Stir ham, onion and bell pepper into pasta with a rich sour cream-and-chive dressing.

1/3 cup mayonnaise
1/4 cup chopped fresh flat-leaf parsley
3 tablespoons sour cream
2 tablespoons finely chopped chives
1 1/2 tablespoons fresh lemon juice
8 ounces dried elbow macaroni
1 cup diced ham
1/4 cup finely chopped red onion
2 bell peppers, preferably 1 red and 1 yellow, chopped

Steps:

  • Bring a large pot of salted water to a boil.
  • Whisk together the mayonnaise, parsley, sour cream, chives, lemon juice, 1/2 teaspoon salt and a few grinds of pepper in a large bowl.
  • Add the pasta to the boiling water and cook according to the package directions. Drain and rinse under cold water to cool; add to the bowl with the dressing.
  • Add the ham, onion and bell peppers to the bowl and toss to combine. Season with salt and pepper. The pasta salad is best if served right away.

¼ cup sweet pickle relish
1 tablespoon milk, or more to taste

1 (16 ounce) package farfalle (bow-tie) pasta
8 ounces cooked ham, cut into 1-inch cubes
8 ounces Cheddar cheese, cut into 1-inch cubes
1 cup frozen peas, thawed
½ cup minced onion
1 stalk celery, thinly sliced
2 tablespoons diced pimento

Steps:

  • Whisk mayonnaise, pickle relish, and milk in a bowl until combined; season with salt and black pepper. Chill in refrigerator while preparing remaining ingredients.
  • Bring a large pot of lightly salted water to a boil. Cook bow-tie pasta at a boil, stirring occasionally, until cooked through yet firm to the bite, about 12 minutes; drain and transfer to a large bowl.

0.5 (16 ounce) box of salad shell pasta
2 (5 ounce) cans ham
4 large hard-boiled eggs
1 medium onion
3 tablespoons sweet pickle relish
3/4 cup mayonnaise
season salt

Steps:

  • Cook pasta according to package directions.
  • While pasta is cooking, peel and dice boiled egg and onion. Drain cans of ham and place in a bowl. Using a fork, shred the ham.
  • Once pasta is cooked, drain and transfer to a large bowl. Add egg, onion, pickle relish, and mayonnaise. Stir. If salad is too dry, add more mayonnaise.
  • Add season salt to taste. Stir.
  • Serve warm with Club Crackers or cover and chill several hours in the refrigerator and serve cold (preferred).

In summer, however, my husband doesn't care for hot meals, so I make it as a main dish. We're recent city transplants with two young children, ages 6 and 3.

2 tablespoons milk
1/4 teaspoon salt
Additional Parmesan cheese

8 oz pasta of choice
4 Tbsp white wine vinegar, i have used red also
2 Tbsp dijon mustard
2/3 c extra virgin olive oil
2/3 c sour cream
1/2 c red onion, minced
6 oz cooked ham, diced small
3/4 c frozen baby peas, thawed
2 ribs celery, diced
1/2 c cheddar cheese, shredded
2 hard boiled eggs, chopped
2 Tbsp fresh dill, chopped..i have used dried dill
2 Tbsp milk
2 tsp salt
pepper to taste

Steps:

  • 1. Cook pasta according to package instructions. Drain well and let cool slightly. Transfer to a large bowl.
  • 2. In a small bowl, combine the vinegar and mustard. Slowly drizzle in the olive oil while whisking.
  • 3. Whisk in the sour cream and season with 2 teaspoons salt and pepper, to taste.
  • 4. Add the onion, ham, peas, celery, cheese, eggs and dill to the pasta and mix. Add in the dressing and stir to coat the pasta. Season with more salt and pepper as desired. ** I have used Turkey, Tuna, Salami, Pepperoni to this before..all are delicious!

1 cup feta cheese (crumbled)
1/2 green bell pepper (diced)
3 green onions (thinly sliced)

1 stalk celery (diced)
1/2 red onion (diced)
1 cup mayonnaise
1 tbsp white wine vinegar (or apple cider vinegar)
1 tbsp olive oil
1 tsp seasoning salt
1 cup broccoli (diced)

Steps:

  • Cook the pasta according to package directions to al dente. Rinse with cold water and drain well. Place in a large bowl.
  • Add the olive oil and seasoning salt to the pasta. Toss well and refrigerate. Allow it to cool completely.
  • Dice the bell pepper, celery, broccoli and red onion. Peel and dice the carrot. Slice the green onions. Mix the vegetables into the pasta.
  • Dice the ham, crumble the feta cheese. Add to pasta also.

1 cup boiled shrimp, cold (can substitute cooked ham)

1 tablespoon minced carrot

Steps:

1 1/2 cups Cooked Ham, cubed
1 1/2 cups Gouda Cheese, cubed
1/2 cup Spring Onions, chopped
1 Red Bell Pepper, chopped
3 TB Mayonnaise
2 TB Olive Oil, extra virgin
1 TB Lemon Juice, freshly squeezed
1/2 t Salt
1/4 t Black Pepper

Steps:

  • SALAD: Combine the Pasta, Ham, Cheese, Spring Onions and red Bell Pepper in a large mixing bowl
  • DRESSING: Whisk together the Mayonnaise, Oil, Lemon Juice, Salt and Pepper - pour over the Pasta mixture and stir through - cover and chill for at least 2 hours

2 cups broccoli florets
1 (10.75 ounce) can reduced-fat condensed broccoli cheese soup
1 cup milk
1 (4.5 ounce) can mushrooms
¼ cup chopped onion
1 tablespoon spicy brown mustard
salt and ground black pepper to taste
1 ½ cups diced cooked ham

Steps:

  • Bring a large pot of lightly salted water to a boil; add shell pasta and cook, stirring occasionally, until tender yet firm to the bite, about 9 minutes; drain.
  • Combine broccoli florets, broccoli soup, milk, mushrooms with liquid, onion, mustard, salt, and pepper together in a large skillet; bring to a boil. Reduce heat to low and cook, stirring occasionally, until broccoli is tender, about 5 minutes.
  • Stir pasta and ham into broccoli mixture and cook, stirring occasionally, until hot and bubbling, 5 to 7 minutes more.

There isn't any reason you couldn't add other favorite salad ingredients...small grape tomatoes, bell peppers, red onion, etc. Or...How about cubed grilled chicken and pineapple tibbits? The variations are endless...so please leave your suggestions...I love salads and variety.

1 3/4 cups farfalle pasta
1/2 cup mayonnaise
1/2 cup sour cream
2 tablespoons cider vinegar
1 1/2 tablespoons prepared dijon-style mustard
1 teaspoon white sugar
1/2 teaspoon ground black pepper
1/4 teaspoon dried dill weed
1/4 teaspoon salt
2 cups green seedless grapes, halved
2 cups diced ham
1/2 cup chopped green onion
1 1/2 cups diced cheddar cheese

Steps:

  • Cook pasta in a large pot of boiling water until al dente. Drain, and rinse in cold water.
  • In a small bowl, mix together mayonnaise, sour cream, cider vinegar, mustard, sugar, black pepper, dill weed, and salt.
  • In a large bowl, combine pasta, grapes, ham, green onions, and cheese. Toss with dressing. Cover, and chill overnight or for at least 6 hours.

1/4 teaspoon salt
1/8 teaspoon pepper
1/2 lb cooked ham, cut in 1/2-inch cubes (2 c.)
1 cucumber, peeled,halved lengthwise and sliced
1 cup frozen peas, thawed and drained
1/4 cup finely chopped onion
1 1/2 cups cooked and drained elbow macaroni

Steps:

  • In large bowl, stir together mayonnaise, salt and pepper.
  • Add ham, cooked macaroni, cucumber, peas and onion.
  • Toss to coat well.
  • Cover and refrigerate until well chilled (several hours).

15 small sweet pickles, chopped, juice reserved
1 cup cherry tomatoes, halved
1 cup mayonnaise
½ cup sour cream
2 ½ teaspoons beef bouillon granules
1 tablespoon white vinegar
½ teaspoon salt
¼ teaspoon ground black pepper
2 cloves garlic, minced

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • In a large bowl, mix together the drained pasta, ham, peppers, onion, pickles and tomatoes.
  • In a small bowl, whisk together the mayonnaise, sour cream, beef bouillon granules, vinegar, salt, pepper, garlic and 1/2 cup of reserved pickle juice. Fold into the salad and toss gently until evenly coated. Chill overnight to allow the flavors to blend. Serve near room temperature.
