PEACH AND STRAWBERRY CRUMBLE

Butter, for pan
2 tablespoons fresh lemon juice (about 1/2 large lemon)
1 1/2 tablespoons arrowroot flour
1 pound medium strawberries, halved
1 1/2 pounds yellow or white peaches, peeled, pitted and sliced* see Cook's Note
1/2 cup light brown sugar
2/3 cup all-purpose flour
2/3 cup old fashioned style oats
1/2 cup sliced almonds
1/4 cup light brown sugar
1 teaspoon ground cinnamon
1/4 teaspoon fine sea salt
1 stick (1/2 cup) unsalted butter, chilled, cut into 1/2-inch cubes
Serving suggestion: whipped cream, vanilla ice cream or gelato

Steps:

  • Put an oven rack in the center of the oven. Preheat the oven to 350 degrees F. Butter an 8 by 8-inch glass baking dish. Set aside.
  • For the filling: In a medium bowl, whisk together the lemon juice and arrowroot until smooth. Add the strawberries, peaches and brown sugar. Gently toss until the fruit is coated. Pour the fruit mixture into the prepared pan.
  • For the topping: In the bowl of a food processor, combine the flour, oats, almonds, brown sugar, cinnamon, and sea salt. Pulse until mixed. Add the butter. Pulse until the butter is the size of peas. Sprinkle the mixture over the filling and bake for 40 to 45 minutes until the filling is bubbling and the top is light golden. Cool the crumble for 5 minutes.
  • Spoon the warm crumble into bowls and serve with a dollop of whipped cream or ice cream.

3-1/2 cups sliced peeled peaches (about 4 medium)
2-1/2 cups sliced fresh strawberries
2 tablespoons lemon juice
3/4 cup sugar
1/4 cup cornstarch
2 tablespoons minced fresh basil
3/4 cup all-purpose flour
1/2 cup packed brown sugar
6 tablespoons cold butter

Steps:

  • Preheat oven to 375°. Unroll pie crust into a 9-in. pie plate; flute edge. In a large bowl, combine peaches, strawberries and lemon juice. In a small bowl, mix sugar, cornstarch and basil. Add to fruit and toss gently to coat. Transfer to crust., In a small bowl, mix flour and brown sugar; cut in butter until crumbly. Sprinkle over filling. Place pie on a foil-lined baking pan., Bake on a lower oven rack until topping is golden brown and filling is bubbly, 45-55 minutes. Cool on a wire rack.

Peaches and nectarines are so in season right now - any farmer's market will be guaranteed have at least 3 or 4 vendors selling 'em. This recipe uses up those stone fruits in a way that elevates them without being too fussy. It's pretty enough to be a treat for house guests, but still easy enough to make for an indulgent breakfast.

3 cups soft peaches, or as needed
3 cups soft nectarines, or as needed
½ cup white sugar
3 tablespoons cornstarch
1 teaspoon vanilla extract
1 cup whole wheat flour
½ cup brown sugar
¼ cup extra-virgin coconut oil
1 teaspoon baking powder
½ teaspoon ground cinnamon
¼ teaspoon salt

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch baking pan.
  • Boil peaches and nectarines 1 fruit at a time in a pot until very soft, about 30 seconds each. Let cool until ready to handle. Peel, core, and chop into bite-sized pieces.
  • Mix the fruit, sugar, cornstarch, and vanilla extract together in a large bowl. Pour into the prepared pan.
  • Combine flour, brown sugar, coconut oil, baking powder, cinnamon, and salt in a bowl. Mix with hands or a fork until crumbly. Sprinkle evenly over the fruit mixture.

4 ripe peaches, pitted, peeled if desired, each sliced into 8 wedges
1 tablespoon granulated sugar
1 tablespoon fresh basil (3 to 4 leaves, torn if large)
1/2 teaspoon grated lemon zest
1/4 teaspoon coarse salt
2 ounces chopped almonds (1/3 cup)
1/3 cup packed light-brown sugar
1/4 cup plus 2 tablespoons all-purpose flour
1/4 teaspoon coarse salt
1 1/2 ounces (3 tablespoons) cold unsalted butter, cut into 6 pieces
Heavy cream, for serving (optional)

Steps:

  • Preheat oven to 400 degrees. Make the filling: Mix all ingredients to combine.
  • Make the topping: Combine all ingredients (except cream), rubbing in butter with your fingers until mixture is crumbly.
  • Divide filling among four 5 1/2-inch round baking dishes, and sprinkle with topping. Transfer to a baking sheet. Bake until bubbling and golden brown, 25 to 27 minutes. Let cool slightly. Drizzle with heavy cream if desired.

This recipe came to me on a whim. I wanted to try it, so I did. It was a GREAT hit with my friends and family -- even children! Please give it a shot! You'll LOVE it!

4 large tomatoes
5 peaches
1 large red onion
1 1/2 cups fresh basil leaves
1 cup reduced-fat feta cheese
1/4 cup extra virgin olive oil
2 tablespoons red wine vinegar
2 tablespoons white wine vinegar
2 tablespoons balsamic vinegar
1 1/2 tablespoons sugar
1 teaspoon garlic powder
1 teaspoon oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Wash all fresh ingredients. Slice the tomatoes wedges to desired thickness - add to salad bowl. Slice the red onion in thin strips - add to bowl.
  • Slice the peaches in halves and pit them. Place the peaches on a hot grill (face down) for approximately 3 minutes - until they have grill marks, but are a little firm. Slice the grilled peaches to desired thickness (I like a little thinner than the tomato) - add to the bowl.
  • Combine all ingredients for the vinaigrette together in a separate bowl and then add to tomato, onion, and peaches - lightly mix.
  • Add the basil - add as the whole leaf, do not slice (think lettuce).
  • Crumble the feta in, if you wish for more - feel free to add, if you wish for less - add less.
  • Mix all ingredients together well.
  • I finish by adding some extra feta on the top, and you're done!

I had never roasted peaches before. Was I ever missing out on a treat!!! The crumble alone is great on yogurt or ice cream. Other seasonal fruits such as apricots, plums, nectarines, apples or pears could be used instead of the peaches.

1 cup rolled oats
1/2 cup sliced almonds, toasted
1/2 cup brown sugar
1/2 cup flour
1/2 cup butter, melted
1 teaspoon cinnamon
1 teaspoon sea salt
2 tablespoons butter
8 peaches, halved and pitted
1/4 cup maple syrup
vanilla ice cream
balsamic vinegar glaze

Steps:

  • Crumble: Heat oven to 350, Line baking sheet with parchment.
  • In a large bowl, combine oats, almonds, brown sugar, flour, melted butter, cinnamon and salt. Rub with your fingers until mixture resembles coarse crumbs. Spread in an even layer on a baking sheet. Bake for 10 minutes or until golden brown. Set aside. This can be made up in advance.
  • Roasted Peaches: Preheat oven to 500. Line baking sheet with parchment paper. Melt butter and maple syrup and drizzle over the peaches. Roast peaches for 5 - 8 minutes or until nicely caramelized. Peaches can be done ahead of time and gently re-heated before serving.
  • To serve: Divide roasted peaches among plates, cut side up. Top with a scoop of vanilla ice cream. Scatter crumble over top. Drizzle with a touch of vinegar.
