2 slices county-style bread, 1/2 inch thick
olive oil, for brushing
1 tablespoon mayonnaise (or to taste)
2 slices mozzarella cheese
3 slices tomatoes
1 teaspoon balsamic vinegar
salt & freshly ground black pepper, to taste
2 fresh basil leaves

Steps:

  • Preheat an electric panini maker according to the manufacturer's instructions.
  • Brush one side of each bread slice with olive oil.
  • Lay the slices, oiled side down, on a clean work surface.
  • Spread the top of each slice with 1 Tbs mayonnaise.
  • Place the cheese on one slice and top with the tomato slices.
  • Drizzle with the vinegar and season with salt and pepper.
  • Top with the basil, then with the other bread slice, oiled side up.
  • Place the sandwich on the preheated panini maker and cook according to the manufacturer's instructions until the bread is golden and the cheese is melted, 3 to 5 minutes.
  • Transfer the sandwich to a cutting board and cut in half.
  • Serve immediately.
  • Serves 1.

When I got my George Foreman grill, I made up this recipe to be like the ones that I had bought. It has been a big hit with everyone.

8 slices sourdough bread (or other round loaf bread)
4 slices mozzarella cheese
4 slices provolone cheese
4 slices cheddar cheese
1/2 lb deli turkey
1/2 lb deli ham
1/2 lb sandwich pepperoni
1/2 lb genoa salami
pepperoncini pepper, cut into rings
1/4 cup melted butter

Steps:

  • Start heating the grill.
  • Place 1 slice of mozzarella on each of 4 slices of bread.
  • Place 1 slice of provolone on each of the other 4 slices of bread.
  • Top the mozzarella with pepperoni, salami and pepperoncini.
  • Top the provolone with turkey, ham and cheddar.
  • Place the two halves of the sandwiches together.
  • Brush the top of the first sandwich with the melted butter.
  • Place the sandwich butter side down on the grill.
  • Brush the other side with melted butter.
  • Grill till bread is toasted and the cheese has melted.
  • Continue with the other sandwiches.
  • A George Foreman grill works great with these sandwiches but even a stove top grill would work.

2 tablespoons olive oil, divided
¾ cup diced tomato
1 tablespoon drained capers
1 pinch red pepper flakes
½ teaspoon balsamic vinegar
4 slices sourdough bread
¼ cup prepared pesto
1 (6 ounce) package sliced mozzarella cheese
sea salt and coarsely ground pepper to taste

Steps:

  • Heat 1 tablespoon oil in a nonstick skillet over medium-high heat. Add tomato, capers, and pepper flakes; saute until tomatoes just start to break down, about 3 minutes. Remove from the heat and stir in vinegar.
  • Brush one side of each bread slice with remaining oil. Spread the other sides with pesto. Place 2 slices of bread, pesto sides up, on a work surface. Layer with mozzarella cheese and then tomato mixture. Sprinkle with salt and pepper and top with remaining bread, oiled sides up.
  • Toast sandwiches in a large skillet over medium heat until golden, 5 to 7 minutes per side. Use a heavy skillet on top of the sandwiches to weigh them down as they cook.

1 avocado
1 teaspoon fresh lemon juice
1/4 cup red onion, diced
1/4 cup cilantro, chopped
1/3 cup grape tomatoes, quartered
2 teaspoons jalapenos, chopped (jarred variety)
salt and pepper
2 pieces naan bread (or can use tortillas or any other bread)
4 pieces bacon, cooked crisp
1 cooked chicken breast half, sliced thin (I usually used left over grilled or smoked)
3 ounces monterey jack pepper cheese, sliced (I use half-light by Cabot)
1 -2 teaspoon fat-free mayonnaise
1/4 cup fat-free cheddar cheese, grated

Steps:

  • Heat panini press to medium. (Or can grill on skillet or George Foreman).
  • Peel and remove pit of avocado. Coarsely mash avocado in bowl using fork (leave some chunks). Add lemon juice and stir. Stir in onion, cilantro, chopped jalapeños, and tomatoes. Salt and pepper to taste.
  • Spread thin layer of mayo on bread slices.
  • Assemble sandwich by layering onto bread sliced jack cheese, chicken, bacon, avocado mixture, and grated cheddar. Top with remaining slice of bread.
  • Grill until heated through and crispy on the outside. If using Naan bread, slice into six triangles. (If using other bread/tortilla, cut according to size of sandwich).
