VEGAN PAVLOVAS
These sweet desserts are a perfect treat for you and friends and family, whether you're vegan or not. The pavlovas themselves are made with aquafaba -- the liquid from a can of chickpeas (instead of the usual egg whites). They bake up wonderfully crisp on the outside and with a fluffy marshmallow-like interior. We added a touch of unsweetened cocoa to the base and topped it with a whipped coconut cream and lightly sweetened strawberries.

Steps:
- Preheat the oven to 250 degrees F. Line a rimmed baking sheet with parchment.
- For the aquafaba pavlova: Strain the chickpeas directly into the bowl of a stand mixer fitted with the whisk attachment. There should be about 3/4 cup liquid; reserve the chickpeas for another use. Add the cornstarch and cream of tartar to the liquid and beat on medium-high speed until very foamy. While still beating, add the superfine sugar, 1 tablespoon at a time, then continue to beat until the mixture forms stiff and glossy peaks, 4 to 6 minutes. Once the meringue is stiff, beat in the cocoa powder and vanilla until smooth and combined.
- Spoon the meringue in 4 equal mounds on the prepared baking sheet, then use a spoon or small offset spatula to smooth each mount into a 4-inch wide disk. Make a small indent in the center of each mound to hold the toppings. Make sure to leave at least 2 inches between each disk in case they spread when baking.
- Bake until set and no longer glossy, about 2 hours. Turn the oven off and let the pavlovas sit in the closed oven until they have dried out inside, about 1 hour more. (The pavlovas will keep in an airtight container for up to 3 days.)
- For the whipped coconut cream and strawberries: Meanwhile, open the can of chilled coconut cream and scoop off the solid top into a chilled medium bowl, leaving the liquid behind; reserve the liquid for another use. Beat the solids with an electric mixer on medium-high until light and fluffy, about 2 minutes. Add 3 teaspoons of the confectioners' sugar and beat until the sugar is fully incorporated, about 1 minute more. Cover and chill until ready to use, up to overnight.
- Toss the strawberries with the remaining 2 teaspoons confectioners' sugar in a small bowl until fully incorporated. Let the strawberries sit until they're slightly softened, glossy and starting to release some natural juices, about 5 minutes.
- To serve, place the pavlovas on a serving plate. Top each with some whipped coconut cream and macerated berries.
PAVLOVA
There's something so satisfying about this elegant and naturally gluten-free dessert; it's crunchy, creamy and sweet. We opted for confectioners' sugar in the meringue, making the pavlova extra crisp on the outside and marshmallow-like on the inside. Crowned with a halo of whipped cream and fresh berries, this dessert is truly heaven-sent! Make the components in advance and assemble the pavlova just before serving.

Steps:
- Position a rack in the lower third of the oven and preheat to 225 degrees F. Line a baking sheet with parchment paper. Draw a 9-inch circle on the paper, then flip it over so the drawing is on the underside.
- For the meringue, combine the egg whites, cream of tartar and salt in the very clean bowl of a stand mixer fitted with the whisk attachment. Whisk on medium speed until foamy, about 1 minute. Increase the speed to medium-high and beat until thick and opaque, about 1 minute more. Gradually add the confectioners' sugar, 1/4 cup at a time, and beat until stiff shiny peaks form, about 5 minutes more.
- Spread the meringue on the prepared baking sheet, making sure to stay within the drawn 9-inch circle. Create some shallow dips and swoops (this will hold the whipped cream and berries). Bake until the meringue is dry and crisp on the outside, about 2 hours. Turn off the heat and let the pavlova sit in the warm oven to dry out more, about 1 hour. Transfer to a wire rack to cool completely. (The meringue can be made up to several hours in advance.)
- Meanwhile, make the whipped cream by whisking together the heavy cream and vanilla in a large bowl with an electric mixer until stiff peaks form, about 3 minutes. Cover and refrigerate until ready to serve.
- Toss the berries and raspberry jam in a medium bowl until evenly coated and glossy. Cover and refrigerate for at least 15 minutes and up to 1 hour.
- To serve, dollop the whipped cream on top of the meringue and spread into an even layer. Pile the macerated berries on top (drizzle any berry juice on top as well). Slice into wedges and serve immediately.
PAVLOVA
Steps:
- Heat the oven to 250 degrees F. Line a half sheet pan with parchment paper. Use a 9-inch round plate and trace a circle in the middle of the parchment. Turn over the parchment.
- Place the egg whites and pinch of salt in the bowl of a stand mixer and, using the whisk attachment on high, whisk until stiff peaks form, 4 to 5 minutes. Reduce the speed to medium and slowly add the sugar over 2 minutes. Stop and scrape down the sides of the bowl. Increase the speed to high and whisk until the mixture is smooth and glossy and stiff peaks form, 6 to 7 minutes. Decrease the speed to low and add the vanilla, vinegar, and cornstarch. Mix just to combine.
- Gently spoon the meringue onto the parchment and spread to fit the shape of the circle, forming a slight well in the center. Place the meringue into the oven and bake for 45 minutes.
- Turn off the heat and leave in the oven for 3 hours, or until the meringue is crisp and dry on the outside. Open the oven door and cool completely before removing from the oven, approximately 30 minutes.
- Just before serving, combine the whipped cream and the passion fruit pulp and spread in the center of the meringue. Serve immediately.
PAVLOVA
Steps:
- Preheat oven to 350 degrees.
- In a mixer fitted with a whisk attachment (or using a hand mixer), whip the egg whites, cream of tartar and salt in a clean, dry bowl until foamy. Add the granulated sugar, cornstarch, vinegar, and vanilla and continue whipping until stiff, smooth and glossy, about 8 minutes more. On a sheet of parchment paper cut to fit a sheet pan, use a pencil to draw or trace a circle 9-inches in diameter. Line the sheet pan with the parchment, pencil side down (you should still be able to see the circle). Spoon the egg whites into the circle, using the back of the spoon to smooth the top and sides of the disk. Bake in the center of the oven for 10 minutes, then reduce the heat to 300 degrees and bake until the meringue has puffed up and cracked on the top and the surface is lightly browned to the color of cafe au lait, about 45 minutes more. Turn off the oven, prop the oven door open, and let the pavlova cool in the oven at least 30 minutes, to room temperature. This ensures a gradual cooling, which protects the delicate meringue.
- Whip the cream and brown sugar together until stiff. Spoon it in the center of the cooled pavlova and spread out to within 1/2-inch of the edge. Arrange the slices of kiwi around the edge. Arrange the slices of strawberry in the middle. To serve, slice into wedges with a serrated knife.
NEW ZEALAND PAVLOVA
This dessert can be filled with any type of berry mix. To help ensure you have a successful pav, add all the ingredients very slowly. The cook time does not include cooling in the oven.

- Preheat oven to 250°F.
- Using a clean and perfectly dry bowl, beat egg whites. When soft peaks form, add sugar gradually.
- Beat until very stiff, continue beating and add salt, then vinegar, and finally vanilla a few drops at a time.
- Beat in the cornstarch and keep beating until the mixture is really glossy and will stand when cut with a knife.
- Cover a baking pan with a sheet of parchment paper, tip the pavlova mix into the center of the pan and spread it into around about 8 - 9 inches across, leave the center slightly caved inches
- Place on rack in center of oven and cook for one hour, then turn oven off and leave until oven is cold.
- Do not open the oven at all until it is cold. If you are unsure, it's better to leave in too long than open early.
- This pavlova has a slightly crisp outside and is like marshmallow on the inside. You may dress it several ways, spread with a layer of thick whipped cream that has had 1/4 teaspoon of vanilla and 1 teaspoon of sugar added or pastry cream. This is covered with sliced fruit, whatever is in season - strawberries, raspberries, sliced (peeled) kiwifruit the choice is yours.
MINI PAVLOVAS (INDIVIDUAL SERVE PAVLOVA)
An ever popular Australian/NZ favourite. Makes 6 individual pavlovas. Serve topped with cream or fruche and fruit of your choice. The favourites in my home are strawberries, kiwifruit, passionfruit, flaked chocolate and even crushed peppermint crisp chocolate bar.It's best to use your eggs at room temperature and to ensure your bowl to whip the egg whites in is super clean. Make sure your egg whites have absolutely no egg yolk with them, or you whites will not whip up properly. If you eat gluten-free ensure your flour and thickened cream used are also gluten free. Please note-times given to not include cooling time. You can use gluten free or lactose free youghurt to top these if desired.

- Preheat oven to 130°C Line two baking trays with baking paper. Draw 3 10cm (4 inch) circles on each piece of paper.
- Using an electric mixer, beat the egg whites with the cream of tartar until stiff peaks form. This is quite a bit of beating.
- Add the sugar one spoon at a time ,beat well after each addition. Dont be in a hurry to add the sugar quickly- your egg whites will not hold up if you do!
- Continue beating until all of the sugar has been added and the meringue is thick and glossy.
- Using a large clean metal spoon, gentley fold in the cornflour, vinegar and vanilla.
- You can turn the paper over on the baking trays and still see the drawn circles. Spoon meringue onto the baking trays, using the circles as a guide.
- Bake in the oven on the lowest shelves for 75 minutes or until crisp. Turn the oven off. Leave the pavlovas in the oven to cool completely, or overnight. Leave the oven door slightly ajar.
- To serve-spoon whipped cream or fruche over each pavlova and decorate with fruit of your choice or crushed/flaked chocolate.

- Preheat oven to slow 150C degrees.
- Line a baking tray with baking paper.
- Draw a 20cm circle on the paper.
- Beat the egg whites in a large dry bowl until soft peaks form.
- Gradually add the sugar, beating well after each addition.
- Continue beating until the mixture is thick and glossy and the sugar has completely disolved.
- Spread meringue mixture onto tray inside the marked circle.
- Shape meringue by running a palette or flat-bladed knife up and down the edge of the meringue, making furrows around the side.
- This will strengthen the sides, stopping them from collapsing.
- Bake for 40 minutes.
- Turn the oven off and allow the meringue to cool completely in the oven.
- Whip the cream.
- Halve the strawberries and peel and slice the kiwifruit.

- Preheat oven to 300 degrees F (150 degrees C). Line a sheet pan with parchment paper. Draw a 9 inch circle on the parchment. An easy way to do this is to draw around the outside of a 9 inch pan with a pencil.
- In a large bowl, beat egg whites on high speed until soft peaks form. Add 3/4 cup of the sugar gradually, while continuing to whip. Make sure sugar is completely dissolved. Mix together the remaining 1/4 cup sugar with the cornstarch; lightly fold into meringue with lemon juice.
- Spread a layer of meringue to fit circle on parchment, approximately 1/4 inch thick. With remainder of mixture, pipe or spoon swirls around the edges to form a shallow bowl shape.
- Bake at 300 degrees F (150 degrees C) for 1 hour. Turn off oven, but leave meringue in oven for an additional 30 minutes. When cool, the meringue should be hard on the outside, and slightly moist on the inside.
- In a large bowl, combine the cream and half a cup of confectioners sugar, and whip until thickened. Decorate with fruit of your choice; strawberries are excellent.

Pavlova is a traditional dessert in New Zealand. It is a meringue base that is topped with whipped cream and fruit, usually kiwifruit. Children's birthday cakes are often pavlovas in New Zealand and may be decorated with candy. As with all meringues, this is best made on a dry day as high humidity can affect the end result. If you want a larger pavlova, just keep adding layers - you might want to make the bottom one a big wider so the creation doesn't tip! - Preheat oven to 300 degrees F. Line a baking sheet with parchment paper. Draw a 9-inch circle on the parchment paper.
- In a large bowl, beat egg whites until stiff but not dry. Gradually add in the sugar, 1 tablespoons at a time, beating well after each addition. Beat until thick and glossy. Overbeaten egg whites lose volumn and deflate when folded into other ingredients. Be absolutely sure not a particle of grease or egg yolk gets into the whites. Gently fold in vanilla extract, lemon juice and cornstarch.
- Spoon mixture inside the circle drawn on the parchment paper. Working from the center, spread mixture toward the outside edge, building edge slightly. This should leave a slight depression in the center.

- Place the egg whites in a small mixing bowl and let stand at room temperature for 30 minutes. Meanwhile, draw a 10 inch circle on a piece of wax paper and place (writing-side down) on a baking sheet. Variation: Draw 10 four inch circles on the wax paper.
- Add vanilla and cream of tartar to egg whites. Beat with an electric mixer until soft peaks form. Add sugar, 1 tablespoon at a time, beating on high speed until very stiff peaks form and sugar is almost dissolved (about 5 minutes).

- Line a large baking sheet with baking parchment. Using an 18cm round cake tin or plate as a guide, draw a circle on the parchment, then flip it over. Heat the oven to 130C/110C fan/gas ½.
- Rub the reserved lemon half around the inside of a large bowl or stand mixer, then wipe with kitchen paper to remove any butter or oil. Tip in the egg whites and whisk with an electric whisk or the mixer on a low speed until the whites form small, foamy bubbles, about 1-2 mins. Keep going until the mix looks like shaving foam, then add the sugar, 1 tbsp at a time, until it's a thick, glossy meringue. Rub some between your fingers - if you can feel any grains of sugar, keep whisking for a few minutes. Add the cornflour, lemon juice and vanilla, and whisk for another 30 seconds.
- Spoon the meringue onto the baking parchment, into the centre of the circle, and spread it out to the edges with a palette knife. Swipe the knife around the edge, then smooth the top. Bake for 15 mins, then turn the oven down to 100C/80C fan/gas ¼ and bake for 1 hr. Turn the oven off and leave the pavlova inside to cool for at least 2 hrs, or overnight.

- Heat oven to 150C/130C fan/gas 2.
- Using a pencil, mark out the circumference of a dinner plate on baking parchment.
- Whisk 4 egg whites with a hand mixer until they form stiff peaks, then whisk in 250g caster sugar, 1 tbsp at a time, until the meringue looks glossy.
- Whisk in 1 tsp white wine vinegar, 1 tsp cornflour and 1 tsp vanilla extract.
- Spread the meringue inside the circle, creating a crater by making the sides a little higher than the middle.
- Bake for 1 hr, then turn off the heat and let the Pavlova cool completely inside the oven.
- When the meringue is cool, chop 100g of the hulled strawberries. Mix them with 100g of the redcurrants and 2 tbsp icing sugar.
- Place in a food processor, blitz until smooth, then push the fruit mixture through a sieve.
- Whip 350ml double cream with the remaining 1 tbsp icing sugar and spread it over the meringue. Put the remaining 400g hulled and halved strawberries and 100g redcurrants on the cream and finally pour the sauce over the whole lot.
