1 onion (yellow, medium, chopped)
1 tbsp olive oil (extra virgin)
2 cups Spinach
1 cup Orzo pasta
2 cups stock (vegetarian or chicken)
1/2 cup Parmesan Cheese (grated)
salt and freshly ground black pepper

Steps:

  • In a large saute pan heat up olive oil, add, chopped onions and cook until translucent; 3-4 minutes;
  • Add spinach and cook until wilted, for about another 2 minutes;
  • Add pasta and stir to coat it all with olive oil, onion and spinach mixture;
  • Add stock, cover the pan and cook according for about 8 minutes until the pasta is cooked through;
  • Turn off the heat, add cheese and black pepper, stir and taste. If needed add some salt. Serve immediately

2 tablespoons butter
1 cup uncooked orzo pasta
1 (14.5 ounce) can chicken broth
½ cup grated Parmesan cheese
¼ cup chopped fresh basil
salt and pepper to taste
2 tablespoons chopped fresh basil

Steps:

  • Melt butter in heavy skillet over medium-high heat. Stir in orzo and saute until lightly browned.
  • Stir in chicken stock and bring to boil. Cover. Reduce heat and simmer until orzo is tender and liquid is absorbed, about 15 - 20 minutes.
  • Mix in Parmesan cheese and basil. Season with salt and pepper. Transfer to shallow bowl. Garnish with basil sprigs.

3 garlic cloves (minced)
1 pound orzo pasta
1/4 cup white wine
3½ cups chicken stock
1 cup parmesan cheese (shredded, plus more for serving)
dash crushed red pepper flakes ((optional))

Steps:

  • In a small pot, melt the butter. Saute the minced garlic just until you can smell it then add in the orzo pasta. Cook it until it begins to smell toasty and looks shiny and semi-translucent.
  • Stir in the white wine and cook until it is almost gone. (This is called au sec.) Pour in the chicken stock and cook for about 15 minutes, stirring often. Cook until a thick sauce is made and pasta is al dente. It will absorb most of the chicken broth.
  • Stir in the shredded parmesan cheese until melted, season with salt and pepper and serve with optional crushed red pepper.

1 small onion (chopped)

2 cups chicken broth (low sodium)
2 cups half and half
1 1/2 cup Parmesan cheese (freshly grated)
2 tablespoon fresh parsley (chopped)

Steps:

  • In a large skillet add the olive oil, butter and cook for about 30 seconds until the butter melts. Stir in the onion and garlic and let it cook for about 2 minutes until the onion softens and the garlic becomes aromatic.
  • Add the orzo to the skillet and let it cook for about 2 minutes just in the oil so that it starts to toast lightly, this will give it a nutty flavor.
  • Season with salt and pepper then stir in the chicken broth and half and half. Bring to a boil, then turn the heat down to a medium-low, cover with a lid and let it cook for 5 minutes.
  • Remove the lid and stir in the Parmesan cheese and fresh parsley.
  • Serve immediately.

16 oz Orzo Pasta
1/4 cup Heavy Cream (optional)

  • In a large skillet over medium heat, add the butter and melt. Once melted, add the garlic and cook, stirring occasionally until garlic is fragrant and lightly golden brown. Add the chicken broth, spinach, Parmesan cheese, salt and orzo pasta, stir lightly and cover with a lid.

16 ounces orzo
32 ounces chicken or vegetable stock
kosher salt and pepper
½ cup freshly grated parmesan cheese
¼ cup fresh chopped herbs, (or 1 tablespoon mixed dried herbs (basil, parsley, rosemary, thyme, oregano))

Steps:

  • Melt the butter in a saucepan over medium heat. Stir in the orzo and cook for a few minutes, stirring often, so the orzo toasts. Pour in the stock along with a pinch of salt and pepper. 3 tablespoons extra virgin olive oil
1/4 cup diced onion
2 garlic cloves, minced
2 (10 1/2 ounce) cans chicken broth, warmed. (I like campbells)
1/2 cup parmesan cheese
1/8 teaspoon salt
1/4 teaspoon pepper

Steps:

  • heat the olive oil in a skillet over about medium-high heat.
  • add onion and saute for a few minutes
  • add garlic and orzo pasta and saute until the orzo is starting to brown slightly.
  • add a dash of salt and pepper. BE CARFUL WITH THE SALT! with the chik. broth and parmesan cheese it will be to salty if you add too much.
  • Start adding the warmed chicken broth a little at a time letting it evaporate before you add more. Do this with about half of the chicken broth and then pour in the rest of it.
  • Let this come back to a simmer.
  • cover and reduce heat to low.
  • simmer for about 30 minutes or until orzo is al dente.
  • Just before serving add parmesan cheese to taste. I use a couple of palms full.

  • Rinse the mushrooms and cut them into thick slices. Mince the garlic. Heat the garlic and olive oil in a large skillet over medium heat for one to two minutes, or until the garlic is soft and fragrant. Add the mushrooms, a pinch of salt and freshly cracked pepper, and continue to sauté until the mushrooms have softened and released all of their moisture (5-7 minutes).

  • After ten minutes, test the orzo to make sure it's tender (if not, replace the lid and let simmer a few minutes more). Stir the contents of the skillet to redistribute any leftover broth (it will continue to absorb into the pasta). Once the broth has absorbed, turn off the heat.
