PASSOVER BREAD
These passover bread rolls are the perfect breads to pack up sandwiches and change up your matzo.

- Heat together boiling water and oil on the stove until the mixture is boiling. Add matzoh meal, sugar and salt and turn off the heat. Mix together until a ball is formed. Let cool for a few minutes then add the eggs, one at a time, and stir until combined. Very important to add the eggs one at a time! Let the mixture rest for 15 minutes. To form the bread, wet your hands with water and roll some of the dough in your hands and shape however you want. Place the dough on parchment paper and continue forming your bagels. You can shape the dough however you want and as big or small as you want. Just keep rewetting your hands or the dough will stick. Bake at 350 degrees F for 45 minutes - 1 hour. Eat hot right out of the oven or wait until cooled. Place in an airtight container for as long as the bagels last on the counter or freeze for later.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a cookie sheet.
- In a large mixing bowl, combine matzo meal, salt, and sugar. Mix well.
- Bring water and oil to a boil. Pour the boiling water over the matzo meal mixture, and stir until blended. Beat one egg at a time into the mixture. Let stand 15 minutes.
- Shape the dough into rolls with oiled hands. Arrange rolls on the prepared cookie sheet.
- Bake at 375 degrees F (190 degrees C) for 50 minutes.

These rolls are the absolute best. When done they are crusty on the outside and light on the inside. I have a convection oven and bake them at 375 degrees for 30 minutes. Very easily doubled.

- Boil oil and water together.
- Add sugar, salt and matza.
- Mix well and allow to cool for 5 minutes.
- Add the eggs one-at-a-time.
- Mix well.
- Let mixture stand for 15 minutes.
- Drop by teaspoonful onto a greased cookie sheet-or- into Pam-sprayed cupcake tin.
- Bake at 375 degrees for 40 minutes or till golden brown.

- Preheat oven to 425 degrees.
- In a 2 quart pot, bring water, oil and salt to a boil.
- Remove from heat and add matzo meal and stir until it forms a ball.
- Add eggs, one at a time, beating until each egg is incorporated before adding another.
- Drop in oval shape on greased cookie sheet for sandwich style rolls (makes 10 rolls) or fill a greased muffin tin (makes 12 muffins).
- Bake for 30 minutes.

This recipe comes from my mother-in-law. These rolls are easy to make, and similar to popovers. You can fill them with tuna or salmon salad or eat them plain! They are delicious!

These popover-style Passover rolls "pop up" in the oven to form impressively tall, crisp and golden rolls.

- Preheat the oven to 400°F and set two oven racks in the centermost positions, leaving at least 4 inches of space between them. Line two 13x18-inch baking sheets with parchment paper.
- Combine the oil, water, salt and sugar in a medium pot and bring to a boil. Reduce the heat to low and add the matzo meal; stir with a wooden spoon until evenly combined. The mixture will be very thick. Transfer the mixture to a large bowl and let cool, stirring occasionally, until warm to the touch, about 15 minutes.
- Add the beaten eggs, a little at a time, stirring well with a wooden spoon after each addition, until evenly combined. This takes some elbow grease. Use a large ice cream scoop or two large spoons to drop the batter into peach-size mounds, spaced evenly apart, onto the prepared baking sheets (you should have 7 on each sheet). Don't worry if they are irregular in shape. Cook for about 40 minutes, switching the pans from top to bottom and front to back midway through, until puffed, golden brown, and crisp on the surface. The rolls will deflate a bit as they cool; that's normal. Serve warm.
- Make-Ahead Instructions: The rolls are best served fresh on the day they are made, but leftovers can be stored in an airtight container at room temperature for up to 3 days. Reheat and crisp the rolls in a 350°F-oven for 6 to 8 minutes for best results.

- Bring the water and the margarine to a boil in a small pot under medium-high heat. (The margarine melts as water heats.) You may have to stir the last bit of margarine to dissolve it completely. Be careful not to let the water/melted margarine boil over the pot, as it is a mess to clean up if you are inattentive. Believe me, I know that from experience.

- Use a food processor to turn cauliflower into rice by pulsing (do this in 3-4 batches) florets until rice consistency…..alternately buy cauliflower already “riced” from the produce or freezer section. Make smaller pieces of cauliflower for a smoother texture in your rolls.

- Egg Lokshen. Since flour-based noodles are out, many people make thin crepe-like pancakes out of eggs and potato starch, which they then roll up and cut into strips, forming kosher-for-Passover noodles (lokshen, in Yiddish) which taste marvelous in chicken soup.
- Schmaltz. Yes, rendered chicken fat. Many chassidic communities do not used processed foods during Passover, as an extra precaution against chametz. And so, some people do their cooking—and even salad dressing—with schmaltz, chicken fat which is cooked over a low heat until it melts.
- Gribenes. One delicious but very unhealthy Passover treat is gribenes, crispy onions and chicken skins that have been fried in schmaltz.
- Soft Matzah. Soft matzah baked in the UK (Image: Mashiach Kelaty) Almost all of us are familiar with the crunchy matzah that looks and tastes like cardboard and lasts almost forever.
- Macaroons. Yep, you knew that macaroons would be on this list somewhere. Our informal polling shows that coconut-based macaroons are like cilantro. Some people love them, and the rest of us are left scratching our heads trying to figure out why.
- Thick Seder Wine. Talking of Manischewitz, there is another persistent idea out there that Seder wine needs to be gloopy sweet stuff that comes in a square bottle and tastes like cough syrup.
- Borscht. Back in the old country, there were very few fresh veggies by winter’s end. So when grain was eliminated from the menu on Passover, potatoes, beets, and other long-lasting produce from the cold cellar became Passover staples.
- Sugar Water. There is an interesting rule in Jewish law whereby a small particle of chametz can be rendered null if it is in an overwhelmingly large mixture of non-chametz before Passover, but once the holiday begins, even the smallest speck of chametz is prohibited.
- No Matzah Balls! You’re probably wondering why there is no matzah ball in the bowl of chicken soup pictured here. After all, isn’t it Passover? You may be surprised to learn that many Ashkenazic Jews (particularly chassidim) are particular not to let their matzah come in contact with water on Passover, lest there be a speck of flour trapped in the dough that could still be “activated” and rise.This means no matzah balls.
- Mimounah. Just because Passover has ended doesn’t mean that the food parade needs to come to a halt. Many Moroccan Jews have the custom of hosting family and friends for a post-Passover feast known as Mimounah.
