Parmesan crusted chicken is easy enough to make for a busy weeknight but also special enough for company.

½ cup all purpose flour
2 eggs
⅔ cup seasoned Italian bread crumbs (I use Progresso)
⅓ cup freshly grated Parmigiano-Reggiano cheese
¼ teaspoon salt
¼ teaspoon freshly ground black pepper
1 tablespoon finely chopped fresh herbs, such as thyme, parsley, chives or rosemary
3-4 boneless skinless chicken breasts (about 1½ pounds), pounded ¼"-thick (see note)
Salt and freshly ground black pepper
¼ cup olive oil
Lemon wedges, for serving

Steps:

  • Set up three large shallow bowls in an assembly line. Put the flour in the first bowl; beat the eggs in the second bowl; and mix the bread crumbs, Parmesan cheese, salt, pepper, and chopped fresh herbs in the third bowl.
  • Season chicken breasts with salt and pepper. Dredge the first chicken breast in the flour and shake off the excess until just a light coating remains. Next, dip the chicken in the egg mixture and turn to coat evenly, letting any excess egg drip off. Finally, dredge the chicken in the bread crumb mixture, turning a few times to coat well. Set breaded chicken on a plate and repeat until all of the chicken breasts are breaded.
  • Heat the oil in a large sauté pan over medium heat. When the oil is hot, add the chicken breasts to the pan and cook for 2 to 3 minutes until the first side is golden brown. Flip and continue cooking until done, 2 to 3 minutes longer. Serve immediately with lemon wedges.
  • Note: If chicken breasts are large (8 or more ounces), it's best to cut them in half once they are pounded out. Alternatively, you can cut them in half horizontally before pounding.

For Chicken:
1 lb chicken breast (about 3 large)
1 tbsp avocado oil mayo
3 tbsp shredded parmesan cheese
For Sauce:
3 slices bacon, fried and crumbled (fat reserved in pan)
1/2 cup heavy whipping cream
1 tbsp cream cheese
1 tbsp shredded Parmesan cheese
1/2 tsp garlic powder
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees. Rinse and dry the chicken. Make sure all the water is off the chicken so the mayo sticks. Using a silicone baking brush, brush the may on top of the chicken evenly. Top with shredded cheese and place in baking dish. Bake uncovered 40-50 minutes, or until chicken is done, making sure internal temperature reaches at least 160. When the chicken has about 10 minutes left, begin the sauce. Using a skillet, warm the reserved bacon fat over medium-low heat. Whisk in the heavy cream until well combined. Continue to mix until the mixture starts to foam on the edges of the skillet. Add the cream cheese and whisk until smooth. Add parmesan and garlic powder, still whisking until smooth. Toss in some of the crumbled bacon, leaving some for a garnish. Place 1 chicken breast on a plate, and top with 2-3 tbsp of the sauce. Top with bacon crumbles.

1/2 cup water
6 round buttery crackers, finely crushed (about 1/4 cup)
2 Tbsp. KRAFT Grated Parmesan Cheese
4 small boneless skinless chicken breasts (1 lb.)
2 tsp. oil
1/3 cup PHILADELPHIA Chive & Onion 1/3 Less Fat than Cream Cheese
3/4 lb. fresh asparagus spears, trimmed, steamed

Steps:

  • Cook rice in 1-1/4 cups broth and 1/2 cup water as directed on package.
  • Meanwhile, mix cracker crumbs and Parmesan on plate. Rinse chicken with water; gently shake off excess water. Dip chicken in crumb mixture, turning to evenly coat both sides of each breast. Discard any remaining crumb mixture.
  • Heat oil in large nonstick skillet on medium heat. Add chicken; cook 5 to 6 min. on each side or until done (165°F). Transfer to plate; cover to keep warm. Add remaining broth and reduced-fat cream cheese to skillet; bring just to boil, stirring constantly. Cook 3 min. or until thickened, stirring frequently; spoon over chicken. Serve with rice and asparagus.

2 cloves garlic, minced
1 cup dry bread crumbs
⅓ cup grated Parmesan cheese

1 (10 fluid ounce) can chicken broth, divided (low sodium)
6 Ritz crackers, finely crushed
4 small boneless skinless chicken breasts (1 lb.)
2 teaspoons vegetable oil
1/3 cup philadelphia cream cheese with garlic and herbs, spread
375 g asparagus spears, trimmed and steamed
2 tablespoons parmesan cheese

Steps:

  • Cook rice as directed on package, using 1 cup of the both and 1/2 cup water.
  • Meanwhile, mix cracker crumbs and Parmesan cheese on plate. Rinse chicken with cold water; shake off excess. Dip chicken in cracker mixture, turning to coat.
  • Heat oil in a large nonstick skillet on medium heat. Add chicken; cook 5 to 6 minutes on each side or until chicken is golden brown and cooked through. Place chicken on serving plate. Set aside; keep warm.
