CHICKEN WITH ARTICHOKES AND MUSHROOMS

Chicken with Artichokes and Mushrooms image

Chicken and artichokes are perfect partners. Although this is a quick and easy recipe, it has a fairly upscale flavor profile. Serving suggestions are rice, noodles, riced cauliflower, or zucchini noodles.

Time 40m

Yield 6

Number Of Ingredients 15

1 serving cooking spray
½ teaspoon salt
¼ teaspoon paprika
⅛ teaspoon ground black pepper
1 ½ pounds boneless, skinless chicken breasts, cut into large cubes
3 tablespoons unsalted butter, divided
½ (12 ounce) jar marinated artichoke hearts
1 cup sliced baby bella mushrooms
1 tablespoon all-purpose flour
1 teaspoon dried thyme
½ cup low-sodium chicken broth
2 tablespoons dry sherry
2 teaspoons Dijon mustard
salt and ground black pepper to taste
2 tablespoons chopped fresh parsley, or to taste

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Coat a large casserole dish with cooking spray or mist with olive oil.
  • Combine salt, paprika, and pepper, and sprinkle over chicken cubes.
  • Melt 2 tablespoons butter in a large skillet over medium-low heat. Add the chicken and lightly brown on all sides, about 4 minutes. Transfer to the casserole dish. Remove artichoke hearts from the marinade and place among the chicken cubes. Reserve 1 tablespoon of the marinade for later.
  • Melt remaining butter in the same skillet over medium heat. Add mushrooms and stir until lightly browned, about 3 minutes. Combine flour and thyme; stir into the mushrooms. Mix chicken broth, sherry, and Dijon mustard together. Gradually add to the skillet, stirring constantly until lightly thickened. Taste and season with salt and pepper if needed.
  • Pour the sauce over the chicken and artichokes. Drizzle with the reserved artichoke marinade. Cover.
  • Bake in the preheated oven until chicken is no longer pink in the center, 15 to 18 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Garnish with chopped parsley.

CHICKEN PARMESAN STUFFED MUSHROOMS WITH SPINACH

Chicken Parmesan Stuffed Mushrooms with Spinach image

These Chicken Parmesan Stuffed Portobello Mushrooms are a delicious meal full of healthy ingredients and amazing flavors!

Provided by Holly Sander

Categories     Dinner

Time 50m

Number Of Ingredients 13

6 large portobello mushroom caps, cleaned and stems removed (*see note)
½ cup grated Parmesan cheese, (more for garnish)
1/3 cup parsley, finely chopped (more for garnish)
1 medium onion, very finely chopped
1 egg
6 garlic cloves, minced
½ teaspoon onion powder
1 teaspoon salt
1 teaspoon pepper
10 ounces frozen spinach, defrosted and all the liquid squeezed out
1 pound ground chicken, 93% lean (This will keep the chicken more moist.)
2 cups of your favorite marinara, I use Raos since it's low in sugar.
4 ounces Shredded Italian cheese blend or shredded mozzeralla

Steps:

  • Preheat oven to 450 degrees. Place parchment paper on a baking sheet. Roast mushrooms for 10 minutes with top side up, and then 5 minutes on the other side (If your mushrooms are really large cook 13 minutes on the first side). Remove mushrooms from the oven, drain off any liquid from the pan and set aside. Now reduce the oven temperature to 425.
  • Meanwhile, mix together the parmesan, parsley, onion, egg, garlic, onion powder, salt and pepper in a large mixing bowl.
  • Next, give the spinach a chop and separate it and sprinkle over the mixture in the bowl and mix together. Add the chicken and give it a good stir.
  • Season the mushrooms with a sprinkle of salt and pepper and place them top-side down on the baking sheet. Form 6 evenish balls (depending on the variation of sizes of your mushrooms) and place them on each mushroom on the baking sheet. Press them down a little so they cover the mushroom, and so their tops are flat. Spray them with cooking spray. Cook for 15-20 minutes, top each mushroom with cheese, and continue cooking until chicken temperature reaches 165F and cheese has melted.
  • Meanwhile, heat marinara on the stovetop. When mushrooms are cooked, remove from oven, top with marinara, and garnish with more Italian cheese, Parmesan cheese (if desired), & chopped parsley. Serve warm.

PASTA SHELLS WITH PORTABELLA MUSHROOMS AND BOURSIN SAUCE

Pasta Shells With Portabella Mushrooms and Boursin Sauce image

This is one of my all time favorite pasta dishes. It came from one of my mom's old cookbooks, although I have made a couple tweaks here and there over the years. I know Boursin is a little more expensive but if you can help it, don't use the inexpensive imitation brands. The sauce just won't come out right. I have used the low fat Boursin and it works fine. In a pinch, the alouette brand will work, or you can try subbing goat cheese made with garlic and herbs. For a really big meal, add in some chicken, either grilled, rotisserie or just leftover! As a note, this isn't the best dish to reheat so keep that in mind.

Time 35m

Yield 4 serving(s)

Number Of Ingredients 12

1 tablespoon butter
1 tablespoon olive oil
1 lb portabella mushroom, stems removed, caps halved and then cut into 1/4-inch slices
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 cup white wine
1 teaspoon minced garlic (from a jar works)
1 1/4 cups chicken broth (preferably low-sodium)
5 1/2 ounces pepper boursin cheese (garlic and herb also works if pepper is unavailable)
1 lb asparagus (broccoli or sugar snap peas are also good choices)
3/4 lb medium pasta shell
grated parmesan cheese, to taste

Steps:

  • Snap the tough ends off the asparagus and discard them. Cut the spears into 1/2 inch pieces.
  • Melt butter with the oil over medium heat in a large frying pan.
  • Add the mushrooms and cook, stirring occasionally until the mushrooms are tender and well browned, about 6 minutes. Add salt, pepper and garlic. Stir and reduce heat to medium/medium low.
  • Meanwhile, in a small saucepan, heat chicken broth. Once lightly boiling, add in Boursin cheese and white wine, stirring with a fork to help melt cheese. Lower heat and simmer to thicken. If not using pepper Boursin, add 1/4 tsp black pepper. Once the cheese is fully incorporated to the liquids, add sauce to mushrooms, stir and simmer.
  • In a large pot of boiling, salted water, cook the pasta until almost done, about 6 minutes.
  • Add the asparagus and cook until it and the pasta are just done, about 3-4 minutes longer. (If using broccoli add with 2 minutes left to go, snap peas about 1 1/2 min).
  • Drain the pasta. Toss with the mushrooms and sauce. Season to taste.
  • Serve with Parmesan cheese on side. Enjoy!
