Steps:
- Drain papaya very well on paper towels.
- Cream butter in a mixing bowl, using an electric mixer on medium speed.
- Gradually add sugar, beating well.
- Add eggs, one at a time; beat well after each addition.
- In another bowl, mix together the flour, and next 6 ingredients; add to creamed mixture, stirring well.
- Stir in papaya, raisins, and chopped walnuts.
- Spoon batter into a greased and floured 8 1/2x 4 1/2 inch loafpan.
- Bake in a 350° oven for 1 hour and 10 minutes OR until done.
- Let cool in pan for 10 minutes; remove bread from pan and let cool completely on a wire rack.

FRESH MANGO BREAD
I make lots of these during mango season and give away to friends and family. It's great for breakfast or afternoon snack! Sometimes I even stick it in the toaster for a different texture.

- Preheat oven to 350 degrees.
- Combine all of the dry ingredients.
- Beat eggs with oil and add to flour mixture.
- Add mangos, lemon juice and raisins.
- Mix well.
- Pour into 2 greased 8x4 loaf pans.
- Bake for about 1 hour or until toothpick comes out clean.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x5-inch loaf pan.
- Slice papayas in half lengthwise. Scoop out black seeds and discard. Peel and discard skin. Place flesh in a bowl and mash. Transfer to a strainer and allow to sit for 10 minutes to drain any liquid.
- Combine flour, poppy seeds, baking soda, and salt in a bowl. Cream sugar and butter together in a separate bowl. Mix in eggs, one at a time, until well blended. Mix in papaya flesh, buttermilk, guava juice, and vanilla. Slowly stir in dry ingredients until just moistened. Pour into the prepared loaf pan.
- Bake in the preheated oven until a toothpick inserted in the center comes out clean, about 1 hour 15 minutes. Cool in the pan for 10 minutes, then release loaf from the pan onto a wire rack. Let cool completely, about 30 minutes, before slicing.

PAPAYA BREAD II
Nice moist quick-bread, excellent for using up any papaya that is somewhat past it's prime for eating fresh. Like most quick-bread recipes, it's very adaptable. I've made equally yummy combinations of papaya-mango and papaya-banana breads when I didn't have the full amount of papaya available. Freezes well (cool completely, slice, then wrap loaf tightly in plastic wrap or foil.)

- Preheat oven to 350 degrees F.
- Grease two 8" loaf pans.
- Beat eggs, applesauce, and vanilla in large bowl.
- Add sugar, beating until well blended.
- Blend in papaya puree.
- In a smaller bowl, sift together all dry ingredients (baking powder to flour).
- Add flour mixture to papaya mixture.
- Blend only until moistened, preferably by hand (overmixing will produce a tough bread).
- Fold in nuts (if using).
- Pour evenly into prepared pans.
- Bake at 350 degrees F for about 1 hour, or until toothpick inserted in center comes out clean (with moist crumbs attached).
- Cool pans on wire rack for 5 minutes.
- Remove bread from pans and continue cooling, or slice and serve warm with butter or cream cheese (apple cinnamon flavored Brummel& Brown spread is wonderful with this as well).
GREEN MANGO AND PAPAYA SALAD IN CLASSIC THAI DRESSING (YAM MAMUANG)

- In a large bowl, combine green mango, papaya, string beans and lemon juice. Set aside for 5 minutes. In a wok or frying pan, heat oil, add garlic and fry until golden. Add onions and fry until clear. Remove with a slotted spoon and set aside on absorbent kitchen paper.
- To the mango mixture add fish sauce, sugar, dried shrimp, chili, cilantro and dried chili flakes, if desired. Toss gently and chill.
- Serve on a bed of 2 Bibb lettuce leaves, with garnishes of tomato halves, peanuts, fried onion and garlic

- Take one thick slice from the mango and, while still on the skin, slash the flesh with a sharp knife in a criss-cross pattern to make cubes.
- Turn the piece of mango inside-out and cut away the cubed flesh from the skin.
- Place in a bowl, mash with a fork to a pulp, and then add the cream and mix together well. Spoon into a freezer container and freeze for about 1-1 1/2 hours, or until half frozen.
- Meanwhile, put the apricots and orange juice in a small saucepan. Bring to a boil and then simmer gently until the apricots are soft, adding a little more juice or water if necessary, so that the apricots remain moist. Remove the pan from the heat and set aside to cool.
- Chop or dice the remaining mangoes and place in a bowl.
- Cut the papaya in half, remove the seeds and peel. Dice the flesh and add to the mango.
- Pour the apricot sauce over the fruit and gently toss to coat.
- Stir the half-frozen mango cream a few times until spoonable, but not soft.
- Serve the fruit topped with the mango cream.

- Bring to boil over moderate heat, stirring frequently.
- Reduce heat.
- Simmer uncovered for 30 or 40 minutes until most of the liquid has cooked away and mixture is thick, stirring often.

- Fill jar to within 0.125 in from top.
- Seal quickly and tightly.

- 1. Preheat oven to 350 degrees . In a large bowl, combine the flour, cinnamon, soda, salt and sugar. Mix well.

- Preheat oven to 350, lightly grease 2 loaf pans.
- Combine eggs,oil and sugar, mix on low for 30 seconds; add carrots, applesauce, papaya and coconut, mix on low another 30 sec.
