DR. SEUSS' PURPLE POPCORN MUFFINS
Our school is involved in Read Across America program that is held annually to celebrate Dr. Seuss' birthday. Room A5A created a new muffin in honor of this event. It's a simple recipe that uses grape jam, a children's favorite.

Steps:
- Sift flour, measure and sift with baking powder, salt, and sugar.
- Add milk, popped corn, eggs and melted butter.
- When batter is mixed, stir in 1 teaspoon lemon juice.
- Spoon half of the batter into 12 greased muffin cups.
- Spoon jam into the center of each muffin cup.
- Spoon remaining batter over jam.
- Swirl a little jam through the top of each muffin.
- the well-oiled muffin tins should be 2/3 full.
- Bake in pre-heated oven (435 F) for 20- 25 minutes.
- Makes 12 regular size muffins.

SALMON AND CHIVE MUFFINS
I am posting this recipe in honour of my Recipezaar friend Latchy who sadly passed away in 2006. This was one of two recipes she gave me that she hadn't got round to posting. I have made these and would certainly have given her 5* for them had she posted the recipe. I hope you enjoy them too. :) I used a can of pink salmon and made some into normal size muffins as well as some mini size muffins.

Steps:
- Pre heat oven to 200'C.
- Grease 12 one third cup muffin holes.
- Sift flour into bowl.
- Combine melted butter,egg, milk and chives in a jug.
- Mix well and pour into flour.
- Use a large metal spoon to stir gently until almost combined.
- Fold in salmon.
- Spoon into muffin holes until three quarters filled.
- Bake for 18 - 20 minutes or until a skewer inserted into the centre comes out clean.
- These are good sliced in half and spread with cream cheese or just butter if preferred.
PARMESAN POPCORN
Putting an Italian-style twist on a bag of microwave popcorn is as easy as sprinkling some grated Parmesan cheese on it.

- Combine egg, buttermilk and margarine.
- Stir liquids into dry ingredients just until moistened.

- Put oven rack in middle position and preheat oven to 350°F.
- Whisk together eggs, milk, and oil in a bowl. Whisk together 3/4 cup cheese and all of remaining ingredients in a large bowl, then add wet ingredients to dry ingredients. Whisk until combined.
- Divide among 12 greased (1/2-cup) muffin cups. Sprinkle with remaining 1/4 cup cheese and bake until a tester comes out clean, about 20 minutes. Cool in pan on a rack 5 to 10 minutes.
MEXICAN POPCORN MUFFINS
For a change from spicy cornbread, these muffins use shredded Mexican cheese and green chiles to give a South of Border taste.
