CREAMY BASIL & TOMATO PASTA
This dish was inspired by combining several different recipes. (Note - we don't like a lot of extra sauce- just enough to cover the pasta - so if you like a lot of sauce, you may want to make a little more).

Steps:
- Heat teaspoon of oil over medium-high heat.
- Add onion and sauté until starting to brown.
- Add garlic and sun-dried tomatoes; sauté 3 more minutes.
- Add tomatoes, pepper, and other herbs. Stir well, reduce heat, cover and simmer about 20 minutes.
- Meanwhile, cook pasta according to directions.
- Add cream cheese, milk, and parmesan to tomato pot and melt over low heat until cheeses are incorporated.
- Add chicken and drained pasta, and mix until blended.

CREAMY TOMATO BASIL PASTA
Quick and easy pasta that packs so much delicious flavor and is ready in under 30 minutes! Made with fresh tomatoes and basil, heavy cream, and parmesan cheese, creating an insanely creamy and flavorful sauce that you'll absolutely love.

- Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package directions. Reserve a cup of pasta water before draining. While the pasta cooks, make the sauce.
- Add the butter, onion and red pepper flakes (if using) to a large skillet over medium-hight heat and cook for about 5-7 minutes until the onion is translucent. Add the tomatoes and garlic and cook for another 2-3 minutes, or until the tomatoes are soft.
- Reduce heat to medium, and pour in the tomato sauce and heavy cream. Season with salt and pepper. Stir and then simmer for about 5 minutes.
- Mix in the parmesan cheese until melted, then add the cooked pasta. Mix until the sauce coats the pasta. Let the pasta simmer in the sauce for a couple minutes. As it simmers, you may need to add pasta water to thin out the sauce. Start with 1/4 cup of pasta water and add more as needed. Stir in the fresh basil and serve immediately.
- Garnish the pasta with freshly grated parmesan cheese and fresh basil.
PASTA WITH BASIL CREAM SAUCE
Creamy pasta is an easy dinner dream. Al dente pasta served with basil cream sauce is the perfect vegetarian meal and can be ready in 20 minutes.

Steps:
- Melt the butter in a pan then add the onion. Cook until soft and translucent.
- Add the garlic, basil and dried herbs (if using) and cook for another 30 seconds.
- Pour in the cream and allow to come to a simmer. Simmer for 5-7 minutes until the sauce covers the back of a spoon easily.
- Transfer sauce to a food processor or blender (or use an immersion blender) and blend until smooth.
- Pour the sauce back into the pan and add lemon juice, salt and pepper to taste. Bring to a simmer and add cooked pasta or serve over cooked chicken.

SPAGHETTI WITH BASIL CREAM

- Set three quarts of salted water over high heat in a large covered pot.
- While the water is heating, place a large skillet over medium heat and add the olive oil. Saute the garlic for a minute or two, until soft but not brown, then add the breadcrumbs. Stir.
- Increase the heat to high, add the cream and cook it for a minute or two, until it begins to thicken. Stir in the basil and remove the pan from heat. Season to taste with salt and pepper and stir in the cheese.
- When the water is boiling add the spaghetti and cook, uncovered, until al dente, about seven minutes. Drain thoroughly and season with salt and pepper if desired.
- Toss the drained pasta in the skillet with the sauce mixture over medium heat for a minute or two, divide among three or more plates and serve.

- To roast the veg, preheat the oven to 200C/gas 6/fan 180C. Scatter the peppers, red onions, chillies and garlic in a large roasting tin. Sprinkle with sugar, drizzle over the oil and season well with salt and pepper. Roast for 15 minutes, toss in the tomatoes and roast for another 15 minutes until everything is starting to soften and look golden.
- While the vegetables are roasting, cook the pasta in a large pan of salted boiling water according to packet instructions, until tender but still with a bit of bite. Drain well.
- Remove the vegetables from the oven, tip in the pasta and toss lightly together. Tear the basil leaves on top and sprinkle with Parmesan to serve. If you have any leftovers it makes a great cold pasta salad - just moisten with extra olive oil if needed.
