- In a large skillet, cook sausage over medium heat until a thermometer reads 160°; drain. Slice into 1/2-inch pieces. In a greased 2-qt. baking dish, combine the sausage, sauce, mostaccioli and Parmesan cheese. Top with mozzarella cheese. , Bake, uncovered, at 350° for 15-20 minutes or until heated through.

CHEESY BAKED PASTA WITH SAUSAGE AND RICOTTA
Like a cross between baked ziti and sausage lasagna, this mozzarella-topped pasta is rich with ricotta and crushed tomatoes - and cooks entirely in one pan, including the pasta. The Italian sausage adds meaty depth to the sauce, but vegetarians can leave it out or use their favorite plant-based sausage instead.

- Heat oven to 425 degrees. Heat oil in a 12-inch ovenproof skillet over medium-high. Crumble sausage into skillet, using a spoon to break it into small pieces. Cook until starting to brown, stirring occasionally, 5 to 7 minutes. Stir in garlic, oregano, fennel seeds and red-pepper flakes (if using), and cook another 1 to 2 minutes.
- Stir in whole tomatoes and their juice, using a spoon to break them up. Add crushed tomatoes, bay leaves and 2 teaspoons salt, and bring to a simmer. Simmer for 10 minutes to thicken slightly.
- Stir in pasta and 1 cup water and return to a simmer. Continue to simmer for 2 minutes, stirring frequently to make sure pasta doesn't stick to the bottom of the pan. Remove from heat, pluck out the bay leaves, and fold in about a third of the mozzarella.
- Top pasta with remaining mozzarella and dollops of ricotta. Sprinkle with Parmesan, then transfer to oven. Bake until pasta is tender when poked with a fork, and cheese is bubbly and lightly golden, 18 to 22 minutes. (If you'd like a more deeply browned topping, run the pan under the broiler for 1 or 2 minutes.) Remove from oven and let cool slightly before serving. Top with basil, plenty of black pepper, and more red-pepper flakes, if you like.

- Put a large pan of water on to boil.
- Heat 1 tbsp olive oil in a large frying pan and fry chunky pieces of 8 pork sausages on a fairly high heat until they are golden brown all over.
- Now turn the heat down and add 1 large chopped onion and 2 crushed garlic cloves, cooking them until they have softened.
- Stir in 1 tsp chilli powder and 400g chopped tomatoes with the sausages, bring the sauce to the boil then turn the heat down and let it bubble for about 10 minutes while you cook the pasta.
- Drop 300g pasta into the pan of boiling water and cook according to the pack instructions.
- Drain the pasta, then tip it into the frying pan with the sausage sauce, mixing well to coat. Dish up immediately with crusty bread.

- Cut sausage into 1/2 inch chunks. I large skillet, brown sausage over medium-high heat, in batches and adding oil if necessary. Transfer sausage to a bowl.
- Pour off any fat from pan. Add onions, garlic and red pepper, cook over medium heat, stirring occasionally, for about 5 minutes or until softened. Stir in pasta sauce, tomato sauce, basil, oregano and fennel seeds; bring to a boil, stirring and scraping up any brown bits from bottom of pan. Return sausage and any accumulated juices to pan; cover and simmer for 15 minutes or until sausage is firm throughout.
- Meanwhile, in a large pot of boiling salted water, cook pasta for 6 minutes, add spinach;cook for 1 minute. Drain well and return to pot. Add sausage mixture and provolone/mozzarella cheese; stir to combine well.
- Transfer to 2 greased 8-inch square baking dishes or 1 13x9-inch dish. Sprinkle with Asiago/parmesan cheese. Cover dish with greased foil, greased side down.
- To serve: Bake, covered with foil, in in 375 degree F. oven for 30 minutes or for 1 hour if from the refrigerator. This freezes beautifully (thaw in refrigerator before baking).

- Preheat the oven to 200ºC/400ºF/gas 6.
- Peel and finely slice the garlic. Coarsely grate the Cheddar. Tear the stale bread into small chunks or blitz in the food processor.
- Tip the breadcrumbs into a bowl with one of the sliced garlic cloves, a good pinch of the oregano, the grated cheese and a pinch of sea salt and a sprinkling of black pepper. Drizzle with a little oil and toss to mix it all together.
- Pop the sausages out of their skins and break each one into 4 equal pieces. Roll each piece into a ball shape and place in an ovenproof dish. Drizzle over a little oil and roll to coat. Bake in the oven for about 10 minutes, or until golden and cooked through.
- Heat a little oil in a frying pan over a medium heat. Add the remaining sliced garlic and oregano, and the chilli flakes. Stir until the garlic is coloured, then tip in the tomatoes.
- Add a pinch of salt and pepper, bring to the boil, then reduce the heat and simmer for 10 minutes, stirring occasionally.
- Cook the rigatoni according to the packet instructions, taking it off the heat 2 minutes early, so it's al dente. Drain in a colander and tip into a large baking dish.
- Add the sausage balls, pour over the sauce and toss well. Sprinkle over the cheesy crumb mix and bake for 15 minutes, or until golden on top and bubbling.

THREE CHEESE AND SPICY SAUSAGE BAKED PASTA

- Preheat the oven to 450 degrees F.
- Bring a large pot of salted water to a boil. Heat 2 tablespoons of the oil in a medium saucepan over medium heat. Add the garlic and red pepper flakes and cook, stirring, until the garlic is golden, about 2 minutes. Add both cans of the tomatoes and 1 cup water. Increase the heat to medium-high and bring to a simmer. Reduce the heat slightly, add the basil sprigs and simmer rapidly, uncovered, until thickened, 15 to 20 minutes. Discard basil and stir in the chopped basil. Season with salt and pepper.
- While the sauce simmers, heat the remaining 1 tablespoon oil in a large skillet over medium-high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes. Transfer the sausage to a large bowl with a slotted spoon.
- Cook the rigatoni in the salted boiling water until very al dente, about 2 minutes less than the package directions instruct. Drain the pasta and add it to the large bowl.

- Cook your rotini, penne, rigatoni, or ziti pasta per the package instructions, minus about two minutes for an al dente texture. Drain and rinse in cool water to stop the cooking process.

SAUSAGE PASTA CASSEROLE

- Preheat the oven to 425 degrees F. Brush a shallow 3-quart baking dish with olive oil. Bring a large pot of salted water to a boil. Add the pasta and cook until very al dente; you still want it to retain a little bite. Reserve 1/2 cup pasta water. Drain well.
- Meanwhile, in a large Dutch oven over medium-high heat, add the olive oil. When the oil is hot, add the sausage and cook and crumble with a wooden spoon until no longer pink, about 4 minutes. - Cook spiral pasta as per package directions, but cook only until al dente (pasta will finish cooking in casserole). Drain, rinse and set aside.
- Slice sausage links into 1/2-inch pieces.

- Cook and slice Italian Sausage, set aside.
- Lightly sautee green onions, mushrooms and peppers in butter.
- In the meantime cook pasta in generous amount of salted water, drain.
- Prepare Sauce:.

An Italian-American classic, this freezable sausage pasta bake is an ideal make-ahead family dish for busy days

- To make the ragu, heat the oil in a large shallow pan or flameproof casserole. Squeeze the sausagemeat from its skins in small balls straight into the pan. Sizzle for 10 mins until browned (don't worry if the meat breaks up). Add the garlic and sizzle for another minute until starting to turn golden, then stir in the chilli flakes, if using, the tomato purée and vinegar. Tip in the tomatoes and bring to a simmer. Reduce the heat to low and bubble for 30 mins.
- Meanwhile, make the white sauce. Melt the butter in a saucepan and stir in the flour to make a loose paste. Sizzle for a minute, then gradually whisk in the milk. Simmer gently for 10 mins, whisking occasionally to ensure the sauce stays smooth. Season and whisk in the parmesan. Remove from the heat and set aside.
- Cook the pasta in a large saucepan of boiling water for 9 mins, or a minute less than pack instructions. Drain and return to the pan. Scrape most of the white sauce into the pasta and stir to coat. Tip in most of the ragu and most of the mozzarella and stir until just combined. Pour the pasta mixture into a large baking dish and spoon over the remaining white sauce and ragu. Dot with the rest of the mozzarella and sprinkle with extra parmesan. Leave to cool completely, then wrap and chill for up to a day, or freeze for up to two months. Defrost in the fridge for 24 hrs before baking.
- Heat the oven to 190C/170C fan/gas 5. Bake for 25-30 mins until the top is slightly crisp at the edges and the cheese is melted. Leave to rest for 5-10 mins, then take the baking dish straight to the table for people to scoop onto their plates.

- Preheat oven to 200⁰C/400⁰F/Fan 180⁰C/Gas Mark 6. Heat the oil in a large frying or sauté pan. Add the sausages and fry over a moderate heat for 4 - 5 minutes until lightly browned. Lift out and drain and set aside to cool for a few minutes.
- Add the onion, pepper, garlic and chilli and fry for 5 minutes until softened but not browned.
- Add the chopped tomatoes and their juice, red wine, sugar, oregano and tomato purée and stir together well. Season with salt and black pepper. Bring to the boil, then reduce the heat and simmer, uncovered, for 10 - 15 minutes until the sauce has thickened slightly.
- Cut the sausages into thick slices and place in an ovenproof dish measuring 38cm x 23cm.
- Meanwhile, cook the pasta in a large saucepan with plenty of salted boiling water for 10 - 15 minutes until tender but still "Al Dente".
- Drain the pasta and then add it to the tomato sauce. Stir the sauce into the pasta until well combined then add it all to the sausages in the dish , mixing everything together evenly.
- Mix the cheeses together and sprinkle over the pasta. Bake for 15 - 20 minutes until the cheese is golden brown. Serve with a green salad and crusty bread.

- Preheat the oven to 220C/200C Fan/Gas 7.
- Put the vegetables in a large roasting tin (roughly 30x25cm/12x10in), season with salt and freshly ground black pepper, toss with the oil and roast for 10 minutes. Add the sausage pieces and toss. Roast for 20 minutes.
- Half fill a large saucepan with water and bring to the boil. Add the pasta and cook for 10-12 minutes, or according to the pack instructions, until tender, stirring occasionally. Drain the cooked pasta in a colander.
- Add the pasta to the vegetables and sausages. Pour over the cream and toss together. Sprinkle with the cheese and cook for 4-5 minutes or until the cheese has melted and sauce is beginning to bubble around the edges. Serve immediately.

- While the pasta is cooking, make the sauce. In a large skillet set over medium-high heat. brown the sausage and onion in olive oil for 5-7 minutes, or until the sausage starts to brown and the onion is soft and translucent. Add the garlic and cook for 1 minute longer, or until fragrant. Stir in the tomatoes with their juice, drained beans, oregano, salt and pepper. Remove from heat.
- Once the pasta is done, drain and stir into the sauce. Transfer to a 13x9-inch casserole dish, and top off with mozzarella and Parmesan. Bake for 20-25 minutes, or until the sauce is bubbly and cheese is golden brown. Serve immediately with a sprinkling of chopped basil or parsley.

- Remove casings from sausage. Cook sausage, onion, and garlic in a large nonstick skillet over medium heat until browned, stirring to crumble. Add the tomato paste, salt, pepper, and tomatoes, and bring to a boil. Cover, reduce heat, and simmer 10 minutes, stirring occasionally.

- First, make the béchamel. In a large saucepan, melt the butter over medium heat. Add minced garlic and chili flake, if using. Cook for 1 minute, stirring often to prevent the garlic from burning. Sprinkle the flour over the butter and whisk together. Continue cooking over medium heat until the flour is absorbed into butter and the mixture is a light golden yellow, 2-3 minutes. Slowly pour in the milk while whisking. Cook sauce until thickened, 8-10 minutes. Stir in the cheese until melted. Season with salt and pepper to taste. Set sauce aside to cool.
- In a large pot of salted boiling water, cook the pasta 3 minutes less than the package instructions so pasta is al dente. The pasta will finish cooking in the oven. When the time is up, drain the pot into a colander and rinse with cold water until cooled. Leave the pasta in colander in sink to drain off as much water as possible.
- While the pasta is cooling, brown the sausage meat in a skillet until cooked thoroughly. Drain off excess fat and set sausage aside to cool.
- Next, combine the ingredients but only after they have cooled; if the sauce is still hot, the cooked pasta will absorb it and the dish will dry out. In a large bowl, add the cooled sausage, pasta, chopped rapini, drained roasted red pepper, and combine. Pour the cooled sauce over all, add half of the grated cheese and mix thoroughly. Divide between 2-3 foil cooking pans, and sprinkle remaining cheese evenly over each. Cover and freeze.
