SESAME SHRIMP TOASTS

Sesame Shrimp Toasts image

Enjoy a Chinese dim sum favorite with your party guests. The shrimp paste is easy to make, and the deep frying doesn't require a big time commitment. Look for very thinly sliced white bread in the grocery store-if you can't find it, regular sliced bread can be thinned out with a quick pass of a rolling pin!

Provided by Food Network Kitchen

Categories     appetizer

Time 1h15m

Yield 40 toasts (12 to 15 servings)

Number Of Ingredients 17

2 tablespoons lemon juice
Vegetable oil, for frying
1 large egg white
1-inch piece ginger, roughly chopped
1 small clove garlic, roughly chopped
3 tablespoons soy sauce
1 tablespoon plus 1 teaspoon toasted sesame oil
1 tablespoon dry sherry
Kosher salt
1 1/2 teaspoons light brown sugar
Freshly ground black pepper
3/4 pound peeled and deveined large shrimp, tails removed
3 scallions, thinly sliced
1 small inner stalk celery, very finely chopped
6 whole water chestnuts, very finely chopped
2 teaspoons sesame seeds, plus more for garnish
10 slices very thinly sliced white sandwich bread

Steps:

  • Make the shrimp paste: Process the egg white, ginger, garlic, 1 tablespoon of the soy sauce, 1 tablespoon of the sesame oil, the sherry, 3/4 teaspoon salt, 1/2 teaspoon of the brown sugar and several grinds of pepper in a food processor until all the ginger and garlic are pureed. Add the shrimp, and pulse until a thick paste forms. Transfer to a medium bowl, and fold in 2/3 of the scallions, the celery, water chestnuts and sesame seeds. (The shrimp paste can be refrigerated for up to 1 day.)
  • Trim the crusts from the bread, and evenly divide the shrimp paste among the slices (about 2 heaping tablespoons each). Spread out into an even layer that completely covers the bread.
  • Make the dipping sauce: Whisk together the remaining 2 tablespoons soy sauce, 1 teaspoon sesame oil and 1 teaspoon brown sugar, the lemon juice and a large pinch of salt in a small bowl.
  • Fry the toasts: Line a baking sheet with paper towels. Fill a large, wide skillet with straight sides, with about 1 inch of vegetable oil. Attach a deep-fry thermometer to the skillet, and bring the oil to 375 degrees F over medium heat. Being careful of the hot oil splashing, put 5 to 6 shrimp toasts in the oil shrimp-side down and fry until the shrimp and the edges of the bread are golden brown, 2 to 3 minutes. Flip the pieces, and continue to fry until the bottoms are golden brown, about 1 minute more. (Adjust the heat as needed to maintain the temperature.) Transfer the shrimp toasts to the prepared baking sheet, and dab the tops with a paper towel to absorb some of the excess oil. Sprinkle the toasts all over with the remaining scallions and some sesame seeds and salt. Cut each toast into 4 triangles, and serve hot with the dipping sauce on the side.

Categories     Main Course

Time 30m

Number Of Ingredients 20

1 pound Shrimp (peeled and cleaned (use medium to large shrimp))
2 tablespoons Low Sodium Soy Sauce
2 large Garlic Cloves (grated or minced)
½ teaspoon Sesame Oil
½ teaspoon Ginger Powder (or grated fresh ginger if you have it on hand)
pinch of Crushed Red Pepper (or to taste)
1 tablespoon Oil (use a neutral (flavorless) oil with a high smoke point)
¼ cup Soy Sauce
2 tablespoons Canola Oil
2 tablespoons Green Onions (thinly sliced, plus more for garnish, if desired)
3 Garlic Cloves (grated or minced)
1 tablespoon Brown Sugar
1 tablespoon Rice Wine Vinegar
1 teaspoon Sesame Oil
1 teaspoon Chili Oil
½ teaspoon Ginger Powder
pinch of Crushed Red Pepper (optional)
16 ounce Noodles (we used linguine in this dish)
Salt for the Pasta Water (1-2 tablespoons should do it)
Sesame Seeds for garnish (optional)

Steps:

  • Add the soy sauce, garlic, sesame oil, ginger powder, and crushed red pepper, if using, to a large bowl. Stir the sauce with a fork to combine well, add the shrimp to the bowl and toss well. Refrigerate the shrimp if not using immediately.
  • To a medium bowl, add the soy sauce, canola oil, green onions, garlic, brown sugar, rice wine vinegar, sesame oil, chili oil, ginger powder and crushed red pepper, if using. Stir well to combine.
  • Bring a large pot of water to a boil; add the noodles and cook, according to package directions for al dente. Remember to salt the water. Drain the noodles and immediately return them to the pot. Take the pot off the heat. While the noodles are still steaming hot, add the sesame oil mixture. Toss to combine the ingredients well. Cover the pot to keep warm while you make the shrimp.
  • Heat the oil in a skillet over medium-high heat. Add the shrimp to the skillet and raise the heat. When the shrimp starts sizzling, lower the heat to medium to medium-high. Cook the shrimp, stirring and turning them frequently for 4-5 minutes or until cooked through.
  • Serve the sesame noodles and top with a generous serving of shrimp. Garnish with extra green onions and sesame seeds if desired.

SESAME SHRIMP NOODLES

Sesame Shrimp Noodles image

I found this recipe in a Cooking Light magazine. The original recipe called for you to bake this dish, but I like it just as is. Very flavorful and everyone raved over it. I have made this quite a few times now, and it keeps getting better and better because I know how spicy or salty to make it. This is a dish that you can fine tune and add to it whatever you want. (peanuts, water chestnuts, broccoli, etc.)

Time 45m

Yield 4-6 serving(s)

Number Of Ingredients 16

8 ounces uncooked spaghetti or 8 ounces linguine, broken in half
1 lb shrimp or 6 chicken thighs
1 tablespoon dark sesame oil
1 red bell pepper, sliced
1 orange bell pepper
8 ounces mushrooms, slice (or 16 ounces)
3 garlic cloves, minced
1/4 cup low sodium soy sauce
1 cup reduced-sodium fat-free chicken broth
1 tablespoon cornstarch
2 tablespoons sherry wine
1 tablespoon rice vinegar
1 teaspoon crushed red pepper flakes (we used around 1-1 1/2 tablespoons)
3/4 cup sliced green onion
2 tablespoons sesame seeds
all purpose seasoning (for your shrimp)

Steps:

  • Cook pasta.
  • While pasta cooks, in a skillet (deep enough to hold liquid and pasta later on) put a little olive oil and throw in your bell peppers and mushrooms. Cook this down to your liking, and set them aside on a plate.
  • Add some more olive oil to your skillet and throw your shrimp and garlic inches Season your shrimp how you like them, I like to add a little Tony's Chachere's creole seasoning but you can do a basic all purpose seasoning on them. After cooked, set this aside.
  • In the same pan add the soy sauce, broth, red peppers, mushrooms, cornstarch (make sure you mix the cornstarch and sherry together with a fork in a separate bowl before adding) Keep stirring till mixture starts to thicken and bubble. I added an extra half tablespoon because I wanted my sauce a little thicker. Keep stirring constantly to make sure it doesn't burn.
  • Once thickened add vinegar and crushed red pepper.
  • Take off heat, add pasta, shrimp, sesame seeds. Toss well to combine all ingredients.

Categories     appetizer

Time 50m

Yield 12 toasts

Number Of Ingredients 14

6 ounces uncooked shrimp, shelled and deveined
1 large egg white
2 tablespoons chopped green onion
2 teaspoons cornstarch
1 teaspoon Chinese rice wine or dry sherry
1 teaspoon minced ginger
1/2 teaspoon salt
1/8 teaspoon sesame oil
1/8 teaspoon ground white pepper
3 slices day-old white sandwich bread
1 large egg, lightly beaten
3 sheets Japanese seaweed (Nori)
1 tablespoon black sesame seeds
Vegetable oil for deep-frying

Steps:

  • Make the shrimp paste: Combine the shrimp, egg white, green onion, cornstarch, rice wine, ginger, salt, sesame oil and pepper in the workbowl of a food processor. Process until the mixture is smooth, stopping once or twice to scrape down the sides.
  • Trim the crusts from the bread. Brush 1 side of 1 of the bread slices with the beaten egg and lightly press the nori sheet over the egg. Place the bread on a cutting board, nori side down, and trim any of the nori that extends past the edge of the bread. Spread about 1/3 of the shrimp paste over the bare side of the bread, mounding it slightly in the center. Sprinkle 1/3 of the black sesame seeds over the shrimp paste. With a chef's knife, cut each slice into 4 triangles. Repeat with the remaining ingredients.
  • Pour enough oil into a wok or a high-sided frying pan to come to a depth of 2 inches and heat over medium heat to 350 degrees F.
  • Slide 3 or 4 toasts, shrimp side down, into the oil. Cook for about 1 minute, turn over and continue cooking until edges are golden brown, about 1 minute longer. Scoop the toasts from the oil with a slotted spoon and drain on paper towels. Repeat with remaining shrimp toasts. Serve warm.
