4 cups sliced fresh plums (about 1-1/2 pounds)
1 tablespoon lemon juice
1/2 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1 frozen deep-dish pie crust (9 inches)
TOPPING:
1/2 cup sugar
1/2 cup all-purpose flour
1/4 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3 tablespoons cold butter

Steps:

  • Preheat oven to 375°. In a large bowl, sprinkle plums with lemon juice. Combine sugar, flour, salt and cinnamon. Add to plums; toss gently to coat. Pour into pie shell. , For topping, in a small bowl, combine sugar, flour, cinnamon and nutmeg; cut in butter until crumbly. Sprinkle over filling. , Bake until filling is bubbly, 50-60 minutes. Cover edge loosely with foil during the last 20 minutes if needed to prevent overbrowning. Cool on a wire rack.

I know there are lots of pie recipes on AllRecipes.com. I only found one for classic plum pie, and lots for cherry pie, but each had features I didn't care for, so I combined what I thought were the best parts, and this is the result. This recipe is easily doubled, tripled, or whatever, depending on the amount of fruit you have.

3 cups pitted plums
1 cup white sugar
¼ cup cornstarch
1 teaspoon lemon juice
½ teaspoon vanilla extract
¼ teaspoon almond extract
1 prepared pie crust

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Place plums into a bowl and stir in sugar, cornstarch, lemon juice, vanilla extract, and almond extract with a rubber spatula. Spoon into a prepared pie shell.
  • Bake in the preheated oven until bubbly and crust is golden brown, 35 to 40 minutes. Let cool for 10 minutes before serving.

4 cups sliced plums
1/2 cup sugar
1/4 cup flour
1/4 teaspoon salt
1/4 teaspoon cinnamon
1 tablespoon lemon juice
1 unbaked 9-inch deep dish pie pastry
1/2 cup sugar
1/2 cup flour
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
3 tablespoons cold margarine

Steps:

  • In bowl, combine first 6 ingredients; pour into pastry shell.
  • For topping, combine sugar, flour, cinnamon and nutmeg.
  • Cut in margarine until coarse.
  • Sprinkle over plums.
  • Bake in preheated 375 degree oven for 60 minutes or until golden brown.
  • (May need to cover crust edges with foil during baking to prevent burning.).

EASY AS PLUM PIE

With no peeling to be done, plum pie is one of the easiest and fastest pies to make, and sooooo good especially with whipped cream or ice cream on top. Prep time doesn't include making the crust. Use your favorite homemade double crust pie shell, or the dreaded store bought - either way it's as easy as Pie!

2 unbaked pie crusts
2 lbs plums
1/2 cup sugar
2 tablespoons flour
1 teaspoon cinnamon
1 tablespoon butter

Steps:

  • Preheat oven to 450 degrees.
  • Place one pie crust into a 9"pie dish.
  • Wash plums, do not peel.
  • Cut plums in half remove pit, then into quarters.
  • Arrange plums in the pie crust.
  • Mix together the dry ingredients, then sprinkle over the plums.
  • Dot with the butter.
  • Place top crust over plums, trim crust edges with enough to turn under, then crimp crust edge.
  • Cut about 6 1" slits into the top of the pie.
  • Bake at 450 degrees for 12 minutes, reduce heat to 325 degrees, bake 25 minutes longer or until plums are tender.
  • Cool, serve warm or cold.

Pastry for double-crust pie (9 inches)
1-1/2 pounds fresh plums, pitted and quartered

1 teaspoon cinnamon-sugar

Steps:

  • In a small bowl, combine brown sugar and crumbs. Line a 9-in. pie pan with bottom crust; sprinkle with brown sugar mixture and pack gently. Cover with plums. Combine the sugar, flour and cinnamon; cut in butter until crumbly. Sprinkle over plums., Roll out remaining pastry to fit top of pie. Make small cuts or slits in top crust; place over plums. This is a delicious pie that comes out with perfectly tender fruit, a crust that is not burnt and best of all, your oven stays clean! Try this method with other pie recipes too! I got this from an old church cookbook and had no idea there was anything wrong with newer paper bags, as the person thankfully posted in her review of this recipe. I had no idea that there were toxins in paper bags. I do not want to be responsible for anyone getting ill! Please only use caution!

1 (9 inch) unbaked pie shells (check my recipes for Most Incredible No Fail Pie Crust)
1 large brown paper bag
6 cups peeled coarsely sliced or chopped tart apples
1/2 cup sugar
2 tablespoons flour
1/2 teaspoon nutmeg
1 teaspoon cinnamon
2 tablespoons lemon juice
1/2 cup butter
1/2 cup flour
1/2 cup packed brown sugar

Steps:

  • Preheat oven to 425 degrees.
  • Filling: Mix all ingredients in a large bowl and turn them into the unbaked pie shell.
  • Prepare Topping: Combine flour and sugar and cut in butter until you have pea sized crumbs.
  • Sprinkle topping evenly over the apples and pat down around the edges.
  • Carefully slide the pie into the brown bag and fold the end under the pie plate.
  • Place on a cookie sheet.
  • Bake for 50 minutes.
  • Remove from oven and then remove pie from when cool enough to handle.
  • No burnt crust, no under baked apples and no juices spilling over into your oven!

2 cups all-purpose flour
1/4 cup sugar
1 pinch salt
1 cup cold unsalted butter, cut into pieces
1/3 cup ice water
5 granny smith apples, peeled and thickly sliced
1/2 cup sugar
1 1/2 tablespoons cornstarch
1 teaspoon fresh lemon juice
1 teaspoon vanilla
1/4 teaspoon cinnamon
1/8 teaspoon salt
1/8 teaspoon nutmeg
1 1/2 tablespoons cold unsalted butter, cut into pieces

Steps:

  • In a food processor combine flour, sugar and salt. Add butter and pulse into pea-sized pieces. Add water and pulse briefly, it will still look crumbly. Transfer the crumbs to 2 pieces of wax paper and form into 2 disks. Wrap with plastic wrap and chill overnight.
  • Roll out disks on a lightly floured workstation to 2" bigger than the 9" pie plate. Line the plate with one disk, and chill the other.
  • Preheat oven to 375 degree F.
  • Filling:.
  • Toss apple slices, sugar, cornstarch, lemon juice, vanilla, cinnamon, salt and nutmeg together. Transfer to pie shell and dot with butter. Brush edges of crust with water and place top crust on and pinch the edges together.
  • Slide pie into a brown paper bag and fold top down. Staple and bake for 1 hour.
  • Remove pie from oven and cut a large circle in the top of the bag and return to the oven to brown the crust. It should take approx 15-25 minutes.
  • Let pie cool at least 30 minutes before serving.
