Orecchiette with Broccolini and Sausage image

Provided by Molly Yeh

Categories     main-dish

Time 30m

Yield 4 to 6 serving

Number Of Ingredients 9

Kosher salt
8 ounces orecchiette
1 pound pork sausage, casings removed
2 cloves garlic, minced
8 ounces broccolini, chopped into 1/2-inch pieces
1 1/2 cups freshly grated Parmesan, plus more for serving
Zest and juice of 1 lemon
Crushed red pepper flakes
Freshly ground black pepper

Steps:

  • Bring a pot of water to a boil; add a generous amount of salt. Add the orecchiette and cook to al dente (take 3 minutes off of the time on the box; it'll finish cooking later). Reserve 1/2 cup of the pasta water, then drain.
  • Heat a large skillet over medium-high heat. Add the sausage and cook, breaking it up with a wooden spoon, until brown, about 7 minutes. Use a slotted spoon to transfer the sausage to a plate, keeping the fat in the skillet. Add the garlic and cook for 30 seconds. Add the broccolini and cook until crisp-tender, about 7 minutes. Reduce the heat to medium low. Add the pasta and sausage to the skillet along with the Parmesan, lemon zest and juice, a couple of pinches of crushed red pepper and a bunch of turns of black pepper. Stir in a few tablespoons of the pasta water and continue to cook, stirring, until glossy, adding more pasta water if needed. Taste and adjust the seasoning as desired. Sprinkle with more Parmesan before serving.

Time 25m

Number Of Ingredients 11

1 pound gemelli or other tube pasta such as rigatoni or penne
2 tablespoons olive oil
1 pound Italian sausage, casings removed
1 bunch broccolini or broccoli rabe
1 teaspoon kosher salt
Fresh black pepper to taste
2 teaspoons chopped garlic
1 tablespoon tomato paste
1/4 cup reserved pasta water
1/4 cup chicken or beef broth
1/2 cup grated parmesan cheese

Steps:

  • Bring a large pot of water to a boil for the broccolini. Add about a tablespoon of salt to the water then add the broccolini and cook for 3-4 minutes until bright green and tender but still crisp.
  • Remove the cooked broccolini with tongs and place in a colander. Rinse with cold water to stop the cooking process and then return the pot of water to a boil and cook the pasta according to the package directions.
  • Before draining the pasta, ladle out about 1/2 cup of the pasta water and set aside. Drain the pasta, do not rinse with cold water, and set aside.
  • Add the olive oil to a 13 or 14 inch skillet then add the sausage to brown. Break the sausage up with a wooden spoon until it's browned cooked through.
  • Drain some of the drippings from the pan if necessary, then add the salt, pepper, garlic and tomato paste.
  • Pour in the beef broth and 1/4 cup of the pasta water and bring to a boil. Let the sauce reduce for 3 minutes, then add the cooked pasta and broccolini and toss to combine.
  • Add the parmesan cheese and taste for seasonings. Add more salt and pepper and parmesan cheese if needed, and more pasta water if the pasta is too dry.
  • Serve with crushed red pepper flakes and more parmesan cheese if desired.

PASTA WITH SAUSAGE AND BROCCOLINI

Pasta With Sausage and Broccolini image

This is a really flavorful, easy to make pasta dish. The broccolini is a hybrid vegetable of broccoli and Chinese Kale. It is more tender and sweet than broccoli and less fibrous. Most of it is edible from the stalks to the florets. It really makes the dish better than the usual broccoli or broccoli rabe.

PASTA WITH SAUSAGE AND BROCCOLI RABE

Pasta with Sausage and Broccoli Rabe image

Tips: Cook the broccoli rabe the night before and you'll be way ahead. Whatever you do, read the recipe through start to finish before you get started. It's a little out of the ordinary but relatively painless. Cook off the garlic and sausage up to one hour ahead and let it sit in the pan until you're ready to finish the dish.

Provided by Food Network

Categories     main-dish

Time 50m

Yield 8 servings

Number Of Ingredients 8

1 pound broccoli rabe, trimmed of damaged leaves
1 pound orecchiette or other pasta noodle
2 tablespoons water
4 to 5 cloves garlic, thinly sliced
1/2 pound Italian sausage, cut into quarter-inch slices
Salt
1 cup coarse, seasoned bread crumbs, toasted, optional garnish
Pecorino Romano or Parmesan, optional garnish

Steps:

  • Cut the broccoli rabe into 3 to 4 inch pieces, discarding the stems. In a large pot of rapidly boiling water, blanch the broccoli rabe until tender and cooked through, about 5 to 6 minutes. Before you drain broccoli rabe, reserve 1 cup of cooking liquid. Drain and rinse the broccoli rabe with cold water until it has cooled off. Spread it out on a towel to finish draining.
  • Meanwhile, cook the pasta in a large pot of boiling water according to package directions until al dente.
  • While the pasta is cooking, place 2 tablespoons of water into a cold skillet with garlic and sausage and then turn heat to medium-low. Cook, stirring occasionally, until garlic is golden and sausage is cooked through, about 5 to 7 minutes. Pour reserved broccoli water into pan with sausage.
  • When the pasta is cooked, drain it and place back in pot you cooked it in and season with salt. Pour sausage sauce over pasta and stir in cooked broccoli rabe. Taste and adjust seasonings. Serve immediately.
  • If the Queen's coming to dinner: Garnish with fresh bread crumbs and/or freshly grated pecorino Romano or parmesan cheese.
