MEATBALL CASSEROLE

Makes 6 to 8 servings

Number Of Ingredients 15

2 tablespoons olive oil
3 cloves garlic, minced
½ teaspoon fennel seeds
2 (24-ounce) jars tomato basil pasta sauce
¾ cup chopped fresh basil, divided
¼ cup tomato paste
1 (15-ounce) container ricotta cheese
1 cup chopped roasted red peppers
1 cup grated Parmesan cheese
2 large eggs, lightly beaten
1 teaspoon kosher salt
1 (16-ounce) package penne pasta, cooked according to package directions
1 (14-ounce) package frozen cooked Italian-style meatballs, thawed
2 cups shredded mozzarella cheese
Garnish: fresh basil

Steps:

  • Preheat oven to 375°. Lightly spray a 13x9-inch baking dish with cooking spray.
  • In a large Dutch oven, heat oil over medium heat. Add garlic and fennel seeds; cook, stirring constantly, for 1 minute. Stir in pasta sauce, ¼ cup basil, and tomato paste; cook, stirring frequently, for 10 to 15 minutes.
  • In a medium bowl, stir together ricotta, roasted peppers, Parmesan, eggs, salt, and remaining ½ cup basil.
  • Spread 1 cup tomato sauce in bottom of prepared pan. Layer with half of cooked pasta, half of remaining tomato sauce, all ricotta mixture, remaining pasta, all meatballs, and remaining sauce. Cover with foil.
  • Bake for 30 minutes. Uncover casserole, and sprinkle with mozzarella. Bake until melted, about 10 minutes more. Let stand for 15 minutes before serving. Garnish with basil, if desired.

1 (16 ounce) package frozen meatballs, bite-size and thawed
1 (3/4 ounce) package fresh basil leaf, chopped
1 (7 ounce) can sliced mushrooms, drained
2 tomatoes, sliced 1/4-inch thick
1 cup ricotta cheese
1 cup sour cream
2 large eggs
3 teaspoons roasted garlic, minced
2 teaspoons salt
2 teaspoons dried oregano
0.5 (12 ounce) package egg noodles, cooked
1 1/2 cups mozzarella cheese or 1 1/2 cups provolone cheese, shredded
fresh parsley, garnish (optional)

Steps:

  • Preheat oven to 350 degrees; lightly grease a 2 1/2 quart baking dish.
  • Spread 1 cup spaghetti sauce over bottom of baking dish.
  • Place meatballs on top of sauce.
  • Layer basil, mushrooms and tomatoes.
  • In a medium bowl, whisk together ricotta, sour cream, eggs, remaining 1 1/2 cups spaghetti sauce.
  • Stir in garlic, salt, oregano and prepared noodles.
  • Pour mixture over layered ingredients in baking dish.
  • Top with cheese.
  • Bake for 55 minutes to 1 hour, or until bubbly.
  • Garnish with fresh parsley, if desired.

1 1/2 lbs ground chuck
1 medium onion, chopped
3 garlic cloves, minced
1 (10 3/4 ounce) can cream of celery soup
1 (10 3/4 ounce) can cream of mushroom soup
1 (15 ounce) can corn, drained
1 (15 ounce) can peas, drained
3 tablespoons browning sauce
1 tablespoon garlic salt
1/4 teaspoon ground red pepper
1/4 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1/8 teaspoon poultry seasoning
1/8 teaspoon sage
1 (32 ounce) package frozen tater tots

Steps:

  • Preheat oven to 350°. Lightly grease a 13x9-inch baking dish.
  • In a large skillet, combine ground chuck, onion, and garlic; cook over medium-high heat until meat is browned and crumbles. Drain well.
  • In a large bowl, combine meat mixture, soups, corn, peas, browning sauce, garlic salt, red pepper, paprika, salt, pepper, poultry seasoning, and sage. Spoon into prepared baking dish. Top evenly with tater tots.
  • Bake 45 minutes to 1 hour, or until browned and bubbly.

1 cup all-purpose cornmeal
1/2 cup all-purpose flour
2 tablespoons baking powder
2/3 cup milk
2 eggs
1/2 teaspoon salt
1/3 cup vegetable oil
1/2 cup chopped onion
1 (14 ounce) can creamed corn
1 cup grated cheddar cheese
1 cup chopped jalapeno pepper

Steps:

  • Preheat oven to 350°F.
  • Grease an 8 by 8-inch or 9 by 9-inch square pan with softened butter or nonstick cooking spray.
  • Set aside.
  • In a large bowl, mix together cornmeal, flour, baking powder, milk, eggs, salt, and oil.
  • Stir in onion and creamed corn.
  • Pour half of batter into prepared pan.
  • Top with cheese and peppers, spreading onto batter.
  • Pour remaining batter on top of cheese and peppers.
  • Bake for about 35 minutes or until golden on top and a toothpick inserted into the center comes out clean.
  • Let cool slightly before cutting into squares.

16 ounces spaghetti sauce
1 1/2 cups water
3 cups uncooked mafalda pasta (mini lasagna nodles)
16 ounces frozen peppers and onions (stir fry mixture)
1 lb cooked frozen meatballs
2 cups shredded mozzarella cheese
1/4 cup grated parmesan cheese

Steps:

  • In 2 quart glass baking dish, mix spaghetti sauce and water until blended. Add uncooked noodles, stir-fry mixture and meatballs and stir to coat. Make sure noodles are completely covered with sauce mixture.
  • Preheat oven to 350 degrees. Bake casserole, covered, for 45 minutes. Uncover, sprinkle with cheese, and bake uncovered 5-10 minutes longer until casserole is bubbly, noodles are tender and cheese is melted.
