1/3 cup lime juice
1 teaspoon balsamic vinegar
1/4 cup chopped fresh Thai basil or 1/4 cup cilantro
1/4 cup chopped green onion
2 cloves garlic, finely minced
1 pickled jalapeno pepper, minced (or less, to taste)
1/2 teaspoon brown sugar, to taste
1 small papaya, peeled and cubed
1/2 lb cooked and shelled small baby shrimp
fish sauce, to taste
24 butter lettuce leaves

Steps:

  • In a non-reactive bowl, mix together the lime juice, balsamic vinegar, basil or cilantro, green onion, garlic, jalapeno, and brown sugar.
  • Stir in the cubed papaya and shrimp, then the fish sauce to taste.
  • Pour into shallow dish and surround with the butter lettuce leaves.
  • Use the lettuce leaves to scoop up the papaya mixture and hold to eat.
  • Good additions are cooked bean threads, thinly sliced cucumber, julienned carrot, or perhaps bean sprouts.

1/4 cup fish sauce, such as nam pla or nuoc nam
1 tablespoon rice vinegar
1 teaspoon soy sauce
1 lime, juiced
2 teaspoons fresh ginger, minced
1 teaspoon sugar
1 tablespoon red chili sauce, such as Srirachi Hot Chili Sauce
Kosher salt
1 large green papaya, peeled and julienned, see note
1 cup bean sprouts
1 medium cucumber, peeled, seeded, and julienned
1 red onion, sliced thin
1 small red chile, sliced thin
Fresh cilantro leaves, for garnish
Butter lettuce leaves, for serving

Steps:

  • For the dressing: In a small bowl add all ingredients and mix well. Set aside for about 1/2 hour to allow the flavors to develop. Taste and adjust seasoning before serving.
  • For the salad: Combine papaya, bean sprouts, cucumber, onion, and red chile in a large bowl. Pour over the dressing and mix well. Mound onto a platter, garnish with cilantro leaves, and surround with butter lettuce leaves.

3 tablespoons lime juice
2 tablespoons plus 1 teaspoon apricot preserves

6 green onions
3 teaspoons olive oil, divided
1 pound uncooked medium shrimp, peeled and deveined
1 large sweet red pepper, chopped
2 cups hot cooked rice
8 large lettuce leaves

Steps:

  • In a small bowl, mix the first 6 ingredients. Using a vegetable peeler, shave carrots lengthwise into very thin strips. Slice white parts of green onions; cut each green top in half lengthwise., In a large skillet, heat 2 teaspoons oil over medium-high heat. Add shrimp; stir-fry until pink. Remove from pan., Stir-fry red pepper and carrots in remaining oil 4 minutes. Add white parts of onions; stir-fry 1-2 minutes longer or until vegetables are crisp-tender., Add 1/3 cup soy sauce mixture to pan. Bring to a boil. Add shrimp; heat through. ½ red bell pepper, chopped
1 pound large shrimp, peeled and deveined
2 cloves garlic, minced
½ tablespoon Greek seasoning
½ cup sliced cherry tomatoes, or to taste
½ cucumber, halved and sliced
1 (4 ounce) can sliced black olives
1 head romaine lettuce, separated into individual leaves
½ cup feta cheese, crumbled

Steps:

  • Melt butter in a large nonstick skillet over medium-high heat. Add bell pepper; cook for 2 minutes. Add shrimp and garlic and sprinkle with Greek seasoning. Cook until shrimp are bright pink on the outside and the meat is opaque, 3 to 4 minutes. Remove from the heat and stir in cherry tomatoes, cucumber, and olives.

Originally a Cooking Light recipe, these wraps are great as a festive appetizer or a simple supper. I've added a few ingredients according to my own taste, and these are a hit every time I make them. Great for a dinner if you're short on time (or trying to beat the heat in the kitchen in the summer). Serve with a simple salad and a spicy dipping sauce! You can also replace the chicken with cubed tofu or cooked pork--I've had good luck with both!

5 ounces bean threads, uncooked (aka rice or cellophane or glass noodles)
1/2 cup minced fresh cilantro
1/2 cup low sodium soy sauce
2 tablespoons chili paste with garlic
4 teaspoons dark sesame oil
4 cups chopped chopped roasted boneless skinless chicken
1/2 cup roughly chopped roasted unsalted peanuts (or cashews)
1/4 cup finely shredded raw carrot (optional)
1/4 cup shredded raw cucumber (optional)
24 large boston lettuce leaves (or Romaine)

Steps:

  • Cover bean threads with boiling water. Let stand for 5 minutes or until softened. Drain, and rinse under cool water. Chop noodles.
  • While bean threads soak, combine cilantro, soy sauce, chile paste, and oil in a large bowl, stirring with a whisk. Add noodles, chicken, and nuts to soy sauce mixture; toss well to coat. Stir in carrots and cucumber, if using.
  • Spoon 1/3 to 1/2 cup chicken mixture down center of each lettuce leaf; roll up. Serve immediately.
