Italian Parmesan Bread for Bread Machine image

I've been making this bread for years without measuring, and finally decided to write it down. My most requested bread from my bread-lovin' son. Makes the house smell divine!! You can easily increase the amounts of seasonings to your taste. (NOTE: Many people seem to be needing to add extra water, so I'm adding an adjustment to the recipe.)

1 1/2 cups water (or more, as needed)
4 cups flour
1/4 cup parmesan cheese
1 1/2 teaspoons salt
1 teaspoon italian seasoning (or pizza seasoning)
1 teaspoon garlic powder
2 1/2 teaspoons yeast

Steps:

  • Add ingredients in order suggested by manufacturer.
  • Mine is water first, then flour, then seasonings and cheese, lastly yeast.
  • Run on basic or delay cycle.

1/3 cup pine nuts

Steps:

  • Measure carefully, placing all bread ingredients in bread machine pan in the order recommended by the manufacturer.
  • Select Basic/White cycle. Use Medium or Light crust color. Do not use Delay cycle.
  • In small bowl, mix pesto and 2 tablespoons flour until well blended. Stir in pine nuts. Add filling at the Raisin/Nut signal or 5 minutes before the last kneading cycle ends. Remove baked bread from pan. Cool on cooling rack.

1-1/3 cups water (70° to 80°)
2 tablespoons butter, softened
4-1/2 teaspoons sugar
1-1/2 teaspoons salt
4 cups bread flour
2 tablespoons nonfat dry milk powder
3 teaspoons active dry yeast
1/4 cup grated Parmesan cheese
2 tablespoons prepared pesto
2 teaspoons olive oil

Steps:

  • In bread machine pan, place the first seven ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). Just before the final kneading (your machine may audibly signal this), add the Parmesan and pesto. , When cycle is completed, turn dough onto a lightly floured surface. Shape into a ball. Place on a baking sheet coated with cooking spray; brush with oil. Cover and let rise in a warm place until doubled, about 30 minutes. , Bake at 375° for 20-25 minutes or until golden brown. Remove to a wire rack to cool.

Looking for something different to do with your zucchini, try this its fantastic, and no yeast!! Grated carrot of pumpkin can be substitued with the zucchini, and different herbs could be added. I like it with a savoury butter A friend use maple syrup on top of hers, something I have not yet tried!!!!

1 1/4 cups coarsley grated zucchini
2 1/4 cups plain flour
3 teaspoons caster sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 lemon, zest of, finely grated
1 cup finely grated parmesan cheese
1/2 teaspoon ground black pepper
3/4 cup milk
1/4 cup olive oil
2 teaspoons chopped fresh rosemary
2 eggs
1 teaspoon rosemary, extra for topping
1/4 cup pine nuts

Steps:

  • Preheat oven to 180c. Grease and line the base of a 19cm x 9cm loaf pan.
  • Place zucchini on kitchen paper and dry well.
  • Put flour, sugar, baking powder, salt and lemon zest into a bowl and mix well. Add zucchini to dry ingredients with parmesan cheese and pepper and mix lightly with a fork. Make a hollow in the centre. Whisk together milk, oil, rosemary and eggs. Pour mixture into hollow and stir until smooth. Pour batter into the pan and smooth the top of the loaf. Sprinkle with the extra rosemary and pinenuts.
  • Bake for 50 minutes or until a scewer inserted into the loaf comes out clean. Cool 10 minutes in the pan on a wire rack before turning the loaf out.
