Tapa y calienta a fuego alto hasta que suelten el hervor, luego reduce el fuego a medio-bajo, y cocina hasta que estén suaves, pero no deshaciéndose, aproximadamente 3 horas.
- Mientras, hierve los garbanzos durante 1 hora y 30 minutos, hasta que se suavicen. Cuece los jitomates y el chile ancho en agua hirviendo. Licua jitomates y chile ancho, cuela y reserva.
- Calienta una cacerola a fuego medio. Agrega el tocino y fríe, moviendo de vez en cuando, hasta que se haya dorado. Retira de la cacerola y reserva.
- Fríe en la grasa del tocino el ajo, cebolla y chile verde, hasta que se vean transparentes. Agrega el licuado de jitomate y chile y cocina durante unos minutos para que se integren los sabores.
