1 cup butter, softened
8 cups confectioners' sugar
6 tablespoons 2% milk
2 teaspoons vanilla extract
Food coloring, optional

Steps:

  • In a large bowl, combine butter, confectioners' sugar, milk and vanilla; beat until smooth (frosting will be thick). If desired, tint with food coloring.

8 cups confectioners' sugar
½ teaspoon salt
2 teaspoons vanilla extract
1 cup heavy whipping cream

Steps:

  • In a mixing bowl, cream shortening until fluffy. Add sugar, and continue creaming until well blended.
  • Add salt, vanilla, and 6 ounces whipping cream. Blend on low speed until moistened. Add additional 2 ounces whipping cream if necessary. Beat at high speed until frosting is fluffy.

2 teaspoons clear imitation vanilla extract
6 fluid ounces heavy cream

Steps:

  • Cream shortening until fluffy. Add confectioner's sugar and continue creaming until well blended.
  • Add salt, vanilla, and whipping cream blend on low speed until moistened. Add additional whipping cream if necessary (up to 2 ounces). Beat at high speed until frosting is fluffy.

1/4 lb unsalted butter, room temperature, softened
3 cups white Crisco
3/4 cup milk
1 teaspoon pure vanilla extract
1/2 teaspoon clear lemon extract
1/2 teaspoon clear orange extract
1/2 teaspoon clear butter flavor extract (1 tsp salt)
2 lbs confectioners' sugar
1 1/2 cups confectioners' sugar

Steps:

  • cream all items together in mixing bowl.
  • Mix well at a low to medium speed. Should take 5-7 minutes.
  • Finished product should be light and fluffy.
  • Room temperature stable 5-6 hours.
  • Keeps in fridge up to 4 weeks or you can freeze.

Yield 10-12 cupcakes, or 1 x 20cm cake

Number Of Ingredients 5

100g milk chocolate
200g butter, softened
400g icing sugar
5 tbsp cocoa powder
2 tbsp milk

Steps:

  • Put the chocolate in a heatproof bowl over a pan of barely simmering water (make sure the bowl isn't touching the water). Stir until melted. Alternatively, melt in the microwave, stirring every 30 secs. Leave the melted chocolate to cool for 5 mins.
  • Mash the butter and icing sugar together with a fork first, then switch to a wooden spoon or electric beaters if you have them. Sift in the cocoa and pour in the melted chocolate, a pinch of salt and the milk, then mix again until smooth. Use to top cupcakes or cover and fill a chocolate sponge cake.

600g icing sugar, sifted
300g unsalted or salted butter, softened
finely grated lemon zest
finely grated orange zest
a dash of vanilla extract
few drops food colouring
cocoa powder, to taste

Steps:

  • Beat 600g sifted icing sugar and 300g butter together with your chosen flavouring and colouring if using, add 2-3 tablespoons of boiling water to loosen and beat until smooth.
  • Fill a piping bag with a star nozzle and pipe onto cupcakes or smear in the middle and over the top of a 20cm cake using a palette knife.

This is the best buttercream icing I have ever tasted. I used it for my daughter's wedding cake. I made a double batch, which was enough to ice, border, and pipe small decorations on the sides of the cake for a 14" x 10" x 6" tiered cake. I think the whipping cream is the secret to making this icing special.

1 cup butter or 1 cup margarine
1 cup vegetable shortening
2 lbs powdered sugar (8 cups)
1/2 teaspoon salt
1 tablespoon meringue powder (optional)
1 teaspoon vanilla
1 teaspoon almond extract
1/2-1 teaspoon clear butter flavoring
4 -6 ounces whipping cream

Steps:

  • Cream butter and shortening until fluffy.
  • Add sugar, meringue powder, about half of the cream, and continue creaming until well blended.
  • Add salt, flavorings and enough whipping cream to make the consistency you need.
  • Beat at medium speed until icing is fluffy.
  • You may substitute all shortening for the butter, which will give a pure white icing, but the flavor will not be quite as good.
  • I used butter and real vanilla and the icing turned out a very pale ivory, which I personally prefer to a stark-white icing.
  • The meringue powder gives the icing a light crust, but it remains soft underneath.
