Granny Smith apples, fragrant cinnamon, & nutmeg are the centerpiece of this warm & delicious dessert recipe. It's perfect served with a scoop of vanilla ice cream.

Number Of Ingredients 7

1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup sugar
6 same-size Granny Smith apples
2 tablespoons cut into 6 teaspoon-size pieces butter
1 cup apple juice
6 sprigs fresh mint

Steps:

  • Preheat oven to 325 °F.
  • Combine cinnamon, nutmeg and sugar in a small bowl. Set aside.
  • Core apples, making sure not to puncture the bottom of the apples so that the juices will remain. Remove skin from 1/2-inch around top of apples at the opening. Fill each cavity with the cinnamon-sugar mixture. Top each apple with a teaspoon of butter. Place apples in casserole dish and pour apple juice around them. Cover pan with aluminum foil and bake for approximately 45 minutes to 1 hour. Remove from heat, garnish with fresh mint, and serve.

1 1/2 tablespoons unsalted butter
2 Fuji or Gala apples, peeled, halved, cored, and thinly sliced
Coarse salt
3/4 cup unsweetened apple juice
1 teaspoon fresh lemon juice
1/2 teaspoon ground cinnamon
Ground nutmeg

Steps:

  • In a large skillet, melt 1 tablespoon butter over medium-high. Add apples and pinch of salt. Cook, stirring occasionally, until apples are light gold, 4 to 5 minutes. Add apple juice, lemon juice, cinnamon, and pinch of nutmeg. Cook until liquid is reduced by half and apples are just tender, 3 to 5 minutes. Off heat, stir in 1/2 tablespoon butter.

When fall rolls around, I find I have a craving for my mom's stewed apples. She never followed a recipe, but would somehow always manage to whip up the most flavorful apples you ever tasted! In an effort to recreate my mom's stewed apples, I came up with this recipe. We would usually have this as a side dish with supper, replacing applesauce. However, it would also be delicious served as a dessert with vanilla ice cream or over gingerbread or pound cake with a little whipped cream. I hope you will enjoy it!

4 tablespoons butter
7 cups cooking apples (thinly sliced, approximately 6, I like Granny Smith)
1/2 cup sugar
1/2 cup brown sugar
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 cup water

Steps:

  • In a 10" skillet (w/lid) melt butter over medium heat; turn off heat.
  • Mix in sugar and brown sugar, cinnamon, nutmeg and add 1/2 cup water, stirring to combine.
  • Bring mixture to a boil and allow to boil until beginning to thicken.
  • Reduce heat to medium; stir in apple slices, turning to coat.
  • Cook over medium to medium high heat 4-5 minutes, stirring, allowing sauce to continue to thicken.
  • Reduce heat to low, cover apples and cook until tender, stirring occasionally, another 5-10 minutes, adding more water if necessary, until apples are tender (cooking time will depend on the thickness of your apple slices).
  • Sauce will thicken as it cools.

3/4 cup sugar, divided
3/4 teaspoon ground cinnamon

Steps:

  • Melt butter in a large cast-iron or other ovenproof skillet. Add apples and 1/2 cup sugar; stir to mix well. Cover and cook over low heat for 20 minutes or until apples are tender, stirring frequently. , Add cinnamon and remaining sugar. Cook and stir over medium-high heat 5-10 minutes longer. If desired, serve with ice cream.

3 apples, peeled, cored and chopped (see tip)
2-4 tbsp caster or light brown soft sugar (depending on the sweetness of the apples)
1 tbsp lemon juice
½ tsp ground cinnamon

Steps:

  • Put the apples, sugar, lemon juice and cinnamon in a small pan with 1 tbsp water. Cover and cook over a medium heat for 5-10 mins, or until the apples are tender when pierced with the tip of a knife.
  • If you prefer a smoother mixture, continue to cook for a further 5 mins, uncovered, stirring frequently to break down the apples into a compote.

3 tablespoons olive oil
1 large onion, chopped
2 granny smith apples, peeled, cored and chopped
8 fresh sage leaves
2 cups thick-cut white bread cubes, crusts removed
1 egg, beaten
2 tablespoons butter
salt and pepper
1/2-1 cup chicken broth, plus more if needed
1 (3 lb) pork loin roast, butterflied

Steps:

  • Preheat oven to 375°F
  • In a large skillet, heat the olive oil over medium-high heat. Add the onion, apples and sage. Saute until softened.
  • Remove from the heat and gently stir in the bread, egg, butter and salt and pepper. Add the chicken broth gradually until everything is moistened.
  • Let the stuffing mixture cool completely before putting it in the pork loin.
  • Spoon the stuffing down the pork, horizontally, in a line. Roll the pork over the stuffing, jelly roll style, ending with the seam down and fat side up.
  • Lightly score the fat, in a diamond pattern, with a sharp knife. Tightly tie the pork roast up with butcher's twine, season it with more salt and pepper, and transfer to a roasting pan.
  • Roast the pork in a preheated oven for about 90 minutes or until an instant-read thermometer registers 160°F Remove from the oven and let rest for 15 minutes before slicing. Garnish with apples and fresh herbs.

2 lbs pork tenderloin
1/4 cup all-purpose flour
1/4 cup vegetable oil
1 cup chopped onion
1 cup chopped celery
2 cups cubed potatoes (1/4-inch cubes)
1 cup thinly sliced carrot
1 cup thinly sliced zucchini
1 cup frozen niblet corn
1 cup frozen English peas
1 cup frozen green beans
3 (14 ounce) cans beef broth
1 (28 ounce) can diced tomatoes
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon dried sage
1/2 teaspoon salt
1/4 teaspoon ground black pepper

Steps:

  • Cut pork into 1/4" cubes. In a large resealable plastic bag, combine pork cubes and flour. Seal bag, and shake to coat pork.
  • In a large Dutch oven, heat oil over medium-high heat. Add pork, and cook 6-8 minutes, or until browned. Add onion and celery, and cook 5 minutes, stirring frequently.
  • Stir in potatoes and remaining ingredients; bring to a boil, reduce heat, and simmer 30 minutes or until vegetables are tender.
  • Can add additional beef broth or water if desired or needed.
