- Combine 3 cups guava nectar, 1 cup milk, 1 1/2 teaspoons vanilla and 3 tablespoons sugar in a large bowl; add 3 cups frozen mango chunks. Working in batches, puree in a blender until smooth and frothy. Divide among small glasses.

- Mix together the marinade ingredients. Place the shrimp in a shallow dish or plastic container, and pour the marinade over them. Cover and marinate for 1 to 2 hours in the refrigerator. Preheat the broiler. Transfer the shrimp to a broiling pan and broil for 2 to 3 minutes on each side, until just cooked. Set aside to cool. Thread 1 shrimp, 1 papaya slice and 1 mango slice onto each skewer, and continue threading, using 3 to 4 shrimp per skewer. Serve with Mango Salsa as a dipping sauce.;

- For filling: Combine chopped pineapple, mango, papaya, brown sugar, orange juice, cinnamon stick, orange peel, lemon peel and ground cloves in heavy medium saucepan. Cook over low heat until reduced to 1 1/2 cups, stirring frequently, about 1 1/2 hours. Remove cinnamon stick. Cool.
- For crust: Using electric mixer, beat butter, sugar, vanilla extract and salt in large bowl just until blended. On low speed, gradually add flour, beating just until dough begins to come together. Turn dough out onto floured work surface. Gather dough into ball; divide into 2 pieces, 1 slightly larger than the other. Flatten each piece into square. Wrap each in plastic; chill 15 minutes.
- Preheat oven to 375°F Roll out larger dough piece on lightly floured work surface to 10-inch square. Transfer dough to 9-inch square metal baking pan. Press dough onto bottom and 1/2 inch up sides of pan. Pour filling into crust. Roll out remaining dough piece on floured surface to 9-inch square. Cut into 1-inch-wide strips. Place 4 strips atop filling, spacing evenly. Place 5 more strips diagonally atop first 4 strips, forming lattice. Trim lattice edges.
- Bake until crust is golden brown, about 50 minutes. Cool completely. Cut into 9 squares. (Can be prepared 1 day ahead. Store in single layer in airtight container at room temperature.).

Tropical fruits such as mangoes, papayas, bananas, guavas, and coconuts are combined with milk, ice and sometimes sugar to create a Cuban milkshake called a *batido*. This Key West shake is a cultural hybrid, however, because it also contains vanilla ice cream.

- Pulse to mix well.
- Add ice cream and vanilla.
- Process on high until well mixed and frothy.
- Pour milkshake into 2 glasses.
- Sprinkle toasted coconut on top of milkshake.
- NOTE: Cream of coconut is popularly marketed as "Coco Lopez" and is highly sweetened. You'll find cream of coconut in the supermarket drink mixer section. If instead you use coconut cream, such as that marketed by "Ocho Rios", you should add 2 tablespoons of sugar to the milkshake. Coconut cream will be in the baking section of your supermarket.

- Bring to boil over moderate heat, stirring frequently.
- Reduce heat.
- Simmer uncovered for 30 or 40 minutes until most of the liquid has cooked away and mixture is thick, stirring often.
- Spoon jam into hot sterilized canning jars.
- Fill jar to within 0.125 in from top.
- Seal quickly and tightly.
