Steps:
- Preheat the oven to 350 degrees F.
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet over medium heat, heat the oil, and when it's hot, add the mushrooms. Cook the mushrooms for six to seven minutes or until they are tender and lightly browned.
- Add the salt and pepper and continue cooking until any liquid evaporates. Next, add the Marsala, and continue cooking until all of the liquid has evaporated. (This usually takes around two to three minutes.)
- Add in the butter and stir until melted. Add the flour and stir, and cook for one to two minutes, just until it starts to turn light brown. Slowly add the chicken stock, constantly stirring while scraping the bottom of the pan as you add the stock. Reduce the heat to a simmer and stir until the sauce thickens, which will take another minute or two.
- Add the drained pasta to the sauce and mix thoroughly. Then stir in three-quarters of a cup of the Parmesan cheese, thee cubed mozzarella, fresh parsley, and cooked chicken. Mix well to combine all ingredients.
- Spray a 7x11 inch, oven-safe casserole dish with non-stick cooking spray and add the mixture. Top with the remaining parmesan cheese. Bake 25-30 minutes at 350 degrees F. or until the topping is lightly browned and the parmesan cheese has melted.
- Serve immediately.

SPAGHETTINI WITH PEPPERS AND SAND
I've served this at several occasions and it has always been a hit. (It's very similar to the "pasta with sand" recipe elsewhere on Recipezaar.) Recipe is from Jeff Smith's "Frugal Gourmet Cooks Italian."

Steps:
- Place a large pot of water on to boil for the pasta.
- Remove core and seeds from pepper and slice thinly--julienne style.
- Heat a large frying pan and add 2 tablespoons of the oil.
- Add the pepper and saute over high heat for two minutes.
- The peppers should remain a little crisp.
- Remove from the pan and set aside uncovered.
- Heat the frying pan again and add the remaining oil and the garlic.
- Saute just a few seconds.
- Add the bread crumbs and red pepper flakes.
- Gently toast the mixture, stirring often, until very lighly browned.
- Boil the pasta until al dente and drain well.
- Return to the pot and toss with the red bell pepper and the bread crumbs.
- Salt and pepper to taste if desired.
- NOTE ON DOUBLING: I have had some difficulty doubling this recipe easily.
- It works, but you need to tweak the preparation a bit.
- First, I'd recommend toasting the breadcrumb mixture in two batches (1/4 cup at a time).
- It can also be difficult to toss the pasta evenly, so I'd start with a 1/3 of the pasta, add a third of the breadcrumb mixture and then add the second third and so forth.
- You may need to add a little extra olive oil as well.

CREAMY PEPPER PASTA WITH STEAK STRIPS
This creamy pepper pasta with steak strips is the ultimate comfort food recipe. Tender strips of beef cooked together with mushroom, red onion, cream and peppercorns to make a delicious sauce. It is so easy to make and comes together in under 20 minutes. You can use a cheaper cut of beef, such as flank or skirt steak, making it the perfect cost effective mid week meal. Plus it is so simple to adapt if you want to swap out the mushrooms and add in some bell peppers or broccoli.

PASTA WITH CREAMY CRUSHED WALNUT SAUCE - 101 COOKBOOKS
From 101cookbooks.com
4.3/5 (43)Total Time 20 minsCategory Dinner, PastaCalories 417 per serving
- While you’re bringing a large pot of water to a boil, crush the walnuts and garlic together in a mortar and pestle. Alternately, you can pulse with a hand blender, but leave a bit of texture & chunkiness.
- Cook the pasta per package instructions in salted water. Once the pasta is in the pot, and the pasta water is nice and starchy, reserve 2 cups of the pasta water. Whisk a cup of the pasta water into the walnut mixture, adding more until your sauce is thick as heavy cream. You’ll likely need about 1 3/4 cups, maybe a splash more. Stir in half the cheese, a couple tablespoons of lemon juice, and more freshly ground black pepper than you think you’d want. Taste and add a bit more salt to the sauce if needed. If it’s all in balance, this should taste Awesome. Capital A awesome.
- Transfer the cooked pasta to a large bowl and toss with the walnut sauce. Sprinkle with lemon zest and top with some fresh herbs if you have them (thyme is nice here), breadcrumbs, and a drizzle of chili oil.

- Before you start cooking your dish I'd suggest placing the mussels in a bowl with ice water and let them soak for about 20 minutes, before scrubbing them. This will let the sand from the mussels fall to the bottom of the bowl.
- In a deep pan or a dutch oven, saute chopped onions with olive oil, minced garlic, chili paper flakes, and fresh thyme, for about 5 minutes.
- Cook your Bucatini according to instructions. *(see notes below on how to salt your pasta water).
