KETO LOW-CARB PARMESAN BREADED PAN FRIED SHRIMP

Keto Low-Carb Parmesan Breaded Pan Fried Shrimp image

Keto Low-Carb Parmesan Breaded Pan Fried Shrimp is a quick, healthy, and gluten-free recipe that uses almond flour and only a handful of ingredients to make crispy and crunchy shrimp. Toss these shrimp on salads, in tacos, or serve them with sugar-free, low carb cocktail sauce.

Provided by Brandi Crawford

Categories     dinner     lunch

Time 25m

Number Of Ingredients 8

1 pound jumbo shrimp or prawns (peeled and deveined)
1/3 cup finely grated parmesan cheese
3/4 -1 cup blanched almond flour
salt and pepper to taste
seafood seasoning (such as Old Bay) to taste
2 eggs, beaten
1 tablespoon olive oil
3 tablespoons butter

Steps:

  • Get the recipe for the Keto Sugar-Free Cocktail Sauce here.
  • Combine the almond flour, parmesan cheese, seafood seasoning, and salt and pepper to taste in a bowl large enough to dredge the shrimp.
  • Place the beaten eggs in another bowl.
  • Dredge the shrimp in the eggs and then the almond flour mixture. Keep a moist towel nearby to wipe your hands as needed. If your hands are really sticky it will be difficult to keep the breading on the remaining shrimp.
  • Heat a skillet on medium-high heat. When hot, add the olive oil and butter. Allow the butter to melt and add the shrimp.
  • Once you have added the shrimp, try not to move them around much until a crust forms on the bottom of the shrimp. If you move them, you may lose some of the breading.
  • Once a crust forms on the bottom of the shrimp and the breading is golden brown, flip the shrimp. This should take about 3-4 minutes. It could be less depending on the size of your shrimp. Monitor the shrimp closely.
  • Fry the other side of the shrimp for a couple of minutes.
  • Remove the shrimp from the pan. Cool before serving.

SHRIMP PARMIGIANA

Shrimp Parmigiana image

Lightly breaded and fried shrimp are tossed in marinara sauce and baked with a cheese crust. Surprisingly, this does not taste oily at all. Very good flavor, nice and light. Serve over angel hair pasta with a tossed salad on the side. The red pepper sauce pairs well with the shrimp, but you can use your favorite marinara.

SKILLET SHRIMP PARMESAN

Skillet Shrimp Parmesan image

Herb-spiced panko forms the best-ever crust on these lightly fried shrimp. They are arranged atop a bed of bubbling marinara sauce, then topped with mozzarella and nutty Parmesan cheese before being broiled until browned and gooey. Basil, crushed red pepper, and more Parmesan finish this outstanding Italian-American dish. To bulk up the meal, serve it with a refreshing Caesar salad and lots of crusty warm bread.

Provided by Justin Chapple

Categories     main-dish

Time 30m

Yield 4 servings

Number Of Ingredients 13

1 cup all-purpose flour
Kosher salt and freshly ground black pepper
2 large eggs
1 1/2 cups panko, crushed by hand
1 1/2 teaspoons dried oregano
1 1/2 teaspoons dried parsley
1 pound shelled and deveined large shrimp, tails removed
Canola oil, for frying
One 24-ounce jar marinara sauce
1 cup shredded low-moisture mozzarella cheese
1/4 cup finely grated Parmesan cheese, plus more for serving
Basil leaves, for garnish
Crushed red pepper, for serving

Steps:

  • In a large resealable plastic bag, combine the flour and a pinch each of salt and black pepper; shake to mix. In a medium bowl, beat the eggs. In another large resealable plastic bag, combine the panko, oregano, parsley, 1 teaspoon salt and 1/2 teaspoon black pepper; shake to mix.
  • Working in batches, add the shrimp to the bag of flour and shake to coat. Transfer the floured shrimp to the beaten eggs and turn to coat. Lift the shrimp from the egg, letting the excess drip back into the bowl, then add to the bag of panko and shake to coat. Transfer the breaded shrimp to a baking sheet or plate.
  • In a large oven-proof skillet, heat 1/4 inch of oil over medium-high heat until little bubbles appear when you insert a wooden chopstick or the end of a wooden spoon. Carefully add half the breaded shrimp and fry, flipping once, until well browned, about 3 minutes total; reduce the heat if the shrimp browns too quickly. Transfer the shrimp to a paper towel-lined plate or baking sheet to drain. Repeat with the remaining shrimp.
  • Position the oven rack 6 to 8 inches from the heat source and preheat the broiler to high. Carefully pour the oil into a heatproof container and let the skillet cool slightly.
  • Add the marinara to the skillet and cook over medium heat until bubbling. Arrange the fried shrimp in the skillet in an even layer, then sprinkle the mozzarella and 1/4 cup of the Parmesan on top. Broil for 1 to 3 minutes, until the cheese is melted and browned in spots. Garnish the shrimp Parmesan with basil leaves and serve with crushed red pepper and additional Parmesan, for sprinkling.

  • First, bread all the shrimp. Once the shrimp are all prepped and clean, set up three bowls. In the first bowl, whisk the flour, salt, garlic powder, dried parsley, tarragon and basil together. The second bowl should be the eggs beaten with a little water. In the third, stir the bread crumbs and grated parmesan together thoroughly. Set up a lined sheet tray at the end to hold the breaded shrimp. Take small handfuls of the shrimp to make it go a little faster and dredge them through the flour to coat them with one hand, letting the excess shake off. Then use the other hand to coat them in the egg wash. Go back to the dry hand and coat them in the parmesan and breadcrumbs before you lay them out on the sheet tray. Using one hand for the dry ingredients and one for the wet just keeps things neater. Continue until all of the shrimp are breaded and laid out. Refrigerate the tray of them to set the coating for 30 minutes.
  • While the coating is setting, get the oil heating up since it can take almost 30 minutes. Get out a large skillet with deep sides and fill it with about 3-4 inches of canola oil for deep frying. Heat it over medium high heat and use a deep fry thermometer to make sure the oil reaches 350 degrees and stays around there. When the shrimp is chilled, fry them in batches of about 8. They will only take about 2-3 minutes to fry to perfection. Fish them out with a slotted spoon or mesh strainer to a paper towel lined plate to drain. Continue to fry them in batches until they are all cooked, keeping an eye on the oil temperature. Serve immediately with your favorite sides and enjoy!
