Steps:
- Preheat oven to 425 degrees F. Line a baking sheet with parchment paper.
- In a medium bowl, combine the panko, parmesan cheese, lemon zest, garlic powder, parsley, salt and pepper. Add the olive oil and toss to combine.
- Arrange the cod fillets on the baking sheet and season all over with salt and pepper. Divide the panko topping among the fillets, pressing lightly so that it adheres.
- Place in the oven and bake for 10-12 minutes or until the topping is lightly browned and the fish is mostly opaque (just cooked through), with a trace of translucence in the center (cut into a piece to check). Cooking time will depend on the thickness of the fillets. Serve immediately.

- Preheat oven to 400 degrees F.
- Place bread crumbs in a shallow dish. Pile parsley, garlic, lemon zest, and a little coarse salt on the cutting board. Finely chop the lemon-garlic mixture, then combine with plain bread crumbs.
- Brush the top of each fillet with olive oil and dip in to the bread crumb herb mixture. Brush a little bit of olive oil in the bottom of a baking pan then place fillet in the pan, crust side up. Roast fillets in oven until firm to the touch, about 12 to 15 minutes.
GARLIC-CRUSTED COD FISH
This recipe comes from The Black Dog Summer on the Vineyard Cookbook. Just buy the cod and parsley; and you probably have everything else at home. Such a simple fish recipe and it packs a lot of flavor. This is for garlic lovers! Note: if the breadcrumb coating doesn't immediately adhere to the fish, just pat it on. It works great.

- Preheat oven to 400 degrees F.
- Heat butter and oil in a saucepan over low heat and add the garlic for one minute to soften, not brown.
- Remove pan from heat and add the bread crumbs, parsley, salt and pepper.
- Mix to moisten the crumbs and seasonings.
- Dredge each fish fillet in the beaten egg first.
- Then dredge each fish fillet into the crumb mixture.
- Place the coated fish fillets in an oiled roasting pan for the oven.
- Bake the fillets in the preheated oven for about 10 to 12 minutes, until the crust is golden brown. The fish inside should be flaky. Use a fork to make sure the fish flakes and is done.
- Serve with lemon wedges.
PAN-SEARED AND CRUSTED LING COD
Steps:
- Dissolve 3 tablespoons salt in 8 cups of water in a bowl and brine lingcod at room temperature for 30 minutes. Drain brine and rinse and dry cod; season 1 side with salt and pepper.
- Preheat oven to 400 degrees F (200 degrees C).
- Cut lemon in half; zest 1 half and cut the other half into wedges.
- Melt 1/4 cup of butter in a skillet over medium-high heat. Add cod; cook until fillets are golden brown on both sides, about 5 minutes per side.
- Transfer fillets into a baking pan; squeeze zested half of lemon over cod.
- Combine bread crumbs, Parmesan cheese, lemon pepper, and lemon zest in a bowl. Top fillets with bread crumb mixture. Cut remaining butter into pieces and dot top of fillets.
- Bake fillets in the preheated oven until bread crumb mixture is golden brown and cod flakes easily with a fork, 15 to 20 minutes.

- Mix the breadcrumbs with the grated lemon zest, grated Parmesan, chopped parsley, salt and pepper.
- Season the 4 skinless fish fillets. Pan fry in a little oil for 2-3 minutes until just tender. Turn over and sprinkle with the crumb mixture. Brown in the pan under a hot preheated grill for 2-3 minutes. Add the butter to the pan with the juice of 1 lemon. Melt around the fish and serve.

- Peel the carrots and julienne enough to make 3 cups; cover and set aside.

PARMESAN AND HERB CRUSTED LING COD

- For breading: start by putting the pound of butter in a sauce pot on a low fire to melt. put all other ingredients in an electric mixer and grind till consistency is the same. dip your ling cod portions in the melted putter and transfer into the breading and cover the fish with it. place on sheet pan or cookie sheet after all are breaded put in the oven preheated to 450 degrees. bake approximatly 12 minutes. baking times may vary. heat oil in sauce pan and add garlic. lightly tan the garlic and add the onions and peepers. stir to coat well with oil and add water. simmer till onions are translucent take pot off stove and use a burr mixer (electric puree machine) until a smooth consistency is present. lay a bed of sauce on plate and finish with the ling cod. hope you enjoy this dish. what i also like to do with the dish is make rissoto cakes(cooled rissoto breaded in panko and pan fried or deep fried) you can find good rissoto recipes on many cooking websites.

- Heat oven to 450*F. In a medium bowl combine the fresh herbs and set aside. In another bowl combine the bread crumbs and cheese and set aside. Place the beaten eggs in a third bowl.

- Remove the tenderloins from the chicken and reserve for another recipe.
- Slightly flatten the chicken breasts with a mallet.
- Combine the herbs, bread crumbs, grated cheese and salt and pepper.

- Mix the Adobo spice (or you can make your own Adobo spice by combining equal amounts of cumin, onion powder, salt, ground black pepper, garlic powder, and turmeric), and oregano.
- Pre-heat an iron skillet, preferably an iron grilling skillet on medium-high heat. Coat the skillet well with the olive oil.
- Prepare the fish by rinsing with cold water and pat dry with a paper towel or cloth. Apply the spice mixture to both sides of the cod fillets.
- Add cod fillets to the skillet and cook for 3 minutes on each side. Add lime juice to the skillet after the fish is flipped.
- Grate the ground black peppercorn and lightly sprinkle the grated parmesan cheese over the cod fillets.
