EASY PARTY CHICKEN SKEWERS



Easy Party Chicken Skewers image

These little skewers are the perfect party appetizer for all ages. The Bellisari's spread takes them to the next level!

Number Of Ingredients 6

1/2 pound boneless, skinless chicken thighs
3-4 Tablespoons balsamic, shallot and black garlic Bellisari's spread
4 ounces fresh mozzarella, chopped into uniform pieces
1 pint cherry tomatoes
canola oil
salt and pepper

Steps:

  • Chop chicken into bite-size pieces. Place in glass bowl and combine with 2-3 Tablespoons balsamic, shallot, and black garlic Bellisari's spread. Let marinate in fridge for at least one hour. About 10 minutes before removing chicken from fridge, prepare tomatoes. Toss them on a baking sheet and cover lightly in canola oil and salt. Broil them on middle rack for about 3-5 minutes. Remove tomatoes and set aside to let cool to room temperature. Remove chicken from fridge and turn pan on to about medium heat. Place chicken in pan and cook for 2-3 minutes on each side, until internally temperature is at least 165 degrees F. Lightly brush with additional Bellisari's spread. As chicken finishes, set on cutting board with tomatoes and mozzarella. Once chicken is cooled to room temperature, assemble the skewers with the chicken in the middle. Serve room temperature at party alongside other yummy snacks and drinks!

This also works well using turkey strips, plan ahead the chicken needs to marinate for 8 hours --- these may be grilled or oven-broiled, they make a great appetizer for a party --- you can make these well in advance and refrigerate, just make certain that the chicken skewers are kept in sealed plastic bags so the wooden skewers will not dry out and make certain to soak the skewers in water for at least 30 minutes, 1 or more hours if you are planning to prepare ahead and refrigerate, this will prevent the skewers from burning while cooking --- servings is only estimated it will depend on how many strips you thread onto each skewer :)

1 cup crunchy peanut butter
1/4 cup chopped fresh cilantro
1 1/4 cups salsa
1/4 cup brown sugar
1/2 cup low sodium soy sauce
2 teaspoons salt
1/4 cup lemon juice
1/4-1/2 teaspoon cayenne pepper
1/2 teaspoon fresh ground black pepper
2 -3 tablespoons fresh minced garlic
6 green onions, chopped
6 -8 boneless skinless chicken breasts (cut into three long strips)
bamboo skewer

Steps:

  • In a large bowl mix together all ingredients except the chicken strips; mix well to combine.
  • Add the chicken strips and toss to coat with the marinade.
  • Cover and refrigerate for about 8-24 hours, tossing occasionally during the chilling time.
  • About 1 hour before threading the chicken soak the wooden bamboo skewers in cold water for at least 30 minutes or more.
  • Discard the marinade, then thread the chicken strips onto skewer snake-like.
  • Grill or oven-broil for about 4-6 minutes or until just browned and cooked through.
  • Delicious!

TERIYAKI SESAME CHICKEN SKEWERS

15 ounces teriyaki sauce (no more than 2 grams sugar per serving)
6 tablespoons sesame oil
1/4 teaspoon minced garlic
1 lemon, juiced
1 tablespoon sugar substitute (recommended: Splenda)
2 pounds boneless, skinless chicken thighs
1 tablespoon sesame seeds, toasted
1 cantaloupe half filled with melon balls, optional

Steps:

  • Soak bamboo skewers in water for 1 hour to keep from burning later.
  • Mix all marinade ingredients together in a non-reactive container large enough to hold all of the chicken. Cut chicken into 1/2-inch strips and submerge them in the marinade, cover, and refrigerate for at least 1 hour.
  • Preheat oven to 375 degrees F.
  • Thread 1 chicken strip on each skewer towards end of the stick, and line up on a sheet pan. Place in oven and bake for about 30 minutes, or until fully cooked through. Sprinkle with sesame seeds before serving. Serve by sticking skewers straight out of the side of a cantaloupe half filled with melon balls, if desired.

Steps:

  • Place the onions, peppers and chicken onto the skewers, alternating between vegetables and chicken. Repeat process until all of the skewers are assembled. Place completed skewers in a shallow baking dish and cover with vinaigrette or marinade. Refrigerate for 1 to 2 hours. Preheat oven to 425 degrees F and transfer skewers to a sheet pan. 8 (7 ounce) boneless skinless chicken breast halves (each 7ox.)
48 bamboo skewers, soaked in water 30 minutes, drained (8 inch length)
1 pint grape tomatoes or 1 pint cherry tomatoes
1 cup olive oil
1 cup lemon juice
6 bay leaves, broken into small pieces
3 tablespoons chopped fresh rosemary
4 large garlic cloves, pressed
2 teaspoons salt
2 teaspoons hot pepper sauce
1 cup light mayonnaise

Steps:

  • Cut each chicken breast half lengthwise into 6 thin strips. Thread ech strip completely onto 1 Skewer, leaving 1/2" of skewer exposed at one end. Press 1 grape tomato onto end of skewer. Divide Skewers betweeen two 15x10x2 inch glass baking dishes, stacking skewers if necessary.
  • Pour oil into bowl. Whisk in next 6 ingredients. Pour marinade over chicken. Marinate 1 hour at room temperature, turning often, or cover and chill overnight.
  • Preheat oven to 425 degrees F. Remove skewers from marinade and arrange on 2 large rimmed baking sheets; RESERVE MARINADE. Bake chicken until cooked through, about 8 minutes. Transfer to serving platter.
  • Transfer reserved marinade to a medium saucepan. Boil over medium-high heat 1 minute. Cool marinade 15 minutes. Strain. Pour 1/2 cup marinade into medium bowl; whisk in mayonnaise. 4 limes , juice, plus zest of 1
1 bunch coriander , stalks and leaves chopped separately
1 ½ tsp sugar
¾ tsp fish sauce
1 tbsp olive or rapeseed oil
2 garlic cloves , crushed
1 tsp ginger paste
1 ½ tsp Thai curry paste
8 skinless chicken breasts
sweet chilli sauce , to serve

Steps:

  • In a bowl, mix the lime juice, zest, coriander stalks, sugar, fish sauce, oil, garlic, ginger and curry paste together.
  • Slice each chicken breasts into 4 strips lengthways and coat with the marinade. Refrigerate for at least 2 hours and up to half a day. Soak 32 wooden brochette sticks in water for at least half an hour.
  • Thread each strip onto a wooden brochette stick, weaving in and out as if you're sewing.
  • Preheat the grill or barbecue and cook the chicken for 4 - 5 minutes on each side or until cooked through, in batches.
  • Arrange on a platter. Serve with a pot of sweet chilli sauce and a sprinkling of coriander leaves.

CHICKEN AND PINEAPPLE KABOB
3-5 lb chicken breasts, skinless and boneless - cut into uniform cubes
fresh pineapple chunks
2 bottle teriyaki sauce
1/2 c soy sauce
BEEF KABOBS
3-5 lb top round beef roast
1 c soy sauce
1 c worcestershire sauce
2 can(s) beer
1/4 c minced garlic
1 orange
2 lemons
1/2 c extra virgin olive oil
1 c ketchup
cherry tomatoes
6-8 ears of corn - cooked and cut into 1-2 inch slices
SAUSAGE AND PEPPER KABOBS
10-15 bratworst - cut in 4 chunks
frozen pearl onions - parboiled
red, green, yellow bell peppers - cut into chunks

Steps:

  • 1. Soak skewers for at least 2 hours prior to cooking.
  • 2. For chicken kabobs - soak chicken chunks in teriyaki and soy sauce for at least 4 hours. Skewer chicken with alternating chunks of pineapple.
  • 3. For beef kabobs - in a large bowl - cut lemons and orange in half - squeezing juices into the bowl, reserviing the rest of the fruits to add in later. Add in soy, worcestershire sauce, garlic, oil, ketchup and beer, whisk together, then add the orange and lemon halves back to the bowl. Cube the beef roast and add into marinade. Leave in the fridge over night. Skewer with alternating cherry tomatoes, beef and corn chunks.
  • 4. For sausage kabobs - Skewer sausage, peppers and bar-boiled pearl onions.
  • 5. Grill each skewer over medium heat - careful not to burn the fruits and veggies.

3 cloves garlic, peeled
10 g ginger, peeled
2 fresh Serrano chilies, roughly chopped
1 teaspoon curry powder
1 teaspoon cumin
1 teaspoon turmeric
1 teaspoon salt
2 tablespoons soy sauce
1 lime, juiced
8 boneless, skinless chicken thighs, diced
⅓ cup peanuts, chopped
½ cup coconut milk
Bamboo or wooden skewer

Steps:

  • In a food processor, blend the peanut butter, coconut milk, spring onions, garlic, ginger, chilies, curry powder, cumin, turmeric, salt, soy sauce, and lime juice into a smooth paste; this should make about 2 cups. Reserve half of the marinade and pour the other half over the chicken thighs. Mix and chill for 2 hours or overnight.
  • Preheat the oven to 425˚F (220˚C). Line a baking tray with parchment paper.
  • Skewer the marinated chicken onto bamboo skewers, then arrange the skewers so their ends rest on the edges of the baking tray, allowing the chicken to be suspended. Bake the chicken skewers for 15-20 minutes, until slightly dark brown on the edges and cooked through.
  • With no oil in the pan, toast the chopped peanuts on low to medium heat, stirring constantly until the peanuts turn golden brown, 2-3 minutes. Add in the reserved marinade and the coconut milk. Stir and cook until thick and very aromatic, 5-10 minutes.
  • Serve the chicken skewers with the sauce on the side.

This is a wonderful kabob recipe that is a easy to make. It looks great on a platter and tastes delicious. Some notes:Marinade overnight for the best taste. You may marinade for as little as 3 hours however the taste won't be as good. Make sure you soak your skewers for 3 - 4 hours in water so they don't burn on the grill. I placed the pineapple on their own skewers so they wouldn't burn. Also, I put them on the top rack of the grill a few minutes before the chicken was done; just long enough to warm them.

2/3 cup honey
2/3 cup soy sauce

2 large white onions, cut into 2 inch chunks

2 green peppers, cut into 2 inch chunks
1 pint grape tomatoes
1 pineapple, cut into 2 inch chunks (or substitute with 4 8oz jars)
3 -4 lbs boneless skinless chicken breast halves, cut into 2 inch chunks
skewer (MAKE SURE TO SOAK IN WATER FOR SEVERAL HOURS)

Steps:

  • Combine oil, honey, soy sauce, and pepper in large bowl, then divide.
  • From that same marinade take a small amount (about 1/2 cup) and have it on reserve. (You will use this to marinade the chicken once on the grill.).
  • Add 2 cloves of garlic into each bowl.
  • In one bowl, add the chicken and mix well.
  • In the second bowl add the vegetables and mix well. (I did not marinade the pineapple chunks because I like the flavor they add on their own.).
  • Refrigerate 8 - 12 hours making sure to stir halfway through.
  • Drain the marinade from the chicken and vegetables and discard. Thread chicken and vegetables alternately onto the skewers.
  • Preheat the grill to a medium-high setting.
  • Place skewers directly on the grill and cook for 12-16 minutes, turning and brushing with the reserved marinade several times.
  • Place pineapple skewers on grill with about 5 minutes remaining in cooktime to allow them to warm.
