PAPRIKA CHICKEN SCHNITZEL WITH FRIED EGGS (HOLSTEIN)
This past holiday season I visited Vienna for the first time with my mom, brother and husband. We all had our fill of schnitzel. Back home, I combined elements from a few versions and a twist or 2 of my own. This dish can be made with veal, chicken or pork cutlets.

- Preheat oven to 200 degrees F. Place a baking sheet in oven to keep cooked cutlets crisp.
- Butterfly the chicken breast pieces across the breast but not all the way through, open the meat up and set into a plastic food storage bag or 2 pieces waxed paper. Gently pound out each piece into very thin, large cutlets. Pile cutlets on a plate and season with salt and pepper.
- Arrange a station for breading: flour, 2 beaten eggs, bread crumbs mixed with paprika, parsley and the zest of a lemon.
- Heat just enough oil to coat the bottom of a large nonstick skillet over medium to medium-high heat.
- Bread 2 cutlets in flour, then egg, then bread crumb mixture and cook 2 to 3 minutes on each side, transfer to oven, add a bit more oil, if necessary, and repeat. Keep the cooked cutlets hot in the warm oven. Wipe pan clean, add 1 tablespoon extra-virgin olive oil heat then add roasted red peppers, season with salt and pepper and wilt them 4 to 5 minutes.
- While cutlets are in oven and peppers are cooking up, heat 1 tablespoon of butter in a medium skillet over medium heat. Add 4 eggs and fry to desired doneness, season with salt and pepper.
- Arrange some lettuce on each dinner plate, top with 1 cutlet, and some of the lemon juice over top. Arrange some roasted red pepper strips, 2 anchovy fillets, 1 tablespoon capers and a fried egg, sunny-side up or over easy on top of the cutlets. Serve with lemon wedges.
PORK SCHNITZEL
I love to eat out and I think that this is even better than the schnitzel we can get at our local German restaurant. I found the recipe on the RecipeSource web site.

Steps:
- Pound pork to 1/4 to 1/8" thick.
- Mix 1st amount of flour with seasoned salt& pepper.
- Mix egg and milk.
- Mix the bread crumbs and paprika.
- Coat meat with flour, then dip in egg mixture and then the bread crumb mixture.
- Allow to set on a wire rack for 10 mins.
- Brown quickly on both sides in shortening in a large skillet.
- (about 2 to 3 mins per side) Remove from pan and keep warm.
- Pour broth into skillet, scraping to loosen crusty drippings.
- Blend the flour and dillweed into the sour cream.
- Stir mixture into the broth.
- Cook and stir until mixture is thickened; do not boil.
- Serve with pork.
SCHNITZEL
This is a family favorite of ours, my mom got the recipe from a German lady when we lived in Germany. You may use tenderized veal in place of the cube steaks in this recipe.

- In a shallow bowl, stir together the flour, cornmeal, salt and pepper. In a separate shallow bowl, whisk together the milk and eggs using a fork.
- Heat oil in a large skillet over medium-high heat. The oil should completely cover the bottom of the skillet. While the oil heats, dip cube steaks into the egg and milk, then dip into the flour mixture, and shake off the excess. Place in the hot skillet.
- Fry steaks on each side until golden brown, then reduce the heat to medium and cook until well done. Do not cover. Drizzle with lemon juice before serving.

PORK SCHNITZEL
If I need a sure-fire winner dinner, it's schnitzel. My son, who never stops moving long enough to eat anything hot, will always sit still for schnitzel. It's a weeknight dinner worth sitting down at the dining table for (even though it's so good it's gone fast), lighting candles and getting cozy on a cold night. You can make it with chicken cutlets or pork loin cut into cutlets. Either way, it needs to be pounded super thin, so that you can cook it quickly and keep the inside moist and the outside super crunchy. Parmesan is not traditional in schnitzel, but I add just a bit to keep the crust super crunchy and big on flavor, since it can be so easy to underseason your breadcrumbs and end up with a bland-tasting schnitzel instead of one that crackles and sings with flavor.

- Freeze the pork loin until lightly firm at the edges, about 1 hour. Slice the pork as thin as you can (about an 1/8 inch thick) and lay each slice between 2 pieces of parchment or plastic wrap. Gently pound to create super thin cutlets, then season the pork on both sides lightly with salt and pepper.
- Combine the panko and Parmesan in a shallow bowl. Place the flour and eggs each in their own separate shallow bowls.
- Working with one piece of pork at a time, dredge in the flour, then dip in the eggs, letting the excess drip off, then coat in the panko-Parmesan mixture, shaking off any excess. Set on a parchment-lined baking sheet and repeat with the remaining pork.
- Heat 2 tablespoons of the oil in a large skillet over medium-high heat. Set a wire rack inside a second baking sheet. Cook the pork, 1 to 2 pieces at a time, until brown and cooked through, about 2 minutes per side. Transfer the cooked pork to the wire rack. Continue with the remaining pork, wiping out the skillet as needed and adding the remaining 2 tablespoons oil.
- Sprinkle the cooked pork with flaky sea salt. Serve hot, with lemon wedges for squeezing over the top.

- Place the pork chops between two sheets of heavy plastic (resealable freezer bags work well) on a solid, level surface. Firmly pound the pork with the smooth side of a meat mallet to a thickness of 1/8-inch. Trim any fat from the edges, and make a few small slits along the edge to prevent the pork from curling during cooking.
- Combine the flour, 1 teaspoon salt, and pepper in a bowl. Whisk the egg and milk together in another bowl until well blended, then mix the panko bread crumbs and paprika together in a third bowl. Dredge the pork chops in the flour mixture one at a time, then dip them into the egg mixture followed by the panko mixture.
- Heat the vegetable oil in a large skillet over medium-high heat. Arrange no more than two pork chops in the skillet at a time, cooking until the meat is golden brown no longer pink in the center, 3 to 4 minutes on each side. Place the pork chops in a warm oven to keep warm.
- Pour the chicken stock into the skillet used to cook the pork. Reduce the heat to low, and scrape up any brown bits in the bottom of the pan. As the stock simmers, mix the dill, 1/2 teaspoon salt, and sour cream together in a bowl. Whisk about 1/4 cup of the hot stock into the sour cream mixture, then pour it back into the skillet. Heat until warm and thick, about 5 minutes. Serve with the pork chops.

Steps:
- Mix salt and paprika together.
- Cut veal into serving sized pieces.
- In a large heavy skillet, cook bacon till crisp.
- Remove cooked bacon and set aside.
- Add veal and onions to bacon drippings in skillet.
- Brown veal on both sides and cook onion till soft.
- Sprinkle with a mixture of salt and paprika.
- Remove skillet from heat.
- Pour the sour cream and tomato sauce over the meat, cover skillet and return to heat.
- Simmer over low heat for about 20 minutes.
- Garnish with reserved bacon pieces.

- Trim any fat from the pork cutlets to prevent any curling when pan searing. Gently pound the pork loin cutlets between plastic wrap to get thinner and tenderize. Season both sides with salt, pepper and 1 teaspoon paprika. Dust with the flour to coat both sides. Set aside.
- In a skillet over medium-high heat add the oil. After a minute add the seasoned pork loin cutlets and quickly brown on both sides, about 2 minutes each side. Remove and set aside on a plate.
- Add the sliced mushrooms to the skillet and cook for a minute. Add the remaining teaspoon of paprika and stir to coat the mushrooms. Add the beef stock, stirring to scrape up and cooked bits in the pan and reduce liquid by half. Add the cream and cook for 2 minutes on low. Add the pork cutlets and accumulated juices back to the pan and turn to coat with reduced sauce. Serve with chopped parsley on top.

- Pound all 4 pork chops / steaks or meat of your choice very flat (the thinner it is the quicker it cooks and will have more surface to absorb the liquid of the gravy). Season generously with salt and pepper and then dredge in the flour. Shake off any excess flour.
- Heat the bacon lard in a very large skillet and fry the pork chops 3 minutes per side (they will continue cooking later together in the sauce). Remove the pork chops from the pan.
- In the same pan add the onion slices and fry until soft and golden. Now add the bellpepper slices and the chopped tomatoes with the liquid of the can. Cook until the bellpepper is almost soft. Season with salt and pepper and add the white wine and chicken broth and bring to a boil.
- Now add the pork back to the pan and nestle it in between the bellpepper and onions and tomatoes. Turn the heat down, cover the pan and let simmer for 15-20 minutes.
