Steps:
- In a large skillet over medium heat, add the butter and melt. Once melted, add the garlic and cook, stirring occasionally until garlic is fragrant and lightly golden brown. Add the chicken broth, spinach, Parmesan cheese, salt and orzo pasta, stir lightly and cover with a lid.
- Reduce heat to low and cook the pasta at a low simmer, stirring every 2-3 minutes. Cook the orzo until the cheese is melted, there is no more liquid and the pasta has cooked to al dente, or about 8-9 minutes.
- Remove from heat and stir in the cream (if desired), then cover with a lid for 2-3 more minutes. This will allow the pasta to soak up the rest of the liquid. To finish, top with freshly grated Parmesan cheese and fresh minced parsley and serve warm. Enjoy!

Steps:
- heat the olive oil in a skillet over about medium-high heat.
- add onion and saute for a few minutes
- add garlic and orzo pasta and saute until the orzo is starting to brown slightly.
- add a dash of salt and pepper. BE CARFUL WITH THE SALT! with the chik. broth and parmesan cheese it will be to salty if you add too much.
- Start adding the warmed chicken broth a little at a time letting it evaporate before you add more. Do this with about half of the chicken broth and then pour in the rest of it.
- Let this come back to a simmer.
- cover and reduce heat to low.
- simmer for about 30 minutes or until orzo is al dente.
- Just before serving add parmesan cheese to taste. I use a couple of palms full.

- Rinse the mushrooms and cut them into thick slices. Mince the garlic. Heat the garlic and olive oil in a large skillet over medium heat for one to two minutes, or until the garlic is soft and fragrant. Add the mushrooms, a pinch of salt and freshly cracked pepper, and continue to sauté until the mushrooms have softened and released all of their moisture (5-7 minutes).
- Add the uncooked orzo and chicken broth to the skillet. Give it a quick stir, place a lid on top, and let the mixture come up to a boil. Once it reaches a boil, give it quick stir again to loosen any pasta from the bottom of the skillet. Replace the lid, turn the heat down to low, and let the pasta simmer on low heat for 10 minutes. Stir once half way through to prevent the pasta from sticking.
- After ten minutes, test the orzo to make sure it's tender (if not, replace the lid and let simmer a few minutes more). Stir the contents of the skillet to redistribute any leftover broth (it will continue to absorb into the pasta). Once the broth has absorbed, turn off the heat.
