GARLIC MASHED POTATOES
Garlic mashed potatoes are a garlic-y potato side dish that your family will love.

Steps:
- In a medium saucepan, cook the potatoes in salted water until tender, about 15 minutes. Drain the potatoes and return them to the saucepan.
- Add the butter, sour cream and garlic. Mash the potatoes with a potato masher or the back of a fork until the ingredients are blended. Add the milk, 1 tablespoon at a time, until the potatoes are the desired consistency. Taste and add salt and pepper, if needed.
SMASHED POTATO PANCAKES
Loaded potato pancakes that are pan fried.

Steps:
- In a large Dutch oven, add the potatoes and cover with water. Bring to a boil over medium-high heat; then reduce heat, and simmer until tender about 10 to 12 minutes. Drain well and add to a large bowl.
- Mash the potatoes with the garlic and salt and pepper. Fold in 2 1/2 cups of the panko, the egg, cheese, bacon, onion, butter and the sour cream. Form the potato mixture into 3-inch patties. Put the remaining 1 cup of panko in a shallow dish and dredge the potato patties in the crumbs.
- In a large skillet, heat the oil over medium-high heat. Add the potato patties, and cook until brown and crisp, 3 to 4 minutes per side. Arrange on a serving platter and serve immediately.

These are a great alternative to traditional sweet potatoes for the holidays. I saw her make them on her Thanksgiving special and they are very easy.

- Preheat oven to 350°F.
- Bake the potatoes until tender, then peel and mash them.
- Stir in the brown sugar, orange juice, zest and nutmeg.
- In a separate bowl, toss the coconut with the sugar and cinnamon.
- Press mashed potatoes around each marshmallow, creating a 2 to 3-inch diameter ball.
- Roll the balls in the coconut mixture. Bake for 15 to 20 minutes. Watch carefully for the last few minutes of cooking; the expanding marshmallows can cause the potato balls to burst open.
LOADED MASHED POTATOES (PAULA DEEN)
I got this from her magazine and let me tell you that these are amazing!! They were made by a firefighting chef, Mike Wathen, where she visited in Alabama. Here are the adjustments I made: red potaotes, light sour cream, light cheddar cheese, and turkey bacon. I actually just fried up the bacon and then crumbled it. Hubby and kids were raving about how these were the best mashed potatoes they have ever had!

- In large stockpot, cook potatoes in enough salted water to cover until tender.
- Drain and return to stockpot.
- Add butter, garlic, and sourcream; beat with an electric mixer until smooth.
- Add a little milk, if needed.
- Stir in cheese, bacon, salt, and pepper. Serve immediately.

- Preheat oven to 350 degrees F.
- Bring a pot of water to the boil and add the hash browns. Cook for 5 minutes and drain. In a large bowl, mix together the cooked hash browns, mashed potato mix, butter, cream cheese, jack cheese, sour cream, garlic salt, salt and pepper. Stir in the boiling water. Place in a greased 2-quart casserole dish. Bake for 35 to 45 minutes. Sprinkle the onion rings over the casserole and bake for about 5 to 8 minutes longer until onions are golden brown.

- Preheat oven to 350 degrees F.
- Spread mashed potatoes evenly on bottom of casserole dish.
- Layer sour cream evenly over top.
- Sprinkle House Seasoning, to taste.
- Saute onion and bell pepper in butter; evenly layer over top of sour cream.
- Slice potatoes and layer over onions and bell peppers.
- Add butter.
- Sprinkle House seasoning.
- Finally top with cheese.
- Bake for 25 to 30 minutes.
- Remove from oven and crumble bacon over top.
- Cook's Note: Leftover mashed potatoes work wonderfully in this recipe.
- House Seasoning:
- 1 cup salt
- 1/4 cup black pepper
- 1/4 cup garlic powder
- Mix ingredients together and store in an airtight container for up to 6 months.

I watched a video on the Food Network by Paula Deen for this recipe. But when I searched the recipes for this it was different than what she did in the video. So here is my guess at the amounts she used in the video.

- Preheat oven to 350 degrees F.
- Beef Layer:.
- In a large skillet over medium-high heat, saute onion in 2 tablespoons butter. Add beef and cook until browned, add the gravy to heat up. Season with salt and pepper, to taste. Set aside.
- Biscuit Layer:.
- Combine biscuit mix and 1 1/2 cups of milk. The mix should be thinner than that of normal biscuit mix but not runny.
- Spray a 9 by 9 by 2-inch pan (or any similar casserole dish) with cooking spray. Layer mashed potatoes halfway up the sides of the dish. Next, spread a layer of corn or mixed vegetables on top of the potatoes. Then add the layer of meat and gravy. Pour the biscuit mix over the meat. Melt 4 tablespoons of butter and drizzle over top. Bake for approximately 35 to 45 minutes or until top is golden brown. Let stand for a few minutes before serving.
