This 7-layer dip is super easy and a beautiful dish to entertain with. I have a big colorful platter that I put it on. It's always a hit!!

- 16 oz refried beans mixed w/ 1 package taco seasoning.
- 1 c sour cream.
- 1 c guacamole.
- 1 c salsa.
- 1 c lettuce.
- 1 c Mexican cheese.
- 4oz sliced olives.
- 1 c tomatoes.

FIESTA 7 LAYER DIP
Colorful layers of refried beans, guacamole, sour cream, cheese, spicy tomatoes, olives and onion for a casual party dip

Steps:
- 1. Reserve 1/2 cup drained tomatoes; set aside. Blend remaining tomatoes and reserved liquid with beans in medium bowl.
- 2. Spread bean mixture in 8x8-inch glass baking dish or round casserole dish. Top with guacamole.
- 3. Blend together sour cream and seasoning mix in small bowl. Spread over guacamole. Top evenly with layers of cheese, olives, green onions and reserved tomatoes. Chill 2 hours prior to serving. Serve with tortilla chips, if desired.
7-LAYER FIESTA PARTY DIP
This recipe was very popular back in my teenaged cast-party days, when my mom would make it for us. I recall getting the recipe from Mike Everheart's mom, I think. I love this stuff! I usually make a double or 1.5 recipe, and keep the extras at home for myself. ;) It's hard to believe how much folks are paying for these layered dips in the stores... it tastes better when you make your own!

- In a bowl mix together the refried beans, half of the package of taco seasoning, the salsa, and 3 tablespoons of the sour cream.
- (Reason for adding salsa/sourcream: layered dips can be too thick for dipping if you don't add something to thin them down a bit - the salsa and sour cream add both flavor and the thinning aspect, so you don't want to skip them. Also, you can add cayenne and/or ancho powder to taste. I usually add ancho because I love the smokey flavor.).
- Spread the mixture into a large rectangular glass lasagna dish.
- (If you used two cans of beans and not all of the dip will fit in the dish, spread the remaining on a dinner plate and you can make your *own* dip to keep at home while you take the rest to the party!).
- In a separate bowl mix the rest of the sour cream with the remaining taco seasoning.
- Spread the sour cream mixture on top of the refried beans.
- Taking your guacamole, spread it carefully on top of the sour cream mixture. Take care not to mix the two together. (Some people swap these layers around - it's up to you -- I just prefer the guac on top.).
- Toss the two types of grated cheese together, then spread them on top of the guacamole.
- Sprinkle with the tomatoes, olives, and green onions. Chill in refrigerator for at least an hour before serving.
- You can make this recipe a day ahead and let it sit in the fridge overnight - let it come to room temperature before serving with round, restaurant-style tortilla chips. (The reason to serve it at room temp is so that when you attempt to dip your chips in they don't break!) Some folks like to serve this hot instead of cold: bake at 350 degrees F for 30 minutes, if you'd like to do that.
- Notes: The above is my basic recipe. When I make it these days, I usually fiddle with it a bit, by: using 1 can of black bean refried beans instead of regular, adding ancho powder into the beans and sour cream, and adding a small can of chopped mild green chiles into the refried beans. When I'm lucky enough to bring home any of this from a party as leftovers, I fill flour tortillas with the dip and fry them up as burritos. They're wonderful both warm and cold, and taste great for lunch!

SUNNY'S EASY 7-LAYER GYRO DIP
One of my favorite things to order for delivery from a Greek restaurant is a gyro salad. It has all the things you want inside a gyro sandwich, but in salad form. It usually comes with two warm pitas on the side, so I love to make my own gyro from all the elements. This is a dip that gives me all those vibes and more. It's great with pita chips or as an easy way to serve gyros to a group without having several topping bowls. Just have warm pita on the side and a spoon to scoop the dip. Sometimes, I serve it this way with crisp, shredded lettuce in a bowl on the side.

- For the lamb: In a large pan on medium heat, add the olive oil. When it begins to swirl, add the onion, garlic, oregano, lamb, salt and plenty of black pepper. Combine the ingredients, breaking up the lamb while cooking, until it is browned, about 10 minutes. Remove with a slotted spoon to a paper towel-lined plate.
- Layer the dip. In an 8-inch square dish, layer in this order: Spread the hummus on the bottom, then sprinkle evenly with the lamb, feta, tomatoes and cucumbers. Spread the tzatziki dip over the top and sprinkle with the dill to finish. Serve with the pita chips.
PARTY TIME SEVEN LAYER DIP
This makes a HUGE amount of dip, perfect for a party. It's very addictive, I've know people to ladle this out onto their plates, as if it were the main course and not the dip. I usually make the bean and guacamole layers the night before and assemble the total dip right before people show up.

- Bean layer: In a bowl, mash everything together until smooth, set aside.
- Guacamole layer: Mash everything together until smooth.
- If you are making the guacamole ahead of time, cover it very tightly with plastic wrap.
- The wrap should rest on top of the guac, not above it.
- Don't even think about putting the avocado pit in the guac to keep it green, it's not going to work.
- What works is the lime juice in the guac and the plastic wrap on the guac, to keep out the air.
- Even after 24 hours the guac is not going to be a gorgeous green, but no one will care, it will taste delicious anyway, and have another 5 layers of stuff over it.
- Other layers: In a large, straight-sided glass dish, spread the bean layer across the bottom.
- Spread half the tomatoes over the bean layer.
- Spread the guacamole over the chopped tomatoes.
- Spread the drained salsa over the guacamole, then the sour cream over the salsa, then the other half of the tomatoes, then the grated Cheddar.
- You can add some black olives over the Cheddar, and then you can call it Eight Layer Dip.
- Serve with lots of tortilla chips.

GATORBEK'S 7 LAYER PARTY DIP
This came from my mom, who I'm sure got it from someone/somewhere else, but I changed it a smidge. (I don't like lettuce on it, since the next day, the lettuce gets soggy. If you like lettuce, or know it will be gone in 1 day, feel free!) I make this for every party, and it's always a hit.

- Thoroughly mix taco seasoning with sour cream. Let sit for at least an hour to dissolve the powder or it will be gritty.
- In a 13 x 9 casserole dish, or similarly sized party dish, spread the following layers, taking care not to mix them.
- Refried beans.
- Guacamole.
- Sour cream mixture.
- Cheese.
- Tomatoes.
- Black olives.
- Green onions.
- (If you're using lettuce, put it between the sour cream and cheese.).
- Serve with tortilla chips.
