PASSOVER CHOCOLATE BROWNIES - PAREVE
This was adapted, doubled and adjusted from the Breuer's Teacher's Seminary cookbook. It won't win secular or year-round gourmet awards, but it makes yummy, simple and light Passover brownies that don't have an overly potato-starchy aftertaste. Our Passover utensils are limited: this uses only the mixer, a liquid measuring cup (also used to check the eggs) and a half-cup-sized dry measuring cup. The brownies come out about 1.25 inches high. Steps:
- Dump all ingredients in mixer bowl and mix well.
- Pour into two foil pans (7" x 13" is what I've used) that have been sprayed with oil.
- Bake at 350 degrees F for 45 minutes.
- Cool in pan, invert when completely cooled and slice from the bottom of the brownies for best results.
- Have a kosher and happy Pesach!

PASSOVER BROWNIES WITH CHOCOLATE-WINE GLAZE

Steps:
- Make brownies:
- Preheat oven to 350°F. Line bottom and sides of a 9-inch square baking pan with wax paper or greased foil.
- Melt chocolate and margarine in a metal bowl set over a saucepan of barely simmering water, stirring until smooth. Remove from heat and cool 5 minutes.
- Beat eggs, sugar, and salt in a large bowl with an electric mixer on high speed until pale and thick. Beat in chocolate in 3 batches on low speed. Stir in zest, matzo meal, and nuts just until blended.
- Spread batter in baking pan and bake in middle of oven until firm and a tester comes out clean, 25 to 30 minutes. Cool in pan on rack, then invert onto a platter and remove paper or foil.
- Make glaze:
- Whisk together sugar, cocoa, and wine in a small saucepan. Bring to a boil, whisking, then simmer 2 minutes, whisking occasionally. Add chocolate and whisk until melted. Remove from heat and whisk in margarine until smooth. Chill glaze, stirring occasionally, until spreadable.
- Spread glaze over brownies and arrange walnut halves on top. Cut into 16 squares with a large knife, wiping it off with a damp cloth between cuts.

- Butter an 8x8 inch square pan and line with parchment paper going up the sides of the pan. Set aside.
- In a medium saucepan, melt the butter and chocolate chips over low heat while stirring until the butter is completely melted.
- Meanwhile, in a separate small saucepan, bring 3/4 cup of dry red wine to a simmer and reduce until you have 5-6 tablespoons to use in the brownies and frosting. Let cool.

- Preheat the oven to 375°. Butter a 9-inch round springform pan. Line the bottom of the pan with parchment paper and butter the paper. Spread the pecans on a large rimmed baking sheet and bake for 8 minutes, or until lightly toasted. Transfer to a plate and let cool, then coarsely chop. Leave the oven on.
- In a large saucepan, bring 2 inches of water to a simmer over low heat. In a large stainless steel bowl, whisk the eggs with the granulated and confectioners' sugars. Set the bowl over the simmering water and whisk the egg mixture constantly until it is warm to the touch, about 3 minutes. Remove the bowl from the heat.
- Put the butter and chocolate in a medium stainless steel bowl and set over the simmering water until just melted, about 3 minutes. Add the vanilla, stir well and remove from the heat.
- Using a handheld electric mixer, beat the egg mixture at high speed until pale yellow and doubled in volume, about 5 minutes. Add the flour all at once and gently fold it in with a whisk. Using a rubber spatula, fold in the melted chocolate and the pecans. Pour the batter into the prepared pan and set it on a baking sheet. Bake for 20 minutes. Reduce the oven temperature to 350° and continue to bake the cake for about 50 minutes longer, or until set and an instant-read thermometer inserted in the center registers 200°.

- Preheat the oven to 350°. Line an 11-by-17-inch baking sheet with parchment paper and spray the parchment paper with cooking spray. Put the chocolate in a medium bowl.
- In a medium saucepan, combine the sugar, butter, corn syrup and water and bring to a boil. Pour the mixture over the chopped chocolate and let stand for about 1 minute, then whisk until smooth. Whisk in the flour and salt, then whisk in the eggs and vanilla until fully incorporated.
- Scrape the brownie batter onto the prepared baking sheet and spread it to the edge. Bake for 15 minutes, until the top of the brownie looks dry and crackly. Transfer the baking sheet to a rack to cool, then transfer the baking sheet to the freezer to chill for 30 minutes, until the brownie base is completely firm.
- In a large heatproof bowl, combine the egg whites with the sugar. Set the bowl over a large saucepan of boiling water and whisk the mixture over moderate heat until it is warm to the touch and the sugar is dissolved, about 2 minutes. Remove from the heat.
