2 bottles dry white wine
3/4 cup brandy
1/2 cup triple sec
3/4 cup simple syrup (equal parts of sugar and water, heat until sugar dissolves and cool)
3/4 cup passion fruit puree
3 oranges, sliced into thin rounds
3 green apples, cored and sliced thin
2 lemons, sliced into thin rounds

Steps:

  • Combine all ingredients in a large pitcher. Refrigerate covered, 3 hours or up to 2 days. Serve over ice.

  • Combine sugar, Calvados, lime, lemon, peaches and apples in a large pitcher. Cover with 1 bottle of Rioja wine and chill sangria several hours. To serve, spoon fruits into glasses or goblets, adding a few fresh raspberries in each glass, pour wine over top of the fruit. Top glasses of sangria off with a splash of soda water and serve.

1/2 cup brandy or 1/2 cup cognac
3 tablespoons superfine sugar
1 orange, sliced into thin cross sections
1 lemon, sliced into thin cross sections

Steps:

  • Wash the fruit before slicing. Just a reminder.
  • Mix the wine, brandy or cognac, and sugar in a large clear pitcher. Stir until sugar has disolved.
  • Add the fruit and stir.
  • Refrigerate a few hours to allow flavors to combine.
  • Before serving, top off with ice cubes.
  • Note: orinal recipe calls for an inexpensive light wine such as pino grigio, sauvignon blanc, fume blanc, or California Chablis. It states the chardonney is too robust.

1 750 mL bottle sweet white wine
1 lemon (cut into wedges)
1 orange (cut into wedges)
1 lime (cut into wedges)
2 cups passion fruit juice
2 cups pineapple juice
1/2 cup brandy
1 cup ginger ale
1 kiwi fruit (sliced thinly)

Steps:

  • Gather the ingredients.
  • Pour wine into a pitcher.
  • Squeeze citrus juice from wedges into wine. Toss in fruit wedges, removing seeds if possible.
  • Add passion fruit juice, pineapple juice, and brandy.
  • Stir well and chill overnight.
  • Add ginger ale, sliced kiwi, and ice just before serving. If you'd like to serve the Sangria right away, use chilled white wine and serve over lots of ice.
  • Scoop the seedy pulp (avoid the white flesh) out of 5 to 6 very ripe passion fruits and place them in the blender.
  • Add about twice the volume of cold, distilled water and 1 tablespoon of sugar.*
  • Blend well.
  • Strain the pulp and seeds from the juice using a fine-mesh strainer or sieve over a large bowl. Press the pulp to release more of the juice and strain again if needed.
  • Add twice the volume of cold water, stir, and taste.
  • Add more water and sugar in small amounts until the juice is to your liking.
  • Once done, bottle it in a container with a tight seal and store in the refrigerator. This method will yield more than enough juice for the sangria and leave you with extra to mix into other drinks. It's great in the morning when mixed with orange juice. *You can use an alternative sweetener for the juice but will need to adjust it to your taste. Agave nectar or honey would both be excellent options. It's best to avoid artificial sweeteners as many are too bitter for the sweet-sour fruit. Buy passion fruit juice. Straight passion fruit juice is admittedly difficult to find in the average grocery store because it's not as popular as pineapple, orange, or any of the other common juices. Many times, you can find passion fruit in a blended juice with other tropical fruits. This can be used as a substitute, though it's not quite the same. When seeking straight passion fruit juice, you might have luck by searching the natural food aisles and markets that specialize in international foods. It is not inexpensive but is worth searching out and paying a little more for.

I duplicated this recipe from a wonderful little tapas restaurant in Boston that serves the best white sangria I've ever had. I asked the bartender how it was made, and here's my modified version based on what she told me. I think it tastes exactly the same. It is important to buy an unsweetened can of pineapples, as that changes the flavor drastically. Read the ingredients and make sure there's nothing besides "pineapples, and pineapple juice." Note: Does not require 15 oz can of pineapples. They made me specify a size, just buy the smaller one. For an extra little touch, I froze raspberries inside mango-juice ice cubes. It tastes great as it melts. Garnish with orange or kiwi slices.

1/2 cup peach schnapps
1 (15 ounce) can pineapple rings, in their own juice, not sweetened
1/2 cup juice, from pineapple can
1 (750 ml) bottle dry white wine, like sauvignon blanc
1/4 cup seltzer water
1 kiwi, peeled and sliced
4 strawberries, quartered
4 slices lemons
4 slices oranges
4 slices limes
1/2 cup raspberries (about a handful)
1 tablespoon granulated sugar

Steps:

  • Do not open bottles of wine or seltzer until ready to serve.
  • Place slices of lemon, orange and lime in a large sangria pitcher and dust with the granulated sugar.
  • Lightly mash with a wooden spoon until fruit begins to break down and sugar begins to dissolve.
  • Cover fruit with pineapple juice. Quarter 3 of the pineapple slices and add to pitcher.
  • Add remaining fruit and peach schnapps. Stir lightly, then refrigerate for 4 hours.
  • Right before serving, add seltzer and bottle of wine to pitcher. Be sure each glass gets some fruit! Garnish with orange or kiwi slices and serve with fruit-juice ice cubes.
