WILTED BOK CHOY WITH SOY SAUCE AND CASHEWS

Steps:
- Heat oil in a large skillet over medium heat. Add bok choy and saute 3 minutes. Add soy sauce and red pepper flakes and cook 2 more minutes, until bok choy stalks are tender-crisp and leaves are wilted. Season, to taste, with salt and black pepper. Arrange bok choy on plates and top with cashews just before serving.
GRILLED BOK CHOY WITH GINGER SCALLION GARLIC OIL
Bok choy is a weeknight veggie staple in our house, and it doesn't take a lot of work to make it taste great. Just throw it in a pan and forget about it while you prep the rest of dinner - the edges get crispy, the innards stay tender, and drizzling it with scallion ginger oil really takes it up a notch.

- Heat a gas or charcoal grill over medium-high heat. Alternatively, you can heat a grill pan on the stovetop over medium-high heat. Arrange the bok choy on a sheet tray, or place in a large mixing bowl. Drizzle with oil and toss to coat. Place the bok choy onto the heated grill or grill pan, cut-side down and cook until wilted and grill marks appear, 3 to 4 minutes. Flip and cook for until tender, 1 to 2 minutes more. Remove from the grill onto a platter. Drizzle with the Garlic, Ginger and Scallion Oil (recipe follows), a sprinkling of sesame seeds and flaky salt.
- In a small saucepan over medium heat, add the tablespoon of neutral oil and heat until shimmering. Add the ginger, scallions, garlic and salt and cook, stirring, to soften, 2 to 3 minutes. Add the sesame oil and the remaining 1 cup neutral oil. Reduce the heat to medium-low and simmer, stirring occasionally and taking care not to let the oil get too hot, until the oil is infused with flavors, about 10 minutes. Remove from the heat.
BOK CHOY WITH WALNUTS IN WINE SAUCE
This is adapted from a recipe in "Wild About Greens" by Nava Atlas, changed to make it more in keeping with a Nutritarian eating style..... You can reduce prep time by using frozen onion and mushrooms and jarred garlic..... To chop bok choy: Trim the rough edge off the root ends of the bok choy, then cut across the stem just below the leaf. Slice the white stem portion into 3 or 4 strips, then cut across to dice. Slice the leafy top crosswise and then cut each strip into 1 inch pieces.

- Chop walnuts and set aside.
- Chop bok choy, add raisins, and set aside. If you haven't worked with bok choy before, see Anne Sainz's notes above.
- Combine garlic, onion and mushrooms and set aside.
- Sauce: Combine cornstarch and water in a small bowl. Add mustard and soy sauce and whisk until smooth. Set aside.
- Coat large covered non-stick frying pan or Dutch oven (at least 5 quarts) with oil. Add garlic, onion and mushrooms. Cook over medium heat, stirring frequently, adding small amounts of sherry as needed to prevent sticking.
- Add raisins, bok choy and remaining sherry to pan. Cook uncovered over medium heat, stirring frequently, until the bok choy has wilted.
- Stir in the walnuts and sauce mixture and cook until sauce thickens and bok choy is tender crisp.

- In a large skillet or wok, heat olive oil on med-high heat. Add bok choy and onion and stir-fry until crisp-tender.
- Meanwhile, in a saucepan, combine suagr , vinegar, Worcestershire, chili sauce and cooked crumbled bacon. Simmer for 5 minutes.
- Toss together the bok choy mixture w/ the simmered sauce and serve.

BOK CHOY WITH PLUM SAUCE
This is a delicious, easy side to any Asian dish. It also goes with many other meals. I love it with my tilapia. I don't have a wok but my large pan works just as good.

- Trim the boy choy, removing any discolored leaves and damaged stems. Tear into manageable pieces.
- Heat a wok (or pan) until hot, add the oil and swirl it around.
- Add the bok choy and stir-fry for 2-3 minutes, until the greens have wilted a little.
- Add the plum sauce and continue to stir-fry for a few seconds more, until the greens are cooked but still slightly crisp. Serve immediately.
