FRESH APPLE CAKE WITH EASY BROWN SUGAR CARAMEL SAUCE
Makes one 9"x13" cake

Steps:
- Preheat oven to 350 degrees F. In a large bowl combine eggs and oil and whisk for 2 minutes, or until foamy and pale. Gradually add sugar, while whisking. Add flour, cinnamon, soda and salt (yes just throw it on top of the mixture of oil/egg/sugar. You probably think I should be telling you to 'sift ingredients', blah. Don't waste your time.) Stir dry ingredients into wet ingredients only until combined. Don't overmix. Add chopped apples. Fold in gently. Pour batter into a greased 9x13 inch glass baking dish. Spread evenly. Bake for 50-55 minutes in a preheated 350 degree F oven. Remove from oven, let cool a bit. Serve warm with Brown Sugar Caramel Sauce. (recipe below.)
- *I like larger pieces of apples in my cake and sometimes make 3/4" pieces. Try 1/2" pieces if you are unsure.
- *Try to use a flavorful baking apple, tart in flavor works well. About the only apple that won't work is "Red Delicious" and any apple that is mushy.)
- In a medium saucepan, whisk together sugar and cornstarch until well blended. (This will prevent the cornstarch from clumping.) Add water and whisk well. Bring to a boil over medium high heat. Boil for 6 minutes. Remove from heat. Add vanilla and butter. Mix well until combined. Set aside to cool to warm. (The sauce will thicken as it stands. When it is hot, it will look thinner than it will turn out. Don't worry!) You can pour this on the cake, or serve it on the side.
- *If you make the cake with Honeycrisp apples, you could add 1 TBSP of honey to this sauce to play off of the honey flavored apples in the cake.

- Preheat oven to 350 degrees. Grease a tube pan. Peel, core and chop apples into chunks. Toss with cinnamon and sugar and set aside. Stir together flour, baking powder and salt in a large mixing bowl. In a separate bowl, whisk together oil, orange juice, sugar and vanilla. Mix wet ingredients into the dry ones, then add eggs, one at a time. Scrape down the bowl to ensure all ingredients are incorporated. Pour half of batter into prepared pan. Spread half of apples over it. Pour the remaining batter over the apples and arrange the remaining apples on top. Bake for about 1 1/2 hours, or until a tester comes out clean.

- Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10 inch tube pan.
- In a large bowl, combine flour, 2 cups sugar, baking soda, salt and cinnamon. Make a well in the center and pour in the eggs, oil, orange juice and vanilla. Mix well. Stir in the chopped apple, nuts and coconut. Pour into prepared pan.

- Preheat oven to 325°F Grease 10" tube pan, combine 3 Tablespoons sugar with 1 teaspoon cinnamon, coat pan with sugar mixture.
- Mix flour, soda, salt, nutmeg, and cinnamon; set aside. Beat oil and sugar until blended. Beat in eggs, one at a time, and then stir in apples and vanilla. Add flour mixture until blended; stir in pecans and raisins.
- Transfer to pan and then drop and shake the pan to release bubbles.

- Cream together the eggs, oil and sugar.
- In a separate bowl, sift the flour, salt and baking soda.
- Combine all.
- Now add your nuts, vanilla and apples.
- Note~this batter is VERY stiff, don't worry, it's suppose to be that way. When the apples cook they add plenty of moisture to the cake to make it moist. Plus, your going to add more moisture when your glaze soaks inches.
- Pour into a greased and floured 9 X 13 cake pan. Bake at 350 for 45 minutes or until a toothpick comes out clean from the center of the cake.
- In a sauce pan, combine your glaze ingredients and boil for a few minutes. Set aside.
- When cake is done, puncture the top of cake with a fork, quite a bit. Pour on your glaze.

This is the only cake my mom ever baked - she was the daughter of a confectioner and taught me nearly everything about making cakes and tarts, but she never baked anything except this cake, because it was my favorite apple cake. She also made it with plums, but you can use any fruit you like. This cake maybe is not what you expect a cake to be - in Germany it is called a baking tray - cake which means that you spread the batter onto a baking tray which makes a flat cake, more like what you would call a "bar", I suppose, with a crisp bottom.

- Peel, core and slice apples or wash, pit and half plums.
- Preheat oven to 350 ° F.
- Keep 1 tablespoon of the margarine and two tablespoons sugar.
- Knead flour, the rest of the margarine and sugar, egg, salt and baking powder until you get a soft dough.
- Spread 2/3 of the dough onto a well greased or paper lined baking tray.

- Sprinkle sugar over apples in your largest mixing bowl. Sift dry ingredients together twice, then add to apples. Add remaining ingredients, and stir until well mixed. Batter will be very thick.

- Preheat oven to 325°. Well grease a baking pan. I double this recipe and use a bundt pan and grease it with shortening since it has a higher melting point. Then flour the pan.
- Get your buttermilk caramel sauce ingredients ready so the caramel is ready to be poured over the cake after you let it cool for 15 min after baking. If you're doubling the cake recipe to use a larger pan, be sure to double the buttermilk caramel sauce recipe.
- Into a very large saucepan with high sides add your buttermilk sauce ingredients. The mixture will foam a lot before it becomes caramel and cleaning this off your stove is a pain in the foot! Trust me, I'm speaking from experience. It's easier to clean a gigantic pot than the stove top.
- Sift together flour, baking soda, and cinnamon in a small bowl.
- Combine sugar, eggs, oil, vanilla extract, and OJ in a large bowl. Beat until well blended.
- Stir in flour mixture into the wet mixture and mix well.
- Fold in walnuts and apples.
- Spoon into prepared pan.
- Bake on 325° for 90 min or until the top springs back when pressed. If using more than 2 cups of apples bake longer. Right before you're ready to take the cake out of the oven, put your caramel sauce on to cook on medium-low on the stove.
- Remove cake and cool in pan for 15 minute.
- While cake is cooling for the 15 min, turn on your burner under the pot where you already prepared your buttermilk caramel sauce ingredients. Turn the burner on medium low. You're about to be in for a work-out.
- Continuously stir the ingredients as they melt and foam and come together into a really loose sauce. You don't want this to thicken a great deal. It should NOT resemble caramel like you put on ice cream. It should be more of the consistency of pancake batter. It will take approximately 15 minute See what we did there? The cake cools for 15 min while the caramel cooks!
- Poor your buttermilk caramel sauce over the cake. Poke some holes in the cake with a meat fork to help the caramel sauce get down into the cake. If you cooked the caramel too long it won't go down into the cake. It will just sit on top of the cake. Then you have to start over! But you can still eat the ruined cake over the sink. The calories don't count that way. Don't worry, we won't tell anyone.
FRESH APPLE CAKE BY MEMOM
I store my cake in a plastic cake carrier turned upside down. The icing will run off, therefore a regular cake plate will not work unless you have one with high sides. This cake is much better the day after. It is so very moist. It is even better if you put your slice in the microwave for 10 seconds to just have it warm. My family would disown me if I did not have this cake for holiday get-togethers. Nothing better with a cup of coffee.

Looking for a way to use up an abundance of apples, I stumbled across this recipe on Pinterest and traced it to bunnysoven.com. She gives credit to Examiner.Com, from Anne Marie Hurley, Livonia, Michigan. I took the liberty of tweeking this just a little. What makes this cake killer is the caramel frosting you make and pour over the cake. Make the cake let it cool , make the caramel sauce and pour the hot caramel sauce over the cake. Uh huh, gooey delicious caramel over a moist apple filled cake. It's easy, fast to make and incredibly delicious. This is a keeper!
