RAINBOW RICE PILAF
Steps:
- Heat the oil in a large deep-sided skillet with a lid over medium-high heat. Add the onions, celery and pepper and cook, stirring occasionally, until they are just beginning to soften, about 3 minutes. Add the rice and orzo and cook, stirring constantly, until the orzo begins to brown, 3 to 5 minutes. Add the garlic, oregano, thyme, 1/2 teaspoon salt and 1/4 teaspoon pepper and cook, stirring occasionally, until the garlic is fragrant, about 2 minutes.
- Stir in the vegetable broth, bring to a simmer and then lower heat and cook, covered, until the liquid is absorbed and the rice is tender, about 15 minutes. Remove from the heat and let sit, covered, for about 10 minutes. Fluff the rice with a fork and transfer to a serving dish. Top with the cranberries, almonds and parsley. Serve warm.

- Toast 1/2 cup broken spaghetti in a saucepan with butter, 2 minutes. Add 1/2 cup chopped onion and cook 1 minute. Add 1 cup basmati rice and a pinch each of allspice and salt; cook, stirring, 2 minutes. Add 2 cups chicken broth; cover and simmer, 15 minutes. Cook 1/2 cup each sliced almonds and dates in butter, then stir into the rice. Season with salt and top with chopped parsley.

Steps:
- Heat the butter in a heavy saucepan and add the onion. Cook, stirring, until the onion is wilted. Add the rice and bulgur and cook, stirring briefly, without browning, until grains of rice are covered with butter.
- Add the broth, currants, allspice, salt and pepper. Stir. Cover closely and cook the mixture over low heat until the liquid is absorbed, about 17 minutes.
- Top each serving with a spoonful of yogurt and a small sprinkling of toasted pine nuts or almonds.

HERBED BROWN RICE PILAF

Steps:
- Melt the butter in a 2-quart saucepan over medium heat. Add the shallot and saute until tender. Add the rice and stir until the rice is glossy and coated with the butter. Season with salt and pepper.
- Add the stock, garlic and thyme. Cover with a tight fitting lid. Cook 40 minutes, turn off the heat and let sit for 10 minutes.
- Remove the thyme sprigs and garlic. Fluff with a fork and add parsley and green onions.
OVEN BAKED FANCY WILD RICE PILAF
This is a recipe I have made for ages...I got it out of a recipe book from the old Hudsons Department Store Recipe Book called "With Warmest Regards". A wonderful recipe to serve a lot of people for a special occasion.

- 1. Preheat oven to 375 degrees.
- 2. In a large mixing bowl, combine all ingredients.
- Transfer mixture to a 2 Quart casserole dish.
- Cover and bake for about 1 hour, until all liquid has been absorbed and rice is tender. Very easty to double as I do it all the time.

This started out from the joy of cooking. Over time, this is the end result. I use this whenever I need rice. The secret is exact measurments for water and rice.

Steps:
- Melt butter in a 2 qt. saucepan over high heat.
- Saute' onion and green pepper until tender crisp.
- Add rice; cook for 1 to 2 minutes, stirring frequently.
- Add water and chicken bouillon; bring to a boil.
- Stir once.
- Reduce heat to low.
- Stir once.
- Cover and cook for 15 minutes.
- Don't look!
- Remove from heat and uncover.
- Let stand for 5 minutes before serving.
- Serve hot.

- In a saute pan with oil or butter, toast the Orzo, Israeli Cous Cous or Vermicelli until golden brown all over. Transfer the pasta to the hotel pan or oven-proof dish.
- Add a little more oil and saute the onion and garlic. Add the rice and cook for another 3-5 minutes, stirring occasionally, or until well coated in oil with some grains of rice toasted. Transfer this batch to the hotel pan.
- At this point you can either 1) cover the hotel pan with a layer of parchment and tin foil for transport and place the broth in a separate container. Or 2) Add the cold/room temp broth, cover the hotel pan with parchment and foil and bake at 400 F for 50 minutes. Carefully lift a corner of the foil for a peak. Watch out for the steam. If it’s still pretty wet, cook for another 10 minutes.
