PARADISE PARFAITS

Steps:

• In a large bowl, whisk milk and pudding mix for 2 minutes. Whisk in extract. Let stand for 2 minutes or until soft-set. Refrigerate for 5 minutes., Meanwhile, coarsely crush 12 wafers; set aside. In parfait glasses, layer banana slices, half of the cookie crumbs, half of the walnuts and pudding and all of the strawberries. Top with the remaining cookie crumbs and pudding, all of the grapes and remaining nuts. Garnish with toasted coconut and a whole vanilla wafer.

TROPICAL FRUIT PARFAIT

Steps:

• In a small bowl stir together yogurt, lime juice, and cayenne pepper; set aside.
• Spoon 1/4 of drained fruit into the bottom of 2 wine or parfait glasses. Add 1/4 of the banana. Spoon 1/4 cup yogurt mixture over fruit and top with 1/4 cup of granola. Repeat layers.
• Serve immediately garnished with a sprig of fresh mint.

• Whisk in extract and let stand for 2 minutes or until almost set.
• Refrigerate 5 minutes.
• Coarsely crush 12 wafers and set aside.
• In parfait glasses, layer banana sliced, half of the wafer crumbs, half of the walnuts and pudding and all of the strawberries.
• Top with the remaining cookie crumbs and pudding, all of the grapes and remaining nuts.
• Garnish with toasted coconut and a whole vanilla wafer.

TROPICAL PARADISE PARFAIT

Steps:

• In a large bowl, combine fruit. Squeeze lime juice all over and toss to coat.
• In each parfait glass, spoon ¼ of the fruit.
• Top with ½ cup of yogurt and top with 1 tablespoon each of coconut and macadamia nuts. Repeat. Serve immediately.

TROPICAL PARFAITS

Steps:

• In a bowl, whisk the milk, extract and pudding mix for 2 minutes. Stir in coconut and lime zest if desired. In each of two 1-1/2-cup parfait glasses or dessert dishes, layer about 1/3 cup pudding mixture, 1/4 cup pineapple, 2 tablespoons almonds, 1/3 cup pudding mixture, 1/4 cup strawberries, 2 tablespoons almonds and remaining pudding mixture., Top with whipped cream. Sprinkle with the remaining almonds. Garnish with cherries.

FRENCH VANILLA PARFAITS

Steps:

• Dissolve flavored instant coffee in hot water in medium bowl. Add milk and pudding mix; beat with whisk 2 min. Stir in COOL WHIP.
• Spoon half the pudding mixture into each of 6 dessert glasses; cover with layer of strawberries. Top with remaining pudding mixture.
• Refrigerate at least 1 hour before serving.
