PAPAS DUQUESAS (CHILEAN POTATO PUFFS)

Steps:
- Boil potatoes in salted water until very soft, about 20 minutes.
- Drain off water and mash.
- Cool in fridge for about 10 minutes, or until they are cool enough to handle.
- Add salt, pepper and half of the parmesan cheese, mixing until just combined.
- Roll mixture into balls about 1 inch in diameter.
- Set on wax paper or a cookie sheet.
- Separate yolks from 3 eggs.
- Set yolks into a separate bowl, and whisk.
- In another bowl combine bread crumbs with the remaining parmesan cheese.
- Dip potato balls into the egg yolk, rolling to coat, then roll in bread crumb mixture. This works best if you devote one hand to the wet rolling, and the other hand to the dry crumbs.
- Continue until all potatoes balls are coated with egg and crumbs.
- Pour the oil into a small heavy bottomed pot and heat over medium heat until oil begins to ripple and reaches about 300 degrees.
- Cook potato balls, a few at a time, removing them to a paper towel when they're golden brown.
- As oil continues to heat, you will need to gradually turn heat down to prevent potato balls from cooking too rapidly.
- Makes about 30 balls.

- Peel the potatoes and cut into slices. Place in a pot with cold water and plenty of salt. The water should cover the potatoes completely. Cook over medium-high heat. When it comes to a boil lower the heat, let continue to simmer for 15 minutes or until the potatoes are cooked. Drain. Return the potatoes to the pot and let them steam for a couple of minutes to dry.
- Heat the oil , you need, at least, two fingers of oil in the pot. The oil must reach a temperature of 180 degrees or 350F. If the oil is colder, the potatoes will break down and become hollow. Keep an eye on the flame to keep the oil between 180-190C (350-365F).
- Mash the potatoes. Transfer to a bowl and season with salt, pepper, or/and nutmeg to taste. Add the two yolks mixing vigorously until homogeneous. Scoop and form balls the size of a walnut or golf ball. Roll in the flour.

- Put the potatoes in a large saucepan and cover with water. Add a large pinch of salt and bring to a boil. Simmer over moderate heat until tender, about 20 minutes. Drain the potatoes and return them to the saucepan. Cook for 1 minute over high heat, shaking the pan frequently to dry out the potatoes.
- Pass the potatoes through a ricer into a large bowl. Stir in the egg, butter, dry milk, cheese, flour and nutmeg; season with salt. Using floured hands, roll the potato mixture into 1-inch balls; you should have about 60.
- Preheat the oven to 350°. In a large nonstick skillet, heat 1/2 inch of vegetable oil until shimmering. Working in batches of about 12, fry the potato balls over moderately high heat until they are browned on 3 sides, 2 to 3 minutes per side. Drain on paper towels, season lightly with salt and transfer the potato balls to a large rimmed baking sheet. Repeat with the remaining balls.
