespoon fine yellow or white cornmeal
2 tablespoons granulated sugar
1 tablespoon baking powder
2 teaspoons kosher salt
3/4 cup whole milk
2 teaspoons clover honey
2 large eggs, separated
2 tablespoons unsalted butter, melted and cooled, plus 1/4 cup more for frying

Steps:

  • Preheat the oven to 300 degrees F.
  • Whisk together the flour, cornmeal, sugar, baking powder and salt in a medium bowl. Whisk together the milk, honey and egg yolks together in another medium bowl until combined. Whisk the egg whites in another medium bowl until stiff peaks form.
  • Add the milk mixture to the dry ingredients and mix until just combined. Gently fold in the egg whites, and then 2 tablespoons of the melted butter. Mix until the batter is just smooth and let rest for 10 minutes.
  • Heat a large nonstick saute pan, cast-iron pan or griddle over medium-high heat. Brush the pan with some of the remaining melted butter. Spoon 2 heaping tablespoons of the batter onto the pan for each johnny griddle cake. Spread the batter slightly just to even out the top using a small offset spatula. Cook until lightly golden brown on each side, about 1 minute 30 seconds per side. Transfer to a baking sheet and keep warm in the oven until ready to serve.

Over time I had developed a vague impression that griddle cakes (as opposed to pancakes) was made with cornmeal. I don't know if that is an accurate definition or not, but these are the griddle cakes that I came up with when I tried to make some. They are very good served with syrup or honey.

1/2 cup flour
1 teaspoon salt
3 teaspoons baking powder
1 tablespoon brown sugar
1 1/2 cups Jiffy corn muffin mix
2 eggs, beaten
1 1/2 cups skim milk
4 tablespoons butter, melted

Steps:

  • Lightly grease a heavy nonstick pan (i.e. spray with non-stick cooking spray), and start heating it at medium-high heat.
  • Sift together the dry ingredients in one bowl.
  • In a separate bowl, combine the eggs, milk, and butter.
  • Now combine the dry and wet ingredients together, stirring just enough to moisten the dry ingredients. Do not worry about getting rid of all of the lumps. (It is important to combine the dry and wet ingredients separately, and then combine them together to reduce the amount of time that the gluten in the flour has to toughen up.).
  • Pour the batter onto the hot pan in about 4" circles.
  • Flip the cakes when they get bubbly on the one side.
  • Continue cooking until the bottom browns. I usually peek by pulling up the edge with a spatula.
  • If the griddle cakes are cooking too fast, reduce the heat.
  • Never flip the griddle cakes more than once as this will make them heavy.
  • Serve the griddle cakes immediately even if this means that people have to eat at different times because there are not enough to go around when the first batch comes off of the griddles.

1/2 cup all-purpose flour
1/2 cup quick-cooking oats
2 teaspoons sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup well-shaken buttermilk
1 large egg, lightly beaten
5 tablespoons unsalted butter, melted and cooled slightly
Accompaniments: marmalade or jam; clotted cream or crème fraîche

Steps:

  • Put oven rack in middle position and preheat oven to 200°F. Warm 4 plates in oven.
  • Heat a well-seasoned griddle or heavy skillet (preferably cast-iron) over moderately low heat until hot.
  • While griddle heats, whisk together flour, oats, sugar, baking powder, baking soda, and salt, then whisk in buttermilk, egg, and 3 tablespoons butter until combined.
  • Brush hot griddle with some of remaining butter, then spoon 3 tablespoons batter per oatcake onto hot griddle and cook until bubbles appear on surface, edges are set, and undersides are golden, 1 to 2 minutes. Flip cakes with a large spatula and cook until tops spring back when pressed gently, 1 to 2 minutes more. Transfer as cooked to plates in oven and loosely cover with foil. Brush griddle with butter between batches if necessary.
  • Brush griddle cakes with any remaining butter and serve immediately.

1 1/4 cups buttermilk
2/3 cup chopped pecans
1 cup pure maple syrup
1 cup all-purpose flour
3 tablespoons firmly packed brown sugar

salt, a pinch
1 egg, at room temperature, lightly beaten
4 tablespoons unsalted butter, melted (plus additional as needed)
1/2 cup vanilla yogurt

Steps:

  • In a large bowl, combine the oats and buttermilk and let stand for about 15 minutes.
  • Meanwhile, in a small saucepan, toast the pecans over medium heat, stirring often, until fragrant and lightly browned, about 5 minutes.
  • Remove from the heat and pour in the maple syrup; stir well.
  • Cover to keep warm and set aside.
  • Ina small bowl, stir together the flour, brown sugar, baking soda, and salt.
  • Add to the soaked oats, then stir in the egg and 2 tablespoons of the melted butter; mix well.
  • In a frying pan over med-high heat, heat the remaining 2 tablespoons melted butter.
  • Ladle the batter, about 1/4 cup at a time, spaced well apart, into the pan.
  • Cook until the tops are bubbly and the bottoms are golden brown, about 4 minutes.
  • Turn and cook until golden brown on the second side, about 3 minutes longer.
  • Transfer the pancakes to a plate; keep warm.
  • Repeat with the remaining batter, adding more butter if needed.
  • Divide the pancakes among individual plates and each serving with some of the pecan-maple syrup and a spoonful of yogurt.
  • Pass the remaining pecan-maple syrup at the table.

Steps:

  • Pour the milk over the oats and let stand 5 minutes.
  • Stir the flour, baking powder, sugar and salt together.
  • Add the beaten eggs to the oat and milk mixture. Add the melted butter.
  • Mix the dry ingredients into the wet ingredients just until moistened.
  • You may keep this in the refrigerator for several days or make immediately.

1 cup rolled oats
1 1/2 cups whole wheat flour
2 tablespoons brown sugar
2 teaspoons baking powder
2 teaspoons cinnamon
1/4 teaspoon salt
2 cups skim milk
2 tablespoons oil
2 egg whites, slightly beaten

Steps:

  • Heat griddle to 375 degrees. Spray with cooking spray.
  • In food processor bowl with metal blade or blender container, process rolled oats to flour consistency. Lightly spoon flour into measuring cup; level off.
  • In large bowl, combine rolled oats, flour, brown sugar, baking powder, cinnamon and salt; blend well.
  • Add milk, oil and egg whites. Stir just until moistened.
  • To form pancakes, pour about 1/4 cup of batter onto hot griddle. Turn when edges look cooked and bubbles begin to break on surface, about 2 minutes on each side.

Steps:

  • Butter 13x9x2-inch metal baking pan or rimmed baking sheet. Bring 3 1/2 cups water to boil in heavy medium saucepan. Add oats and salt. Bring to boil; reduce heat to medium-low, cover, and simmer until oatmeal is tender but still firm to bite, stirring often and adding more water by 1/4 cupfuls if too thick, about 30 minutes. Add cream, 2 tablespoons maple syrup, sugar, and vanilla; stir until mixture thickens, about 3 minutes. Spread oatmeal in prepared pan. Cover with plastic wrap and chill until firm, at least 4 hours. DO AHEAD: Can be made 1 day ahead. Keep chilled.
  • Cut chilled oatmeal into squares or triangles. Heat griddle or heavy nonstick skillet over medium heat. Brush griddle with melted butter. Cook oatcakes until golden brown and heated through, about 3 to 4 minutes per side. Divide oatcakes among plates, drizzle with maple syrup, spoon strawberries over, and serve.

  • Mix the flours, baking powder and salt in a bowl.
  • Lightly beat the milk, egg, oil and honey together.
  • Add the liquid ingredients all at once to the flour mixture. Stir with a wooden spoon until just moistened. Do not overmix, a few lumps are fine.
  • Warm a lightly greased griddle pan over medium heat. The pan is ready when a few drops of water sprinkled on the griddle form fast-moving bubbles.
  • Pour batter onto the griddle: 1/8 cup for small or 1/4 cup for large pancakes.
  • When the tops of the pancakes are covered with holes and the bottoms are golden brown, flip to brown the other side.
  • Keep warm in the oven.
