PARMESAN OREGANO BREAD (AKA PIZZA BREAD)
The directions fill a loaf pan with balls, for a special presentation. This can also be shaped into s standard loaf or a round loaf. Posting this in response to a request. I have not yet tried it, but I will! Times are estimates.

Steps:
- Dissolve the yeast in the milk; Add salt, 1/4 cup olive oil, 1 tablespoon oregano, and 1/4 cup parmesan cheese.
- Add flour a little at a time; When dough is manageable, turn out dough onto lightly floured surface and knead until smooth.
- Place in bowl lightly oiled with olive oil; Rise for 1 hour in dark, warm place until dough has doubled.
- Knead dough for 2-4 minutes; Divide dough into 20 equal pieces, roll each piece into a ball; Butter large loaf pan and place 14 of the balls on the bottom in 2 rows, 7 in each row; Brush with olive oil; Place remaining 6 balls down the middle on top of the other 14; Brush with olive oil and sprinkle with 1 tablespoon oregano and 2 tablespoons parmesan.
- Cover and let rise for 45 minutes.
- Bake for 35-40 minutes at 400 degrees.
- The balls will produce a beautiful,"mountainous" surface on the bread- a real conversation piece!
FABULOUS OREGANO BREAD (OR PIZZA DOUGH)
This is a HUGE hit at any of our dinner parties when I make it as bread. It's absolutely fabulous as pizza dough and is the single most requested recipe in my repertoire.

Steps:
- Place all ingredients in order in your bread machine using the regular bread cycle.
- If you want pizza dough, use the"dough" setting and roll out flat on a floured surface.
- Preheat your oven to 400.
- Spray your cooking pan with Pam.
- You can also sprinkle a little cornmeal on the pan if you wish.
- Lay dough out on your pan and cover with cling film OR apply a little extra olive oil over the surface of the dough.
- Let rise for 1/2 hour.
- Bake for 15-20 minutes.
- Remove from oven, apply toppings and continue baking until toppings are done.
- If you wish to make a freeform loaf: Preheat oven to 350°F.
- Form loaf on a prepared baking sheet, cover with cling and let rise until doubled.
- Bake until golden brown and sounds hollow when thumped (about 30 minutes).
- Remove to a cooling rack and lightly coat with butter while still hot for a tender crust.

Steps:
- Dissolve yeast and sugar in 1/2 cup warm water. Let stand for about nine to ten minutes.
- Combine yeast mixture with oil, salt, and two cups of flour. Stir well.
- Gradually stir in 4 cups of flour and remaining water.
- Knead for 10 minutes, adding additional flour as needed.
- Place dough in a lightly-greased bowl.
- Cover with plastic wrap and let rise for about one hour.
- Punch dough down and divide into eight pieces.
- Roll each half into loaf-shapes, about twelve inches long.
- Place loaves onto two large baking sheets lined with parchment paper.
- Cover the eight loaves and allow to rise for about an hour.
- Preheat oven to 350 degrees Fahrenheit.
- Cook for 25 minutes, or until the top of the loaves are golden brown.
- Let the bread cool until room temperature.
- For a delicious oat take on the Subway white bread, sprinkle the tops of the loaves with quick-cooking oats after brushing on the egg white mixture.
- Adapt this recipe to prepare Subway's Honey & Oats bread by adding 1/2 cup of old fashioned oats to the bread dough before rising.
- If you prefer a hands-off approach, you can mix all of the ingredients in a bread machine and cook on a light setting according to the manufacturer's instructions.
- Add a bit more flavor by sprinkling a mixture of shredded cheddar cheese, garlic salt, and Italian seasoning over the dough before baking.
- Recreate Subway's Parmesan Oregano bread by mixing together Parmesan cheese, oregano, and garlic salt and sprinkling it over the unbaked dough.
- You can also make two loaves of bread from this recipe instead of eight individual sub rolls.

Steps:
- Mixing and storing the dough: Mix the yeast, salt and sugar with the water in a 5-quart bowl,or lidded (not airtight) food container.
- Mix the dry ingredients and the cheese without kneading, using a spoon. You may need wet hands to incorporate the last bit of flour.
- Cover (not airtight), and allow to rest at room temperature until dough has risen and collapsed (or flattened on top), about 2 hours.
- Refrigerate the dough in a lidded (not airtight) container for use over the next 7 days.
- On baking day, dust the surface of the dough. Cut into 1-pound or grapefruit-sized pieces. Dust your working surface with flour. Quickly shape into loaves. For twists, divide each ball in half, make two long strands and twist together. Allow the dough to rest and rise on a pizza peel or cookie sheet dusted with cornmeal.
- Preheat the oven to 450 degrees. Place a broiler tray half-filled with water on the lower rack to create steam while baking.
- Brush the loaves with egg wash. Bake in the oven for about 25 minutes, or until deeply browned and firm in the center. Smaller or larger loaves will require adjustments in baking time.
- Allow to cool before slicing or eating.
