12 ounces uncooked medium pasta shells
1 medium sweet red pepper, julienned
2 garlic cloves, minced
2 tablespoons butter
2 tablespoons olive oil
1/2 cup minced fresh parsley
1/2 cup 2% milk
1/3 cup chopped fresh tarragon, basil, thyme or oregano or 1 tablespoon dried tarragon, basil, thyme or oregano
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, saute the red pepper and garlic in butter and oil until tender. Drain pasta; add to pepper mixture. Add the remaining ingredients; toss to combine. Serve immediately.

1 head of broccoli, chopped into florets
1 garlic clove, unpeeled
2 tbsp olive oil
250g pasta shells
½ small pack parsley
½ small pack basil
30g toasted pine nuts
½ lemon, zested and juiced
30g parmesan (or vegetarian alternative), plus extra to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Toss the broccoli and garlic in 1 tbsp of the olive oil on a roasting tray and roast in the oven for 10-12 mins, until softened.
  • Tip the pasta shells into a pan of boiling, salted water. Cook according to packet instructions and drain. Tip the parsley, basil, pine nuts, lemon juice and parmesan into a blender. Once the broccoli is done, set aside a few of the smaller pieces. Squeeze the garlic from its skin, add to the blender along with the rest of the broccoli, pulse to a pesto and season well.
  • Toss the pasta with the pesto. Add the reserved broccoli florets, split between two bowls and top with a little extra parmesan, the lemon zest and a good grinding of black pepper, if you like.

2 tablespoons extra virgin olive oil
1 medium onion, (chopped)
2 medium garlic cloves, (minced)
1/4 teaspoon crushed red pepper
Two 28-ounce cans chopped tomatoes (with juices)
1 cup chopped fresh basil
Two 15-ounce containers ricotta cheese
14 ounces crumbled feta cheese, (divided)
1/2 cup chopped fresh basil
2 bunches fresh chives, (chopped)
2 large eggs
12 ounces jumbo pasta shells

Steps:

  • In a large saucepan over medium heat, heat the oil, and add the onion; sauté 5 minutes. Add the garlic and sauté until the onion is tender, about 5 minutes. Add the crushed red pepper and sauté 30 seconds. Add the tomatoes. Simmer until the sauce is reduced to 5 cups, stirring occasionally, about 1 hour. Season to taste with salt and pepper. Remove from heat and mix in the fresh basil.
  • In a medium bowl, combine the ricotta, 1 1/3 cups of the feta cheese, basil and chives. Season to taste with salt and pepper. Stir in the eggs.
  • Cook the shells in large pot of boiling salted water until just tender but still firm to bite. Drain. Rinse with cold water until cool. Drain thoroughly.
  • Preheat oven to 350 degrees F.
  • Spread 3/4 cup of sauce in the bottom of each of two 13×9-inch glass baking dishes. Fill 30 shells and divide between the dishes. Top with the remaining sauce and sprinkle with remaining feta.
  • Bake until the shells are heated through, about 40 minutes. Garnish with additional basil leaves.

1 jar (25.5 oz) Muir Glen™ organic chunky tomato & herb pasta sauce
1/4 cup water
1 container (8 oz) chive and onion cream cheese spread
1 1/2 cups shredded Italian cheese blend (6 oz)
1/2 cup grated Parmesan cheese
1 egg
1 to 2 tablespoons chopped fresh parsley, if desired

Steps:

  • Heat oven to 350°F. Cook and drain pasta shells as directed on package.
  • In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Cool slightly, about 5 minutes.
  • In large bowl, mix pasta sauce and water. Pour 1 cup of the pasta sauce mixture in bottom of ungreased 13x9-inch (3-quart) glass baking dish. In medium bowl, mix cheese spread, 1 cup of the Italian cheese, the Parmesan cheese, egg and cooked beef. Spoon heaping tablespoon mixture into each shell. Arrange stuffed shells over sauce in baking dish. Pour remaining sauce over top, covering shells completely. Cover with foil.

1/2 cup onion (finely chopped)

3 to 4 tablespoons low-sodium chicken broth
2 teaspoons balsamic vinegar
1/4 cup parsley (finely chopped)
Salt and freshly ground black pepper

Steps:

  • Bring a large pot of salted water to a boil for the pasta.
  • Heat the olive oil in a frying pan over medium heat. Add the onion and sauté until soft and translucent, 4 to 5 minutes.
  • Add the garlic and butter and continue cooking, stirring constantly until barely golden, 1 to 2 minutes longer.
  • Stir in the chicken broth and balsamic vinegar.

2 medium tomatoes, chopped
1 medium cucumber, chopped
1/2 cup green onion, chopped

1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 (8 ounce) bottle Italian salad dressing

Steps:

  • Gradually add pasta shells to 4 quarts rapidly boiling water. If desired, add salt. Boil 8 to 10 minutes, or until tender, stirring frequently. Drain and rinse with cold water.
  • In large bowl combine pasta shells and all other ingredients and mix well. Cover and chill thoroughly.
