MINI BUFFALO TURKEY MEATLOAVES

1/4 onion, roughly chopped
3 carrots (1 roughly chopped, 2 grated)
2 cloves garlic
1 1/2 pounds lean ground turkey
1 large egg
1/2 cup panko
1/4 cup whole milk
1/3 cup plus 2 tablespoons Buffalo hot sauce (such as Frank?s RedHot)
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter, melted
2 cups finely chopped broccoli florets
4 stalks celery, thinly sliced
1/2 cup blue cheese dressing

Steps:

  • Preheat the oven to 450˚ F. Combine the onion, chopped carrot and garlic in a food processor and pulse until finely chopped; transfer to a large bowl. Add the turkey, egg, panko, milk, 2 tablespoons hot sauce, 1/4 teaspoon salt and a few grinds of pepper. Mix well with your hands. Form into four 3/4-inch-thick oval patties on a rimmed baking sheet.
  • Bake the patties until lightly browned, firm and a thermometer inserted into the centers registers 160˚ F, 20 to 25 minutes.
  • Whisk the melted butter and remaining 1/3 cup hot sauce in a bowl. Brush the tops of the meatloaves with half of the sauce, then return to the oven until the sauce is baked in, about 4 minutes. Remove from the oven and brush with the remaining sauce.
  • Transfer the meatloaves to plates. Toss the broccoli, grated carrots and celery with the blue cheese dressing; serve with the meatloaves.

Nonstick cooking spray, for the pan
1 1/2 cups regular oats
1 cup whole milk
2 1/2 pounds ground turkey
4 slices bacon, cut into very small bits
3 tablespoons finely minced fresh parsley, plus more for serving
1/2 teaspoon seasoned salt, such as Lawry's
1/2 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
1 cup ketchup, plus more if needed

Steps:

  • Preheat the oven to 350 degrees F. Generously coat 18 standard muffin cups (from two 12-cup muffin pans) with cooking spray.
  • Put the oats in a small bowl and slowly pour the milk over them. Stir to make sure the oats are all coated and then let them sit for a few minutes.
  • Put the turkey and bacon in a separate large bowl and add the oats and any extra milk from the bowl to it. Add the parsley, seasoned salt, black pepper, red pepper flakes and 1/4 cup of the ketchup. Use your hands to mix it all together. Place a 1/4-cup scoop of the mixture in each greased muffin cup. Squirt about 1/2 teaspoon of the remaining ketchup on top of each meatloaf. Use a spoon to smear the ketchup evenly over the top, then use it to nudge the edges of the meatloaves away from the pan a bit (this just neatens them up a little).
  • Bake for 25 minutes, then carefully squirt another 1/2 teaspoon of ketchup on top of each, spreading it carefully with a spoon to cover as much of the surface as possible. Continue to bake until completely cooked through and sizzling around the edges, about another 30 minutes. If there are any large areas without ketchup, go ahead and squirt/spread more as needed.
  • Sprinkle the meatloaves with parsley, then let them sit in the pan for 5 to 7 minutes before serving. Run a sharp knife around the edges of the loaves to loosen them if they stick. Serve them warm with a veggie on the side

1/2 cup Progresso® Italian style panko crispy bread crumbs
1 can (18 oz) Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
2 sticks (1 oz each) string cheese*
1 lb extra-lean (at least 93%) ground beef
1 egg
1/4 cup sliced green onions (4 medium)

Steps:

  • 1. Heat oven to 350 degrees F. In large bowl, stir bread crumbs and 1 cup of the cooking sauce until well mixed; let stand 5 minutes.
  • 2. Meanwhile, cut twelve 1/2-inch pieces from cheese sticks (store remaining portion of cheese stick for another use). Set aside. Add beef, egg, green onions, 1/2 teaspoon salt and 1/4 teaspoon pepper to bread crumb mixture until well mixed.
  • 3. Spray 12 regular-size muffin cups with cooking spray. Divide beef mixture evenly among cups (cups will be very full). Push 1 piece of cheese into center of each loaf. Place muffin pan on cookie sheet to catch any spillover. Bake about 30 minutes or until thermometer inserted in center of loaves in middle of muffin pan reads 160 degrees F (outer loaves will be done sooner).
  • 4. Meanwhile, heat remaining sauce until hot. Immediately remove loaves from muffin pan; spoon heated sauce over loaves.
  • *Regular mozzarella cheese, cut into 1/2-inch cubes, can be substituted.

Mini Cheese Stuffed Turkey Meatloaves with Mushroom Gravy image

3 cups sliced mushrooms
2 tablespoons butter
1 cup chicken broth
1 lb. ground turkey
1/2 cup plain breadcrumbs
1 egg
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper
4 tablespoons gournay cheese spread, such as Boursin Garlic and Fine Herbs
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Spray 4 mini loaf disposable foil pans (5 x 3.5 inches) with non-stick cooking spray. Preheat the pressure cooking pot. When hot, add 2 tablespoons butter and saute 3 cups mushrooms in the butter until they turn soft, about 5 minutes. Remove with a slotted spoon and add 1 cup chicken broth to the pressure cooking pot. Set aside 2/3 of the mushrooms for the gravy, and finely dice remaining 1/3 of the mushrooms. In a large bowl, combine diced mushrooms, ground turkey, breadcrumbs, egg, garlic powder, onion powder, Italian seasoning, and salt and pepper to the bowl. With clean hands, mix just until well blended. Divide the mixture into fourths and press into loaf pans. Create a row down the center of each meatloaf about 1-inch from the ends. Fill the row with a tablespoon of gournay cheese, then close the row by pinching the meat around it. Place a trivet in the bottom of the pressure cooking pot. Place two loaf pans on the trivet; put a second trivet on top of the loaf pans and place remaining two loaf pans on top of the second trivet. Lock the lid in place and select high pressure and 12 minutes cooking time. Cook to 165° F. When timer beeps, turn off pressure cooker and do a quick pressure release. Remove the pans and trivets from the pressure cooker. Cover meatloaves to keep warm. To make the mushroom gravy. Add mushrooms to the pressure cooking pot. In a small bowl, combine the cornstarch and water and stir until dissolved; add to the pressure cooking pot, stirring until sauce thickens. Season with salt and pepper to taste, and serve over mini meatloaves.

1 cup soft bread cubes
1/4 cup whole milk
1-1/2 teaspoons onion salt
1 teaspoon dried parsley flakes
Dash pepper
1-1/2 pounds lean ground beef (90% lean)
6 sticks (2-1/2 inches x 1/2 inch each) cheddar or mozzarella cheese
SAUCE:
2 cans (15 ounces each) tomato sauce
1/2 cup chopped onion
1 tablespoon dried parsley flakes
1/2 teaspoon dried oregano
1/4 teaspoon garlic salt

Steps:

  • In a bowl, combine first six ingredients. Mix in beef. Divide into six portions. Shape each portion around a cheese stick and form into a loaf. Set aside. , In a large skillet, combine all sauce ingredients. Add loaves and spoon sauce over each. Cover and bring to a boil. Reduce heat to simmer; cook until a thermometer reads 160°, about 20 minutes.

1/2 cup oats
1/4 cup chopped onion
1 teaspoon salt
1/4 teaspoon pepper
1 egg
3/4 cup shredded cheese, any kind (3 oz)
3/4 cup barbecue sauce, pizza sauce or Old El Paso™ Thick 'n Chunky salsa

Steps:

  • Heat oven to 375°F. Spray 12 regular-size muffin cups with cooking spray.
  • In large bowl, mix ground beef, oats, onion, salt, pepper and egg with hands or spoon. Using 1/4-cup measuring cup, scoop beef mixture into each muffin cup; press into cup.
  • Make indentation in center of mixture in each cup. Spoon 1 tablespoon cheese into each indentation. Top each with 1 tablespoon desired topping.

1 cup cheddar cheese
1 egg
1/2 cup quick oats
1 medium onion, finely chopped
3/4 cup milk

1/2 cup brown sugar
1 tablespoon yellow mustard

Steps:

  • Preheat oven to 350 degrees.
  • Beat egg and milk together.
  • Add cheese, oats, onion, salt, & pepper to milk/egg mixture.
  • Mix in ground beef with your hands until all ingredients are incorporated well.
  • Shape into 8 loaves and place into a greased 9x13 pan.

1/2 c 100% whole grain quick-cook oats, uncooked
1 tsp salt
1 lb lean ground beef or ground turkey
12 mild cheddar cheese cubes or cheddar bar cheese cut into 3/4
2/3 c ketchup
1/4 c light brown sugar, packed

Steps:

  • 1. preheat oven to 350 spray 12 muffin tins with cooking spray
  • 2. combine beaten egg, milk, uncooked oates, and salt in a large bowl. Add the ground beef or turkey, mixing well.
  • 3. divide mixture into 12 equal portions. Insert 1 cheese cube into the center of meat and roll in hands to form the meat into a ball around the cheese. Place into muffin tin and continue with remaining meat and cheese.
  • 4. combine the ketchup and brown sugar in a separate small bowl. stir thoroughly and spread over each mini meatloaf.
  • 5. Bake uncovered on center oven rack for 30 minutes.
  • 6. Refrigerate any leftovers. You could probably freeze also.
