SHEPHERDESS' PIE
Saw a lot of great beefy brown-gravy based dishes here at the 'Zaar, but I have a really old recipe that I want to post here that is a little different, using bechamel or white sauce. It's closer to a potato covered meatloaf with a definite taste of parsley. I originally found this many years back in a generic recipe book whose title had something to do with "1001 Recipes" from around the world. I was skeptical the first time I made it but my family just loves it - I suspect it's one of those recipes that you either really love or don't like, nothing in between. Try this when you get bored with your regular shepherd's pie.

Steps:
- Start by making Bechamel Sauce: Melt 1/4 cup butter, then whisk in 3 tablespoons flour; cook for a minute, then slowly stir in 1 1/2 cups warm milk (can microwave milk a minute beforehand to warm it). Cook this, stirring constantly till it thickens and coats spoon. Set aside till ready to use.
- Combine 3/4 cup of Bechamel Sauce with onion, egg, cracker crumbs, parsley, salt, thyme, red pepper, and vinegar.
- Add this sauce mixture to meat and toss with two forks to mix lightly (don't overwork meat) Put this all into a casserole dish, level off top and make a slight indent with back of spoon (just like with meatloaf).
- Bake at 350 degrees for about 30 minutes, occasionally using a spoon to remove fat that collects in the indentation.
- Combine potatoes with remaining Bechamel Sauce.
- Remove meat from oven, sprinkle with the cheese, top with potatoes. Sprinkle with the paprika. Bake an additional 20 minutes.

Steps:
- Place cubed potatoes and garlic in a large pot with enough water to cover. Bring to a boil over high heat; reduce heat to medium-low, cover, and simmer until tender, about 20 minutes.
- Preheat the oven to 375 degrees F (190 degrees C).
- Brown ground beef over medium heat in a skillet. Stir in flour, mixing with beef drippings.
- Add beef broth, ketchup and vegetables. Stir to combine. Cook for 5 minutes, until thick.
- Transfer beef mixture into an oven-proof casserole dish.
- Drain potatoes and smash them a little bit before adding 1/4 cup of grated cheese and sour cream. Mash together until smooth.
- Spoon potatoes onto the middle of the meat mixture. With a fork, spread potatoes from the center to the edges to form the top layer.
- Sprinkle with remaining 1/4 cup of grated cheese.
- Bake in the preheated oven for 20-25 minutes, or until cheese is melted and golden. Let cool 15 minutes before serving.

PAPA'S SHEPHERD'S PIE

- To prepare the potatoes, scrub the potatoes with a brush under running water. You don't need to peel red or Yukon Gold potatoes, just cut into 1/2 inch dice. Place the potatoes in a large pot. Fill the pot with water, enough to cover the potatoes. Set aside.
- In a large, covered skillet, add ground beef, boullon cube, and pepper. Heat the skillet to high and brown the ground beef, breaking up the big clumps, until it's no longer pink. Add the onions, cover the skillet, and cook for another 5 minutes stirring occasionally. Drain the excess grease from the skillet.
- Add the cream of mushroom soup and 3/4 cup of milk to the skillet, return skillet to medium heat and stir to combine soup, milk, and ground beef. Heat to bubbly. Remove skillet from heat.
- Prepare a 3 quart, oven safe, casserole dish by spraying it with cooking spray.
- Cook the potatoes on high heat, stirring occasionally for 10 minutes or until they break apart easily with the edge of a spoon. Drain the potatoes.
- Add the butter and remaining 3/4 cup milk to the hot potatoes and mash or whip the potatoes using a masher or a hand mixer until they are fairly smooth.
- Assemble the casserole by pouring the ground beef mixture into the dish, spread evenly over the bottom of the casserole. Next, scatter the drained green beans evenly over the ground beef layer. Finally, spoon the mashed potatoes evenly over casserole, trying to cover the ground beef and beans completely.
- Bake in a 325 degree oven for about 45 minutes, until it's bubbly and lightly browned on top.
- Allow to cool for a few minutes, then serve. Enjoy.

Steps:
- Preheat oven to 350.
- Brown ground beef and drain.
- Drain MOST of the water out of the peas and corn then dump peas and corn into casserole dish.
- Mix in the ground beef with the corn and peas.
- Spread potatoes over the top to cover well.
- Cover top with slices of velvetta or shredded cheddar.
- Bake for approximately 15 minutes or until cheese is melted.

- Preheat oven to 350°F.
- Heat oil in large frying pan and saute the onions until softened, then add the garlic and heat for 2 minutes.
- Raise the heat and add the ground beef. Cook quickly to brown, stirring occasionally. Once browned, add the carrots, celery, and pepper, paprika, garlic powder, worchestershire sauce, salt & pepper and cook several minutes.
- Stir in the flour, then add the stock and wine. Heat until simmering and thickened.
- Transfer the meat to a large casserole dish and cook in the oven for about 1 hour. Check the consistency from time to time and add a little more stock or wine if required. The meat mixture should be quite thick but not dry. Taste and season with more salt and pepper if required.
- While meat is cooking, make the mashed potatoes. Cook the peeled potatoes in salted water for approximately 15 - 20 min or until tender. Drain well and mash with a potato masher until smooth. Add the butter and milk. If the mixture is too dry, add milk a little at a time.
- On top of the meat mixture, spread the peas on half of the casserole and the corn on the other half (or whichever vegetables you prefer). Pipe or spread the potatoes on top of the vegetables.
- Increase the oven to 400F and cook for 15 - 20 minutes until till golden brown. You can choose to finish it off under the broiler for a few minutes for a really crisp brown topping.
