Number Of Ingredients 7

4small courgettes , ends trimmed
3-4 tbsp olive oil , plus extra to drizzle
3-4 tbsp balsamic vinegar , to drizzle
250g tub ricotta
squeeze lemon juice
handful fresh basil leaves , chopped
50g pine nut , toasted (see Know-how, below)

Steps:

  • Slice the courgettes lengthways, using a swivel vegetable peeler - you'll need 24 long strips. Drizzle some of the olive oil and balsamic over two large plates and lay the strips flat, trying not to overlap. Sprinkle with more oil and balsamic, cover and leave to marinate in the fridge for at least 20 mins. Can be prepared up to 6 hrs ahead.
  • Mix the ricotta with lemon juice and seasoning to taste, then mix in the basil and pine nuts. Place 1 tsp of the ricotta mixture onto one end of a courgette strip and roll up. Repeat until you have used up all the filling. Arrange rolls upright on a plate and grind over some black pepper. Drizzle with a little more oil and balsamic vinegar to serve.

2 tbsp olive oil
1 shallot , finely chopped
4 courgettes , halved and thinly sliced
3 garlic cloves , finely chopped
300g pasta shapes
small bunch basil , most chopped
zest 1 lemon
50g parmesan (or vegetarian alternative), grated, plus extra to serve (optional)
50g pine nut , toasted
250g tub ricotta

Steps:

  • Heat the oil in a large frying pan. Cook the shallot and courgettes for 8 mins until softened. When they are just beginning to colour, add the garlic and cook for 2 mins more.
  • Cook the pasta following pack instructions. Drain, reserving a little of the water. Tip the pasta into the courgette pan with the basil, lemon zest, Parmesan and pine nuts. Season, dot over the ricotta and mix gently so that you don't break it up too much. Serve sprinkled with extra Parmesan, if you like.

8 courgette flowers , with small courgette attached
sunflower oil , for frying
1 large egg
100g plain flour
pinch bicarbonate of soda
200ml iced water
250g tub ricotta
150g block soft goat's cheese
zest 1 lemon
½ red chilli , finely chopped
small handful mint leaves, chopped
2 large ripe tomatoes , deseeded and finely diced
2 tbsp olive oil
small handful mint leaves, finely chopped

Steps:

  • To make the batter, whisk the egg, flour and bicarb together in a wide bowl. Gradually pour in the iced water, whisking continuously, until you have a smooth batter the consistency of double cream. Set aside.
  • In a separate bowl, beat all the filling ingredients together with some seasoning until well mixed. To make the dressing, mix all the ingredients in a third bowl with some seasoning and set aside.
  • Gently open up each flower and remove the stamen if there is one. Place spoonfuls of filling inside. Close the flower, twisting the ends of the petals to seal. Heat a deep-fryer to 180C. (If you don't have a deep-fryer, see right.) Working in batches so you don't overcrowd the pan, dip the flowers in the batter and fry for 2 mins, then use a slotted spoon to carefully flip them and fry for another 2 mins until crisp. Drain on kitchen paper and leave in a warm place while you fry the rest. Sprinkle with a little salt and serve 2 flowers on each plate with a circle of dressing around the outside of the plate.

4 courgettes , halved lengthways
3 tsp extra-virgin olive oil
mixed salad , to serve
50g dried white breadcrumbs
50g pine nuts
6 spring onions , trimmed and finely sliced
1 garlic clove , crushed
6 sundried tomatoes in oil, drained
1 tbsp thyme leaves
25g parmesan or vegetarian alternative, finely grated

Steps:

  • Heat oven to 220C/200C fan/gas 7. Place the courgettes in a single layer in a shallow ovenproof dish, fairly tightly together, cut-side up. Brush lightly with 1 tsp oil and bake for 20 mins.
  • To make the stuffing, mix all the ingredients together in a bowl and season with lots of black pepper.
  • Sprinkle the stuffing on top of the courgettes and drizzle with the remaining olive oil. Bake for a further 10-15 mins or until the courgettes are softened and the topping is golden and crisp. Serve hot with a mixed salad.

2 courgettes, coarsely grated
50g ricotta
1⁄2 lemon, zested
2 eggs, lightly beaten
20g parmesan or vegetarian alternative, grated
50g self-raising flour
60g Greek yogurt
1⁄2 tbsp rose harissa
2 tbsp olive oil
6 thin slices of pancetta (optional)
splash of white wine vinegar
2 large eggs
dill and parsley, torn, to serve

Steps:

  • Line a bowl with a clean cloth and add the courgette with a pinch of salt. Set aside for 30 mins, then use the cloth to squeeze out the excess liquid. Tip the courgette into a bowl with the ricotta, lemon zest, eggs and parmesan, then stir to combine. Fold in the flour and some seasoning.
  • Stir the yogurt and harissa together in a small bowl and season with a pinch of salt. Set aside.
  • Heat the oven to 180C/160C fan/gas 4. Heat the oil in a non-stick frying pan and spoon in six mounds of the courgette mixture. Cook over a medium heat for 3-4 mins each side until golden brown. Transfer to a baking sheet and bake for 10 mins.
  • Meanwhile, heat your grill to high, then cook the pancetta, if using, for 2-3 mins on each side until crisp.
  • Bring a pan of water to the boil. Drizzle a little of the vinegar into a ramekin and crack an egg into it. Swirl the water in the pan with a wooden spoon to create a whirlpool in the middle, then gently tip the egg into it and simmer for 3 mins. Repeat with the second egg. Serve three fritters stacked on each plate, topped with an egg and three slices of pancetta, alongside a dollop of the harissa yogurt, then scatter over the herbs.
