BACON AND SPINACH CRUSTLESS QUICHE
Hold the crust: this simple egg dish uses a sprinkle of Parmesan cheese instead of a crust.

Steps:
- Preheat the oven to 350 degrees F. Brush a 9-inch pie pan with the butter and sprinkle the grated Parmesan evenly on top. Put the pan on a rimmed baking sheet.
- Whisk the half-and-half, flour, cayenne, eggs, egg yolks, 1/2 teaspoon salt and a few grinds of pepper together in a large bowl. Spread the spinach and bacon out in the prepared pie pan. Pour the egg mixture over top and sprinkle with the cheese and chives.
- Bake until the quiche is just set in the center, 40 to 50 minutes. Transfer to a wire rack to cool and then slice into wedges. Serve with more baby spinach if using.

- Cook and crumble bacon
- Bake pie crust at 350 for five minutes (it will not be done)
- Beat eggs and half and half together; add salt and pepper
- Sprinkle crumbled bacon and shredded cheese on bottom of semi-cooked pie crust. You might save a little bacon to use as garnish for each piece. Pour egg mixture on top of eggs and bacon in crust. Bake for about 40 minutes until the center is no longer jiggly! Makes 8 servings.

- Preheat the oven to 350 degrees.
- In a large bowl, mix the flour, baking powder, and sugar using a fork.
- Cut in the shortening using a fork until the mixture looks like cornmeal.
- Add the cheese and then stir in the buttermilk all at once until the dough just comes together. Do not overmix.
- Use an ice cream scoop to drop the biscuits on a greased baking sheet.
- Bake for 12 to 15 minutes, or until biscuits are lightly browned.
