Steps:
- In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
- Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
- Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
- Cook's Note: Use pasta water if the pasta was made fresh.
- Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

Steps:
- Add the broccoli florets to a large pot of boiling, salted water and cook until al dente, 3 to 4 minutes. Prepare a bowl of ice water. Remove the florets from the pot, reserving the cooking water. Stop the cooking process by shocking them in the ice water. Remove the florets and pat dry.
- Add the spaghetti in the same pot of water. Cook until al dente, about 8 minutes.
- Meanwhile, add the oil, sliced broccoli stems, red pepper flakes and garlic to a large skillet over medium-low heat and sprinkle with salt. Cook until the garlic is lightly toasted and fragrant, about 8 minutes. Add the florets, toss to coat and warm through.
- Drain the pasta in a colander set in the sink, and add the pasta to the skillet. Increase the heat to medium-high. Toss the ingredients and adjust the seasoning if needed. Transfer the pasta to a large serving bowl. Squeeze the lemon juice over the top and sprinkle with the Parmigiano-Reggiano. Serve.

PASTA WITH BROCCOLI AND GARLIC
This came from the Washington Post on Nov. 3, 2010: Simple pasta dishes with vegetables seem right for busier pre-holiday weeknight meals. This dish is a good example. Chopped garlic is slow-cooked in olive oil with crushed red pepper flakes while the pasta cooks. In the last few minutes, chopped broccoli is added to the garlic mixture and steamed with white wine. The broccoli is cut small, so it cooks in just a few minutes. For this dish, I like to use conchiglie pasta; its shell shape allows the individual pieces of pasta to capture and hold bits of the garlic and broccoli.

Steps:
- Cook and drain the pasta according to package directions.
- Meanwhile, heat the oil in a 10-inch skillet or saute pan over medium heat. Add the garlic, crushed red pepper flakes and salt to taste; reduce the heat to low. Cook the garlic for 13 to 15 minutes, adjusting the heat so the garlic softens without browning.
- Add the broccoli pieces and the white wine; increase the heat to medium-high. As soon as the wine starts to bubble, cover the skillet or pan. Steam the broccoli for 3 to 4 minutes, until it is bright green and just tender. Remove from the heat immediately.
- Toss together the garlic-broccoli mixture with the drained pasta and the parsley. Serve hot or at room temperature. Pass Parmesan cheese at the table, if desired.

PASTA AND BROCCOLI
This is sooooooo easy but yummy. Not too much to say about it except that it tastes good. You can add some cooked chicken and it will make a whole meal or you can use it as a side-dish. Either way it is tasty.

SICILIAN PASTA AND BROCCOLI
This is a simple dish my grandmother made for me when I was a child. Now I make it for my daughter, Xea, and she loves it. As the broccoli takes on a toasty brown color, it develops a delicious nutty flavor that even picky kids will like.

Steps:
- Heat the water for your pasta while you prepare the broccoli.
- In a shallow, 10-inch saute pot, heat the 1 cup olive oil over medium-high heat (see Cook's Note). Add the broccoli to the oil and season it with salt. Saute the broccoli for about 4 minutes, or until it takes on a toasty color. The broccoli will absorb a lot of the oil, so if you find your pot getting dry, just add a little more oil to it. Throw in the garlic and cook for about another minute, until it's slightly brown. Don't burn the garlic! Take the broccoli off the heat and set it aside.
- Prepare the penne according to the package directions. Drain the pasta and toss it in the pot with the broccoli, garlic, and olive oil. If the mixture seems dry, add a little more oil.
- Toss in the Parmigiano-Reggiano cheese, stir, and garnish with the parsley.
PASTA WITH BROCCOLI, ROASTED PEPPERS, AND OLIVES
Simple enough, and a dynamite flavor combination! The lemon juice really pulls everything together. Adapted from" Field of Greens", by Annie Somerville. You can use fresh roasted peppers , but I usually use good quality bottled roasted peppers from the pantry. Omit the optional cheese to make it vegan.

- Preheat oven to 400 degrees. Toss the broccoli with the 2 tablespoons olive oil plus salt and pepper to taste. Place the broccoli in the oven, and roast 25 to 30 minutes. The broccoli should be starting to brown and be easily pierced with a fork when it is ready. When done, set aside to cool a bit.
- Start the water boiling for the pasta shortly after the broccoli goes in the oven. Plan to add the pasta to the water after the broccoli has been roasting for 15 to 20 minutes.
- Heat the 1/4 cup extra virgin olive oil in a small sauté pan on medium low heat. When it starts to get warm after a few minutes, add the garlic. Cook for one to two minutes, letting the garlic briefly sizzle a bit and release that garlicky aroma. You want the garlic to just start to turn golden, but remove before it gets brown. When the garlic is done, remove the pan from the heat.
- Drain the pasta when cooked to your liking, following package instructions. Toss immediately with the garlic olive oil mixture, followed by the broccoli. Stir in the cheese, with a bit more olive oil if you like. Add salt and pepper to taste, and parsley if you are using it. Serve and enjoy!
